So very simple. Leftover homemade beef patties (just local, grass-fed mince + Celtic sea salt) with 1 or 10 eggs 🥚😊. - For the eggs!!! As I get asked how I get them to this consistency where the whites are cooked but the yolk is perfectly at the intersection of raw but not runny and *slightly* cooked to the point that it has that nice mouth consistency but is it no way hard boiled (yes, I'm very specific to how I like my eggs! 😂), this is the formula I use: I start room temperature eggs (not refrigerated), and place them in a pot of *already* boiling/simmering* water. Time for 4-4.5 minutes. 1 min less for smaller eggs, 1 min more for large eggs. Once the timer goes off, I immediately run COLD water over the eggs. Done. For some reason, this never fails me! This is 1 meal out of 2. Last weekend I was in Ithaca to see my son perform in the 50th anniversary concert of his a cappella group the Cornell Hangovers. What a fantastic treat that was! Today I want to talk about 🍳EGGS🍳 If you can’t tell from my feed lately, I have been super into eggs the past few months so I wanted to talk about them nutritionally. 1️⃣Let’s start with the myth- how many people have heard whole eggs are bad for you? High in cholesterol, linked to heart disease, etc. 🙊Well I’m here to blow your mind and tell you WHOLE EGGS ARE NOT BAD FOR YOU. Infact, the link between eggs and heart disease was completely disproven. The advice of limiting consumption of eggs was suggested in 1970 based on the idea that eggs are high in cholesterol. However we later learned dietary cholesterol+blood cholesterol are not directly correlated AND studies by the American Medical Association found that not only did no association of egg consumption+heart disease exist but people who ate 1/2 a dozen eggs a week had LOWER risk of heart disease. So finally, in 2015 (only 3 years ago!!) the USDA removed their warnings against dietary cholesterol. 2️⃣Now let’s talk nutrition🤓 Egg whites provide protein which as you all know is super important. Egg YOLKS contain additional protein, calcium, zinc, phosphorus, Vitamin A, Vitamin D (super important as winter approaches!), Vitamin E, Vitamin K, Vitamin B complex, glutathione (antioxidant), and omega-3 fats (help fight inflammation) 3️⃣Finally, a word on buying eggs‼️Now that we know the benefits of eggs, we need to make sure we are buying the RIGHT eggs. The chickens raised for conventional eggs are not raised well+that effects the quality of the egg. You can tell because when you crack a farm fresh egg+compare it to a conventional, farm fresh are brighter+more orange then yellow🧡 Free range/cage-free are better because they mean the birds weren’t imprisoned forever but doesn’t give details on how much time outside. That is why a local farm or farmers market where you can talk to the farmers is best. One of the most common mistakes I see is throwing away the yolk. Not only is it half the protein but ALL the nutrients! From B-vitamins, iron and biotin, to Vitamin E, D., choline and Iodine. The list goes in..! Yes, it also contains cholesterol and saturated fat but it’s very minimal (1.5g sat fat per egg). Eggs get such a bad rep because many people eat them cooked in butter, or with bacon and other blood cholesterol spiking foods. On their own they are truly a perfect food, especially for nursing moms and kids! Bottom line: don’t cheat yourself and EAT THE YOLK! • • If you do have history of high cholesterol limit to 4-5 whole eggs per week which is consistent with @american_heart association recommendations. They even tout that a whole “egg a day may keep the doctor away” —> move over apples 🍎 🍏! Want to know ☝️ of the foods that always seems to be discussed with clients? It’s 🥚(yolks to be exact!). . . I’m so into the research, that it’s engrained in my head that the yolk won’t raise cholesterol like we once 💭 . Furthermore, (don’t i sound smart using the word furthermore??? 🤓) yolks house too many nutrients to ignore. Many people still haven’t gotten the memo. . . One nutrient that is needed in super-high amounts when 🤰 and lactating (and really when ttc since you should already have it in your system pre-preg) is choline. Many prenatals don’t provide this nutrient, and when 🤰 you need 450 mg (550 mg when lactating!!). One yolk contains around 125 mg and is one of the best sources. . . Choline plays a role in brain development, and has been shown to reduce risk of baby developing spina bifida (like folate). Some studies suggest that kids have better memory function if mom took in enough choline during pregnancy! . . A non-fussy breakfast that includes something like this pic would be around half of your needs (cook your yolks if 🤰) . Other sources of choline are beef, milk, 🥜, and lentils. . . . Been loving egg scrambles for lunch lately! They’re perfect especially on low carb day like today. 👌🏼 I add some egg whites from the carton for a little extra protein and volume. Mushrooms and spinach are loaded with micronutrients and come in at minimal calories and carbs. And you know I topped it with some buffalo sauce and everything but the bagel seasoning! 🤩 Roasted up some acorn squash on the side. Also packed with nutrients and a lower carb option than something like a sweet potato. While pregnant, I take in more carbs than my clients and this is the perfect option. 👏🏼 This meal kept me satisfied for hourrrrs while providing me and Buddha with key nutrients for optimal health. I love teaching my clients how to fuel themselves properly for their goals and their overall wellness - we enjoy such a variety of delicious foods on the FASTer Way! 🎉 Side note - scramble or omelette? DID YOU KNOW that in 1977 the USDA made new eating guidelines that said FAT is so bad that we immediately needed to remove it from our diets  and replace it with lots of cereals & grains? Therefore we went from higher fat & protien diets to one primarily of carbohydrates. We were told that carbohydrates are essential for your health & if you do not eat them you will not have energy. Not only would fat cause weight gain but it would also cause heart disease. What if I told you that after 40 years all this has done is made us diabetic, obese, and it has actually increased the risk of heart disease! When you look at the science behind these guidelines you will see that... there was none! All you'll find is speculation that was driven by commercial industrial reasons. They were WRONG! homemade pumpkin pork ramen- I used yam noodles for 0sp, broth was 5sp, and the ground pork was 5sp. double soft boiled egg because 0sp and #eattheyolk , fresh corn, enoki mushrooms and cubed butternut to top it all off. this was a fancy treat and soooo yummy, plus it really wasn't that hard to put together!
