One of my absolute favorite breakfast salads! Funny enough, I first fell in love with beets when I tried them at the Cheesecake Factory. Pretty sure I followed them up with a chocolate turtle cake 😅 This meal here is loaded with nutrients that will keep me going well into the afternoon. The eggs are a powerhouse, delivering fat-soluble vitamins A and E, vitamin B6, calcium, and essential amino acids. I’ve got raw spinach and arugula for fiber and a whole slew of vitamins and minerals. Eating raw food is beneficial in reducing inflammation, improving the immune system, reducing risk of cardiovascular disease, and so much more. And then of course my beautiful golden beets! Cooked them up with mushrooms and onions, and now I am set with some delicious nutrient-dense noms that is going to support every system in my body! I also add these supplements as directed by my naturopath to boost my nervous system and my adrenals. All together, this is one solid meal that came together in a snap!
