Green Day | Today's farmer's market haul celebrates the first day of Fall with a splash of Summer. Grabbed less ca$h today so spent it wisely on lot of greens for the base of our meals this week. That time of the year again ๐Ÿ˜‹ #beans are some of the first things I put into the ground once the weather starts heating up. These are the tender green variety from @mrfothergills @mrfothergillsaus this has been a solid favourite in my garden. It has a long harvest normally December through to April then the frost kills it, but the harvests are prettty good. I get 500g to a kilo a week and I only put in 25 plants ๐Ÿ™Œ๐Ÿป #springgarden #springveggies

#100percentspelt and #summersquash from #foodrescue makes great #muffins . Here with lots of lemon zest and some chocolate. I only have being able to find Spelt at natrual food centers and co-ops. This one is from @auroramillsfarm . Spelt is more water-soluble than wheat, so you may have to adjust the liquid in your recipe, I didn't on mine, but worth keeping that in mind and reading a bit more. Maybe I should have. As you can see, it tends to spread a little, not a tall muffin, but we gained a super soft crumble! Pears from @legacyacres (thank you!) , strong coffee, sunshine. I made the butternut squash soup recipe from the #yayforearthchallenge and I'm telling ya, you need this in your life ๐ŸŒฑ ๐ŸŒŽ so warming and simple to make- find the recipe on @mamaeatsplants page! I find things change per season: especially how we choose to move and what we choose to eat!! Changing with the seasons- a natural way to carb cycle, to include gut diversity, feeding windows, changing up fitness routines to avoid plateau โ€”pretty neat, eh!? Longer feeding windows in the warmer months when youโ€™re more active, shorter feeding windows in the colder months when youโ€™re โ€œhibernatingโ€. Let nature do the work for you! Does this ever happen to you, a veggie stirs your memory and all you can think about is a dish you had years ago sitting around a friend's kitchen table? These Japanese Eggplant from last weeks market did that for me. I remember it was a left-over dish pulled out of the fridge because we needed more food for all the hungry adults and children. I was lucky to get this in my bowl. . I immediately texted my friend for the recipe for Stir Fried Eggplant with Chilies and Basil by Kasma Loha-unchit she printed off the internet in 1995. The print is wrinkled, faded and stained but I was able to make this yummy dish. All that was missing from the recipe was all the loud little children and lively conversation. . . Alas, the larder is bare, maybe I'll make it to one of the Sunday farmer's markets in the City. . Quickest Lunch Recipe | Mostly Not Potato Salad by @heidijswanson from Super Natural Everyday, a book that has lived on my counter since it's first printing in 2011. It was the BUZZ in our school community and remains on my recommendation list. . Nice nibble for a lunch with @momskitchenhandbook . . Made from my spare end-of-the-week/pre-farmers-market larder. Best part, it's a red wine vinegar, olive oil, mustard dressing. I'm not a very loyal Southerner, I do not like mayo. . Plum Tart for one? Yes, please. So easy, delicious and healthy. We layered gluten free @simplemills cinnamon cookies in the bottom of a ramekin, topped them with one plum & one scoop of PE Collagen. Then we topped that with @quaker Oats and @linwoodshealthfoods ground flax, sunflower & pumpkin seed mix. Microwave for 1 minute - top with a dollop of non diary whipped topping. Today, broiled and made into #salsa with our #gardenzucchini We have a small garden this year, late start, but the one #zucchini plant we put in is gifting us beautiful fruits and we are enjoying eating the leaves too. I made and canned a lot of #salsa when we planted our first garden . I love how we get a meal by adding a jar to beans, rice, soup, use as a condiment or just as a nice snack. I don't like adding too much sugar to my canning. I actually prefer without when possible, so this recipe is so nice. I also canned peach butter last week that called for #cidervinegar and I really loved the flavor. So here I am, making my second batch of #CornAndZucchiniSalsa Adapted from "The Big Book of Preserving the Harvest" (x4 the original recipe yield about 9 pint jars). The book says "medium zucchini" or "large tomatoes" but I want to make this again so I measured and approximated in cups. 12 cups zucchini, diced ( 12 medium zucchini mine was more like 6 large for example) 6 cups corn, broiled with a drizzle of oil (8 ears of corn) 8 cups tomatoes, chopped (8 large , but I use almost a dozen of small romas) 6 jalapeรฑos, diced 1 cup scallions with tops, diced 4 cups of lemon juice, I used bottled. (Original recipe called for lime, but I didn't have) 2 cups cider vinegar 12 cloves garlic 2 tbsp salt 1 tsp black pepper 1 cup of olive oil While the corn broiled, "sweat" the zucchini with salt in a colander. Rinse the zucchini and let it drain. Combine the zucchini and the rest of the ingredients in a heavy sauce pan and bring to a boil, cook 2-3 minutes.ย  Ladle into hot clean pint jars. (One of mine broke in the canner, so maybe the jar got a little cool and had a thermal shock. ) Cap and seal. Process in a boiling water bath canner for 15 minutes There was some juice left so I used to make an extra batch so I ended up with 28 cups total of processed salsa) #storycookingcorn #eatinginseason #storycooking
