Crispy Fried Zucchini Blossoms. Recipe from @bonappetitmag. To find this recipe you need to go to Bon Appétit's website and search for "Crispy Fried Zucchini Blossoms". They have a few different recipes for zucchini flowers, this one is the one that asks for 3 whipped egg whites to add to the basic beer/club soda batter recipe. These weren't stuffed, though I did make a ricotta stuffed version which you can find in my stories. I posted this today instead of my ode to tomatoes series because I received a high number of direct messages asking me about the flowers from my Instagram stories. A lot of you have never seen these at the market or cooked with them, though you may have eaten them at a restaurant or on your travels through Italy or India. I have tried quite a few batters and preparations for zucchini flowers, over the last two summers, from traditional Bengali style to Italian style, to even a Creole inspired version. This light and airy batter with club soda and whipped egg whites is one I'll be repeating. Having said that, I would be happy to munch on these made with a simple batter of flower, beer or club soda, salt, and pepper. This batter, due to the effervescence from the club soda and the airy fluff of the egg whites gives the batter a cloud like consistency. The final fry also results in a light and fluffy crispiness. When you bite into the blossoms you will definitely taste the delicate flavour of zucchini. This batter doesn't overpower or compete with the star ingredient. I hope this information helps some of you who are curious about this hard-to-find treat. I'll post my stuffed version with the same batter at another time. Yesterday was my first day back to class so I started it with a bowl of loaded oats 😍 the yummiest start to a pretty good day! As I was sitting in between my classes I started thinking of how fast summer flew by and how I felt like I hadn’t gotten enough done and began to feel like I almost wasted my summer. BUT then I remembered last semester and how far I have come since then. Throughout all last school year I was struggling really bad with acne, which was strange to me since I had never really had any breakouts before in my life. This really took a toll on me. I’ve always been insecure & its something i’m still working on, but this made me lose any confidence I had in myself, my self esteem was at the lowest it’s ever been & I just felt terrible. I started looking up solutions for acne and almost everything I read said diet played a huge part, sooo that is why I decided to start eating healthier. It was honestly a big change for me because before that, i never watched what I ate, never payed attention to ingredients & NEVER tried new foods.. ever. Trying new foods that were healthier, whole, and natural came so easy to me though bc I fell in love with how they made me feel. Not just on the outside but the inside too. I wasn’t constantly tired anymore & I just felt good. I had made it my goal this summer to change my lifestyle and it has been the most important thing to happen to me. So long story short: I just wanted to point out that its okay to take time for yourself & how important it is to remember where you started & how far you have come when you’re feeling down or like you aren’t getting anywhere. If it’s no bueno then you need to make these, pronto! Recipe below, adios amigos! 👋🏼 Black Bean Quesadillas Quesadilla ingredients: 2 @sietefoods cassava-chia tortillas 3/4 cup black beans, mashed 2 tbsp @treelinecheese scallion cashew cheese Salsa ingredients: 1 small avocado, chopped 1 tbsp minced red onion 1 tsp minced jalapeño 1 tsp minced cilantro 1/2 tsp lime juice Instructions: 1. top one tortilla with mashed black beans and cheese, then top with other tortilla 2. grill or pan-grill over medium high heat, carefully turning once to brown both sides 3. in a small bowl combine salsa ingredients and mix well, season with s&p to taste 4. cut quesadillas into quarters and top with salsa & have a little fiesta for one 💃🏼

