Thrown together lunch! Eating a Whole Foods Plantbased diet doesnโ€™t need to be overwhelming or take hours to prep a meal..I cooked a huge batch of brown rice for the week, a pot of plain lentils and threw it all together with some raw arugula and sautรฉed chanterelles...and then added sea salt and pepper...it literally took me like 5 minutes. I often will batch cook gluten free grains and legumes and then just add whatever veggies I have on hand, hummus or sauce and call it a day! Iโ€™m sooooo excited!!! Today, I got outside my comfort zone...which of course I HATE but I do it anyway to force myself to GROW. ๐ŸŒฑ I am a holistic nutritionist and I co-run a Leadership Academy at Napa High School. We focus on self identity, relationship building, doing service projects and social & emotional dev & team building. I NEVER teach about nutrition. I ASSUMED my students were not interested. But really, I was scared... I am so passionate about it that if they werenโ€™t invested I would FEEL rejected so I kept this HUGE PART of my life and my passion separate. However, today I taught about the power of food! And, How it can not only change your body but more importantly your mind, your mood & your energy! AND....my students loved it. I could literally cry with overwhelming excitement and emotion ๐Ÿ˜ญ๐Ÿ˜ญ...my cup is definitely full right now!!! Merging my passions 1. Self Identity 2. Team development 3. Check out this recipe on how to make your own pumpkin purรฉe for pies and soups! #Repost @zerowastechef with @get_repost ใƒปใƒปใƒป Just a small farmersโ€™ market haul this week. I bought my first sugar pie pumpkin of the season. I make pumpkin purรฉe with these to replace canned pumpkin. So delicious. - To cook a pumpkin, stab the top of it several times. Place it on a dish and bake for about 45 minutes in a 350F oven or until you can easily slide a knife into it. If you bake it too long, youโ€™ll find hard spots. So keep an eye on it. After the pumpkin cools, cut it in half, scoop out the seeds (we roast them in a bit of olive oil and salt...so tasty...), peel and either run the flesh through a food mill or food processor. Depending on what you want to make with the pumpkin, you can also simply mash it with a potato masher or fork. - If you have a pressure cooker, you can cook a whole pumpkin in it VERY quickly. Put the pie pumpkin in there with a couple of inches of water and cook it for about eight minutes. Your pressure cooker might require more time (or less). Everything cooks very quickly in mine. Proceed as above to harvest the flesh and seeds. - I will probably use the pumpkin purรฉe from this pumpkin for pumpkin bread or possibly a pie. It tastes amazing in dal also. You can use it in so many recipes: homemade pasta, soup, pancakes or waffles, hummus, fritters, gnocchi, vegan mac and cheese, baby food... - If you wonโ€™t use the purรฉe right away, store it in the refrigerator for a week or so. You can also freeze it for many months. I just recently used up purรฉe I had frozen last winter.

WICKED WEDNESDAY ๐Ÿฅ•๐Ÿ† Vegan pasta with chick peas and vegs ๐Ÿ‘Œ๐Ÿป damn good mix of a crunchy bite and spicy sauce ๐ŸŒถ โ€ข Chickpea pasta ๐Ÿ โ€ข Ingredients โฌ‡๏ธ Spaghetti 2 cloves garlic 1 onion 1/2 Aubergine 1 can tomato sauce 1 small can chickpeas (rinsed, drained, and dried) 1 Tbsp olive oil 1 Tbsp dried or fresh oregano 1 pinch sea salt 2 tsp garlic powder 3 Tbsp panko bread crumbs 1 Tbsp dried or fresh oregano โ€ข Instructionsโฌ‡๏ธ Preheat oven to 190 C. Add rinsed, dried chickpeas to a mixing bowl and toss with olive oil, oregano, salt, garlic powder and panko bread crumbs. Place chickpeas on a baking sheet and arrange in a single layer. Bake for 20-25 minutes or until crispy and light golden brown. While chickpeas are baking, bring water to a boil in a medium pan. Add the spaghetti and cook according to instructions. Preheated another pan, once hot, add olive oil, garlic and onion. Sautรฉ for 3 minutes, stirring frequently. Add the aubergine for another 3 minutes. Combine the vegs with tomato sauce, oregano, and stir. Reduce heat to low and continue cooking to thicken, stirring occasionally. Sample sauce and adjust seasonings as needed. Add 3/4 of the baked chickpeas to the sauce and stir.To serve, top with remaining chickpeas, and any additional toppings ๐Ÿ‘Œ๐Ÿป
