I didn’t realise until it was too late that I didn’t have enough oil to do roast potatoes, so we had to go with mash instead. Tomato Carpaccio 🍅🍅🍅 2 pounds fresh heirloom tomatoes, sliced 1/4 inch thick 1/4 high quality extra virgin olive oil 2 tablespoons sherry vinegar 2 tablespoons finely minced shallots 8 basil leaves, sliced Sea salt and freshly ground black pepper On a large platter, arrange the tomatoes in a decorative pattern. Chinese Chicken Salad using another bag of @yourtaylorfarms Asian Mix + Newman’s Own Sesame Ginger dressing . Swipe to see more pictures of what I used to make this incredible Sunday lunch salad . I used up the leftover grilled chicken tenders from Friday nights dinner diving them up in bite size pieces + I also added 1 finely diced Granny Smith Apple 🍏. Once again I tossed the package dressing & swapped in Newman’s Own dressing. I actually took the time to count out the won’t Ton strips ( there are 48 😉👌) so I took only 24 won ton crisps which is 1/2 . I divided what was left with the slivered almonds as there aren’t very many . I mixed it all up and then divided the entire salad between 2 bowls. I’m guesstimating I got 12 won ton strips ? & at the very end topped hubby’s bowl with the remaining 24 won ton pieces . Chinese Style Rice for tea, so tasty & full of goodness. One of my favourites. Baby loved the rice, baby corn, sweet corn and spring roll the most. Toddler has recently gone off rice, so had fish fingers, cucumber & banana 🙄 I’ve posted a picture of the main ingredients for the rice. We also had prawns in ours, but you could add anything extra to it. I stir fry the vegetables in coconut oil, then add the garlic and ginger. Stir fry for a little longer, before adding the prawns. Then in a bowl I mix together 1 tsp Chinese 5 spice, 2tbsp soy sauce & 2 tbsp of sesame oil. (If baby was over one I’d also mix in a tsp of honey) I pour this sauce into the wok with the vegetables and prawns, then add the cooled, cooked rice. Mix together & its ready to serve. Pikante Reispfanne aus Vegan tut gut - schmeckt gut von @jeromeeckmeier. Das hat sich mein Liebster ausgesucht und alles vorgeschnibbelt. Reis habe ich dann gekocht und auch das Gemüse angebraten. After last week’s chia seed pudding fiasco (aka an allergic to chocolate Maddie managed to eat a bit😷), I figured it would be best to make my own and pack it for the week. I made 2 massive batches of vanilla chia seed pudding and transferred it to jars👍🏻 Now I just have to wait till tomorrow to eat one🙈 Later today I will try to prep my lunches for the week, so if y’all have any suggestions, please share them!!! For those who want to make some, here’s how I made the chia seed pudding ⬇️ Ingredients: 3 cups of oat milk (I bet any type would do) 2/3 cup of chia seeds 1 tsp cinnamon 2 tbsp vanilla 2 tsp honey (I bet you could use agave syrup too) Mix it all together and chill in the fridge overnight. Super simple👍🏻

OMG OMG OMG! I’ve lost my @instantpotofficial virginity! I riffed on their Sicilian veggies option. Eggplant, pepper, zucchini, soaked raisins, olives, capers, potatoes, tomatoes, pinenuts. I added fresh oregano, thyme and basil from my garden, because why the fuck not?!Super quick pressure cooked yumminess in 15 mins (leaving eggplant to dehydrate a little first added more time). ☀️ Eggless #sunday #brunch vibes this morning! My son is allergic to eggs 😭 so it gets a little tricky finding things we can all eat together for breakfast, but this frittata had us forgetting eggs ever existed. This recipe will make a med sized frittata for 2 and one muffin tin of tot sized frittatas. Step 1. Preheat your oven to 400 degrees, grease a muffin tin, and heat a med skillet to med-high heat with oil (we used grape seed but feel free to use whatever you like). Step 2. Dice those veggies! We used #fresh #organic summer veggies today with 1 cup of summer squash, 1 cup of zucchini, 1/2 cup baby bella mushrooms, 1/2 cup sweet corn and 1/2 bunch of thinly sliced green onions. We also added in some yellow onions and Serrano peppers to spice up the parental batch 💁🏼‍♀️ 3. Add your diced veggies (excluding your peppers and onions) to your now hot pan and sauté until soft (about 5 min) then add the green peppers to the pan for an additional minute of cook time. Step 4. While your veggies are cooking , mix 2 cups chickpea flour with 1tsp baking soda, 1 tsp garlic powder, 1 tsp salt, 1 tsp black pepper, 1/4 cup nutritional yeast and 2 1/2 cups water until batter is smooth. Step 4. Fill greased muffin tin 3/4 full with cooked veggies and return leftover veggies to heat, adding in onions and peppers. Cook until onions are clear. Step 5. Add chickpea batter to your muffin tins filling them to the top. Stir with a small spoon to make sure there veggies are mixed in well. Step 6. Pour the remainder of the batter in your sauté pan over your veggies and cook undisturbed for about 10 min. Step 7. Place both your pan and muffin frittatas in the oven and bake for 30 min or until a toothpick can be placed in their center and come out clean. More garbanzo flour fun! I set out to make an omelette and I ended up making pancakes, and I couldn’t be happier with how they turned out. This was a “use the veggies before they go bad meal”. The toppings are shiitake, orange bell pepper, shishito, and red onion in a little tamari. The pancake is garbanzo flour, spices and fresh chives. And of course there had to be sauce—a cheesy cashew sauce with lots of nooch. I’ll be positing the recipe to the website.