Sauerkraut is usually my go-to fermented sammie addition since I make it at home and always have tons on hand, but I love to switch things up with a spicy kick from kimchi (note to self- start making kimchi at home again ASAP). . Most of us buy our first jar of tahini to make hummus or baba ganoush, use a few tablespoons, and then stare at the still-almost-full jar in the fridge for months, scratching our heads wondering how to use it up 🤔 Well, the good news is there are dozens of ways to utilize the creamy sesame paste: in smoothies (instead of nut butter), in cookies or brownies (@bonappetitmag has great recipes for both), or slathered on toast w/ bananas and honey! . . This creamy Cilantro-Lime Tahini Dressing is my favorite route. It’s bright and summery and works well on nearly everything: salads, grain bowls, falafel, veggie burgers, or as a dip for crudités 💚 . . RECIPE: In a blender or food processor, combine ½ cup filtered water, ½ cup tahini, ¾ cup packed roughly chopped cilantro leaves (about 1 small bunch), ¼ cup freshly squeezed lime juice (about 2 to 3 limes), 1 garlic clove, a few dashes of hot sauce, ½ tsp sea salt, and black pepper to taste. Puree until smooth, stopping to scrape down the sides of the blender as needed. Taste and adjust the seasonings if needed. So what did I make with our Saturday farmer’s market haul of gorgeous 🍅 and fresh basil? MORE bruschetta 🤣 It may be unoriginal but it is SO DARN GOOD. . This time around we didn’t have any delicious toasty bread, so I added cannellini beans instead. I’ve been eating this 🇮🇹-of-a-salad atop arugula (or with a spoon, if we’re realistic). And this is coming from someone who doesn’t even like raw tomatoes! 🙋🏻‍♀️😬 . Fun fact: before I had a baby, beans bothered my stomach (a lot). And after baby I can eat them no problem. Overnight Chia Pudding 1 cup Coconut milk 1/2 cup Chia Seeds 1/2 cup Hemp Seeds 2 tsp vanilla extract Dash of cinnamon • Blueberry Compote 1 cup frozen blueberries 1 1/2 tbsp water 1/8 cup cane sugar 1 tsp lemon juice • Mix all together and store in fridge. I've been feeling a little overwhelmed lately, so I decided to try getting up early to give myself an hour or two before work (I work from home when I'm not traveling so I usually get up, make coffee, and get cracking). The goal is to DO something with my time - not sit on the computer or browse my phone, but select something I don't have the time or energy for later in the day. Today, I listened to NPR and made pesto at 6:30 in the morning (I'm a 90 year-old on the inside)... And it was great. 🌿🌄📻

SELF CARE ✨ What does that mean to you? 💜 - I have mostly considered self care to mean putting thought into what I put into my body and also staying mindful and present. But lately I've been realizing that what you put ON your body is just as important as what you put in it. I'm trying to switch all of my skincare products to be all natural, vegan and cruelty free, and the first step I'm taking is these pure CBD skincare products which I received from @purerelief. #ad ✨ - If you don't know what CBD is, it is a non-psychotropic phytocannabinoid found within the hemp plant. There's no THC so it doesn't get you high or anything, but it has amazing health benefits. I noticed that after using these products my skin was super soft and not irritated (I have sensitive skin so I have to be super careful about what products I use). ✨ - I really never thought that I would be so interested in CBD. It's kind of trendy now and I'd heard about it in passing and to be honest I was pretty apprehensive when I was first approached to try this product, but I can genuinely say now that I've been converted haha. Banana, Oat and berry cookies😍😍! These cookies make for a wonderful breakfast 😊 I like them a little overbaked when the oats are absolutely crisp and golden! Recipe--Combine 3/4 cup rolled oats, 1/2 cup dessicated Coconut, 1/2 tbsp ground flax seeds, 1/4 tsp salt, 1/2 cup chopped almonds, 1/4 cup dried berries. Separately mix 1 big mashed banana, 2 tbsp coconut oil, 1 tbsp maple syrup, 1/2 tsp vanilla essence. Add the dry ingredients to the wet mixture and mix well. Chill the sticky dough for half an hour. Form small balls, flatten and place on parchment paper lined cookie sheet. Bake for 20-30 minutes in preheated oven at 180/350.

