Because you asked for it and I can’t say no! 😝You guys, @shahshafi made these scones for the first time (you probably saw it in my story) and it was sooo good that we had to made them a second time to make sure it weren’t hyping ourselves us up 😂 and guess what?! they came out better! So my friends, here you have the recipe! It is an easy, yummy and most importantly healthy treat that you can share with your loved ones or just make them for yourself 🤗 Enjoy it!
1 1/4 cups almond flour
1/4 cup coconut flour
2 pasture-raised eggs
1/3 cup almond milk
1/2 tsp salt
1 tsp baking powder
2 tbs maple syrup (or coconut nectar)
2 tbs coconut oil melted
1 tsp vanilla extract
~1/3 cup (or more 😋) fresh blueberries
Glaze (optional but delicious!)
1 can of coconut milk (spooned the cream from the top, that’s what you are going to use)
~1 1/2 tbs maple syrup (less if you don’t like it too sweet)
1/2 tsp vanilla extract .
Set the oven at 350 degrees. Combine almond flour, coconut flour, baking powder and salt in a bowl. In a separate bowl mix together the eggs, milk, maple syrup, coconut oil and vanilla. Mix the dry and wet ingredients until well combined. Fold in the blueberries.
Line a baking sheet with parchment paper. Form the dough into a ball (it might be a lil bit sticky but that’s ok) and place onto the baking sheet. Flatten the ball slightly (you can use your hands), carefully cut into eight equal wedges (if want them bigger cut into six equal wedges). Bake for 20-25 minutes until golden brown. 👌🏻 For the glaze, mix together the coconut cream from the coconut milk, maple syrup and vanilla until well combined. Drizzle on top of the scone...and you are ready to start the party in your mouth!!! 😋 *Give it a try!! Let me know how you like it and how they came out.
