I’ve been on a major soup kick lately, and I figured out that it’s *almost* as easy to make homemade soup as it is busting out a can from the pantry, almost. - Chicken Zoodle Soup 1️⃣ 1/2 cup chopped celery, onion and carrots 2️⃣ 1 tbsp avocado oil 3️⃣ 1 tbsp oregano 4️⃣ 1/2 package @bonafideprovisions chicken bone broth 5️⃣ 1 package @cecesveggieco zucchini noodles or 3 zucchini 6️⃣ Pre cooked shredded chicken breast Start out by placing the pot on the stovetop on medium heat. Add in the veggies, avocado oil and oregano and sauté until slightly browned. Add in the bone broth and zucchini noodles and continue to heat on medium until it comes to a boil, then reduce to a simmer. Add in the chicken breast and cook for an additional 5 minutes. Have you tried roasting your cabbage? If not, PLEASE fix that. It's a whole new flavor situation and you will be so stoked you tried it. I top mine off with a little green goddess dressing and toasted hazelnuts just to be EXTRA but it doesn't really need a thing. RECIPE BELOW! ~ INGREDIENTS 1 head of cabbage 1-2 Tbsp olive oil sea salt Topping: roasted hazelnuts ~ Green Goddess Dressing 1/4 cup tahini 1/4 cup fresh basil leaves 1/4 cup chopped chives 1/2 lemon, juiced 1/2 tsp apple cider vinegar 1/3 cup almond milk ~ DIRECTIONS Pre-heat oven to 450f degrees and line a baking sheet with parchment paper. Chop the head of cabbage in quarters, leaving the core intact as that’s what will hold it all together. If you can get more slices out of it while still keeping the core, go for it – I was able to get 6 total based on how the cabbage was shaped. Lay slices down onto baking sheet on a flat side, drizzle olive oil and coat two sides of each slice with some. Sprinkle sea salt over top and roast for approx. 25-30 minutes, flipping halfway through. In the meantime, make the green goddess dressing by adding all ingredients to a food processor, set aside. Take a handful of hazelnuts and lay on a baking sheet, roast in the same oven for 3 minutes or so – be very watchful not to burn. The outer layer will be cracking off and you can remove it after it cools off a bit with a paper towel. Chop hazelnuts in half and set aside for topping. Once cabbage is all done, using tongs, add to your plate. Drizzle green goddess dressing, top with any leftover chives and hazelnuts – serve!

Happy Friday all! Here’s my post workout meal that took 10 min to cook. It’s Riced Vegetable with Organic Ground Turkey and it was just what I needed to get through a busy day of errands today. ‘Tis the season right? Bonus, lots of leftovers!! What’s your quick “go to” meal? . . . . Ingredients: 1 lb organic ground turkey 1 bag @traderjoes riced vegetable Medley (cauliflower, broccoli, carrots and onions) and 1 green bell pepper, chopped 3 T @bigtreefarmsbali organic coco aminos 4 cloves garlic, minced Sea salt & pepper to taste Avocado oil @chosenfoods . . . . . Directions: -In med-high heat in large pan, spray avocado oil and heat pan. Cook ground turkey for about 5 min or until browned and cooked through. -Put ground turkey to the side, add garlic and brown a little. -Add all veggies and coco aminos. Lower heat to low-medium and cook until veggies are tender about 5 min. But who can wait that long? The flavor gets better and better as it sits, so refrigerate and heat up for dinner. Or put between two slices of bread w/ some vegenaise/mayo. Overnight oats coming in thiccc on a Friday! I’ve definitely had success recently pre-soaking my oats. For anyone who may have oat sensitivities soaking the oats overnight has really helped me. Currently not having any issues! I’m going to start soaking them for the hot version as well, just minus the chia seeds. I’m all about quick, easy recipes that are wholesome and nutritious. Truth be told, I don’t love spending time in the kitchen, but I do love to eat well and eat foods that will fuel my body. This lunch was super to easy to make. You essentially just toss everything into one skillet. 🍲 — 10 MINUTE VEGGIE QUINOA BOWL ✢ @sprouts organic quinoa duo with grilled zucchini, butternut squash and tomatoes ✢ Lacinato kale ✢ Lemon juice ✢ Chicken ✢ @chosenfoods avocado oil — I start by oiling the pan and cooking the chicken and then after the outside of the chicken is cooked a bit, I toss in the quinoa bag. I love products like the @sprouts quinoa bags because they’re made of all whole food ingredients, just frozen. You can also stream the bag if you prefer. Then I like to spruce it up with some veggies, so I add in some kale, but you can really add any other veggies you’d like. First Christmas recipe is heree🎄Stuffed mushrooms bringing allll the holiday vibes for a super easy appetizer or side dish🍄✨ . . . Stuffed Mushrooms: * Preheat oven to 350 and cut the stems out of 8-10 white button mushrooms (I hand picked the biggest ones I could find) * On medium heat cook 8oz ground turkey with olive oil, salt, pepper, garlic powder, thyme, and rosemary. * After 2 minutes add 1/4 cup leeks, 1/2 cup apples, and 1/4 cup chopped pecans. * Once turkey is cooked and apples softened, pour into a bowl and add dried cranberries (as much as you want) and 2 whisked eggs. Mix and spoon into mushrooms on a lined baking sheet. * Bake for 20 minutes!✨