Starting the morning off my day dreaming about one of my FAVORITE dinners 🍴 Crispy, roasted chicken thighs 🍗 with a side of white rice 🍚 to soak up the juices. This time, we added some roasted mushrooms we picked up at our local farmers market 🍄! I could eat this combo every day 😍 . Chicken thigh recipe 👉🏼 Rub chicken thighs with salt, pepper, garlic powder & onion powder (you’ll want a heavy hand here). Place onto a baking tray and into a preheated 400 degree oven for one hour. THAT’S IT!! 🙌🏼👩🏻‍🍳

As promised, here's a savoury version of the mini pancakes on my last post. Cooked in the same type of pan, these are curry based and with seafood toppings. It's an interpretation of Thai savoury dish called #hormok which is curry cake made from curry paste, coconut cream, egg and fish wrapped in banana leaf and steamed. The texture is soft and creamy like mousse but when you cook it in a pan you have a crusty bottom and slightly smoky flavour. I'm not very good at eating spicy food but these cakes I bought are not too spicy. They had the right amount of spice and not overly hot. There's a restaurant near me that serve this dish and I have to order it everytime we go there. @theciaofandiary I think you might like to make this as well. Hope everyone is having a great week.🌸🌸

I love breakfast. Like eating breakfast at midnight kind of love affair. Have you ever eaten at a diner in the middle of the night? It’s my fave. You’re either ending your day or starting your day either way you’re all there questioning your life choices while eating a good plate of food. And it’s glorious. One of my go-to favorites: eggs benedict... • SWEET POTATO NEST | sweet potato, arrowroot powder, scallions, and sea salt. #Spiralize your red sweet potato and toss in a little arrowroot powder with scallions. Lightly cost sweet potato evenly in powder. Shallow fry in preferred oil on med/med. high heat in a small pan. Flip nest and continue to cook until crispy. May have to flip a couple times to brown evenly. Tip: Turn the fire down to med. low if browning too quickly. And occasionally swirl potatoes in pan to release the steam for a crispy nest. Drain on paper towel and season with sea salt. 1 large potato will garner 2-3 nests. • CHIVE HOLLANDAISE | 2 yolks, 1/4 cup melted ghee, 1/2 fresh squeezed lemon, palm full of chopped chives, pinch of sea salt and cayenne pepper... Heat ghee until melted not too hot, set aside. In a blender combine all of the ingredients (except chives). Turn blender on high and slowly drizzle melted ghee evenly emulsifying the hollandaise. Throw in chives, pulse blender to mix. Done. Scary easy. • POACHED EGGS | simmer water with a splash of white vinegar in shallow saucepan. When water is at a small boil drop in 2 eggs gently. You can crack them one at a time into a small bowl first then slide into the water to avoid shells. Poach at a gentle simmer for 4ish min? Can you believe this “Garlic Lemon Pan Seared Scallops over Riced Cauliflower Stir-Fry” took only 10 minutes to make?!! I just love simple, quick and easy meals for dinner (especially if you’re like me, with 2 little ones running around lol). Not only was it super delish, scallops are low fat/calorie, high protein with Omega 3, minerals & B12. Can’t go wrong eating this meal at all. Seriously took shortcuts making this dinner but hubby couldn’t tell 😁. Mondays should be shortcuts all day, right? Check the deets below👇🏻 . . . . Ingredients: 1 frozen bag @traderjoes wild caught Jumbo Sea Scallops 1 frozen bag @traderjoes Riced Cauliflower Stir Fry 6 Tablespoons @chosenfoods Avocado oil 1/4 cup Broth 3 Tablespoon @traderjoes Ghee 5 garlic cloves, minced 2 Tablespoons lemon juice Sea salt & pepper to taste Parsley . . . . . . Directions: 1-Thaw scallops as directed and pat dry. Season with sea salt & pepper. 2-In a sauté pan (or frying pan), cook the Riced cauliflower as directed. Should take 5-7 minutes. 3-Heat avocado oil in another frying pan on high heat. Once oil is heated, lay the scallops in the pan. 4-Cook for 2-3 minutes on one side or until browned and crisp. Flip over to the other side and cook for another 2-3 minutes. The sides should be opaque once it’s thoroughly cooked. 5-Remove scallops from the pan and set aside. 6-Add ghee and garlic to the same pan you cooked the scallops in. Once garlic is a little browned, add broth & lemon juice. Once heated through, remove pan from heat and add back the scallops into the pan. 7-Remove scallops and place on top of the Riced cauliflower stir-fry. Crispy pan-fried tofu on impeccable green and red shiso leaves from @assawagafarm. 💕 Serve with sweet chili sauce; this dish makes an excellent appetizer, snack or light meal. __________________ Directions: I used extra-firm sprouted tofu in this recipe. Place tofu in a clean dish towel, between two plates and put a heavy-ish object, like two cans of beans on top. This will help to slowly press and drain out any extra liquid so the tofu can better absorb seasonings and not turn soggy during the cooking stage. Do this for about ½ hour if you’re pressed for time, but if you plan ahead, you can start this drying method in the morning, place the setup in the fridge, and by dinnertime, your tofu will be well-dried and ready to be seasoned/fried. __________________ After the excess moisture is drained out, cut tofu into cubes or slabs. For seasoning, I quick-dipped the tofu in a mix of soy sauce and rice vinegar, then sprinkled everything with salt. Before frying, toss the tofu in cornstarch, which will help to crisp things up. __________________ Coat the bottom of a cast-iron pan with a generous amount of neutral oil. Over medium-high heat, pan-fry the tofu in batches, be careful not to overcrowd the pan or else the tofu will be steaming instead of frying. Cook each side for about 2-3 min (or more), depending on how golden you’d like your tofu to become. Baby V’s first ice cream cone!! We’ve shared a few cups of ice cream in our day, but she’s never had an entire cone to herself, and clearly she was overjoyed! . We found a sweet spot in Florida with #vegan ‘scream, she had raspberry and I went with coconut with chocolate sauce and cacao nibs. One of my earliest food memories (3 or 4 y/o) was learning to make pie. My favorite part? Using all the trimmings to make little jam tarts, which were arguably better then the actual pie. zucchini season is in full swing over here - picking a couple from our garden daily!! dinner tonight included a remake of a favorite - Zucchini Sticks😍 no deep fry or greasy mess over here🙅‍♀️they oil free, battered in almond flour & flax - baked nice & crispy👌 . . ⭐baked zucchini sticks⭐ - slice one medium zucchini into sticks/wedges. - pour 1 cup of almond milk into a wide flat dish or bowl. - in a medium size bowl mix: 1/2 cup almond flour 1/4 cup flax dash sea salt dash black pepper 1/2 tsp garlic powder 1 tbs nutritional yeast - roll zucchini stick in almond milk, shake excess & roll in flour mixture - lay on baking sheet covered with parchment paper @paperchef - continue process with all sticks - bake at 425° for 15 min, flip over & bake for 10-15 more min or until golden. . . I know what you’re thinking, but this is not what it looks like! 🐷 With eggplant being in season, I’ve been trying to get creative with recipes and instead of just roasting it like usual, I decided to test out a recipe for vegan eggplant “bacon” that I found in @foodnutrimag. So glad I discovered the recipe—super flavorful, no questionable ingredients like many store bought veggie bacon/bacon alternatives have, and a great way to incorporate more seasonal veggies into your diet! No pigs 🐽 harmed in the making, plus this bacon has some fiber and no saturated fat 👍👍. I plan on adding it to salads and tempeh sandwiches-perfect for meatless Monday! 😋 . Ingredients: Eggplant sliced super thin (you can use a vegetable peeler or sharp knife), liquid smoke (found @wholefoods. Basically just hickory smoke seasoning), @bragglivefoodproducts liquid aminos or low-sodium soy sauce, paprika, and some olive oil. Marinate the eggplant, put in a pan over medium heat and cook each side until brown and slightly crispy. Thank you all for your sweet congratulations on our exciting news about baby #2! Between pregnancy food aversions and appetite (or lack thereof), the whole family still getting over colds and respiratory viruses, and the craziness of these days (there's a lot more going on besides baby dos!) I'm majorly feeling a huge pot of lentil and summer veggie soup tonight. Adding some water, herbs, and spices to this pot of lentils, mushrooms, spinach, zucchini, carrots, red bell pepper, and red onion. Going to serve with some @brazi_bites and I think it's going to be one dinner we all will enjoy! What are you making tonight?

Plus once you cut your sugar intake, you'll adjust to enjoying foods that are less sweet. Like with anything, start small. Maybe even your morning coffee - have you ever thought of using natural sweeteners, such as stevia, honey, erythritol or even cinnamon instead of refined sugar? Baking: use the same principles. Yep, it'll take few epic fails before you get it right, but eventually, you'll start to feel the difference in how your mind and body feel. Better. Stronger. Celebrating #meatlessmonday with chili lime fries, shrimp and Nedi salad 🥗 This dish is perfect for light #lunch or #dinner #whatsonmyplate chili lime sweet potato fries (baked sweet potatoes seasoned with chili lime seasoning and garlic salt (baked for 30min on 450 degrees F), chili lime grilled shrimp, Nedi salad @healthywithnedi (iceberg, Persian cucumber, spring onion, feat, EVOO, lemon juice, sea salt and black pepper & homemade cilantro lime crema (in food processor combine full fat Greek yogurt (vegans use vegan yogurt), a big bunch of fresh cilantro, 2 cloves garlic, sea salt, black pepper, lime juice and pulse until all creamy.
