What a blessing to score some eggs from a co worker's hen house! I made the best scrambled eggs this morning with these babies! Why Almonds? Well compared to other #nuts, they’re richer in nutrients. I’m not gonna go into the “they contain the healthy type of fats” bla bla… u already know that! Almonds contain #nutrients that increase brain activity (so start giving them to your kids too), they’re great for your skin…hence all the products that contain almond oil, they contain #fiber that helps fight constipation, also regulates the absorption and processing of glucose, meaning reduces spikes in blood sugar, which makes them great for #diabetic people. When eating almonds, even though they’re nutrient-rich, they’re high in calories, so a moderate portion to have would be around 15-20 almonds. 15 Almonds contain 100 calories (6g Protein, 14g Fat, 6g Carbs). Dreamy 😍 Egg taco to round out hump day, which I now refer to as BUMP DAY! This baby bump is growing rapidly so I’m trying to make mindful decisions about what the little guy 👶 and I consume. Eat the yolk people! 🐣 That's where all the nutrition is. Sure the egg white carries the protein, but the yolk is loaded with vitamin B12, which is essential for the proper functioning of your nervous system. 🤓 Not only that, but the yolk contains all the healthy saturated fat and cholesterol. Yes, saturated fat and cholesterol are healthy. 🤔 In fact, they are necessary for the proper functioning of many of your hormones. There's a big difference between dietary cholesterol and your blood cholesterol. Eating a diet rich in healthy saturated fats (properly raised animals, eggs, butter) has actually shown to lower your blood triglycerides, and increase your HDL cholesterol. What really causes your triglycerides to go up, is high consumption of refined carbohydrates, and highly processed vegetable oils 😐. heyyyyy, monday. started the week with a spinach and feta omelette. i bought some gg crackers a few weeks ago to see what they’re like since a lot of “diet” dietitians really push them. here’s my review: they’re high fiber, but sort of like cardboard. if you’re looking for an easy way to increase your fiber intake i’d recommend adding a couple in the morning because they’re really only tolerable when spread with cream cheese or topped with eggs! no need to replace every piece of bread or cracker with these though, folks! there are a lot of great ways to get plenty of fiber...that don’t taste like cardboard!

Our hens are laying an egg a day again! 🐓 . Eggs are a great example of a food where the source greatly alters the nutritional content. Eggs got a bad wrap for high cholesterol because the eggs available in the grocery store were from hens being fed high corn+soy diets. This increases “bad” fat + cholesterol. Change the hens’ diet to grass, bugs, and wholesome corn, and you get an egg lower in cholesterol & higher in “good” fat + vitamins. . Farm-fresh eggs are actually one of the most nutrient-dense foods we can eat! Plus they taste soo much better than factory-farmed! 😋 . Since Little Lady decided to come a week early 👶🏻, my plan to spend the week after I closed my practice for the summer to #mealprep didn’t quite happen. So, the next best thing is one-pan-meal batch cooking. Thank goodness we had a fresh delivery from @loamagronomics with yummy veggies like Swiss chard and a dozen eggs from @vitalfarms in the fridge when we got home from the hospital, so we threw that along with some other leftovers (ground meat, rice, broccoli, onions, etc.) into a pan and made a frittata that we’ve been eating off of for a few days. * Eggs and egg yolks are great for postpartum recovery because they’re packed with protein and active form of Vitamin A, which help with the internal tissue repair as well as skin integrity for the rapidly shrinking postpartum belly. Fat from the yolk is also super important to boost omega-3 content of breastmilk for brain health of baby. * Cheers to the weekend (right? I’ve sort of lost track of days).

You are likely to find phrases like "pasture-raised," "pastured," "free-range" and "cage-free" on egg packaging, but labeling laws allow products to display these terms even if the egg-laying chickens spend little or no time outdoors in a pasture setting. Talk to your grocer or the chicken producer and find out how the chickens were actually raised. Organic, pasture-raised eggs are available from local farms with small flocks and a natural lifestyle for their chickens. Well, we don't and in today's society we know to question everything! Terms used nowadays in big marketing are highly interchangeable and doesn't guarantee humane treatment of hens. Free range could mean that the laying ladies get to walk about an enclosed space with a bajillion other chickens and may only see the outdoors for a few minutes a day (not to mention the bacteria!) 🐓 __________ Hens are FORAGERS! 🌱🐛🐞🐜They eat insects, worms, plants, vegetables - total omnivores, not strict vegetarians. Because chickens are outside animals, you will see that true pasture-raised chickens will have beautiful, bright orange yolks vs. pale yellow found in the store. More nutritive value + freshness! __________ When it comes to buying eggs, check around your community and local farms. There are some quality brands in stores now, but take a look around your neighborhood - you would be surprised at how many people sell their own eggs! Have a conversation, ask about their raising practices and treatment. __________ And remember, always eat the WHOLE EGG! Big news on the home reno progression over here: we got blinds today! Which means that curtains are (almost literally) closing on the free shows I've been involuntarily putting on for neighbors + passers by. Not sure if people would celebrate or mourn the curtain call, but I'm pretty pumped to use the lights in my bathroom while showering + significantly reducing the amount of partially dressed duck walking I've been doing (and if I'm being honest, that's kind of slowed down as I've adopted a more YOLO approach with the increase in natural tree cover). It's the little things 🤷🏻‍♀️. # Also low key inappropriate, the #yolkporn from my breakfast salad this am. I didn't eat enough yesterday because I fell asleep putting my kids to bed + brushed my teeth + washed my face + relocated my tired a$$ to my bed instead of my planned late dinner so I went big with 3 eggs and as an experiment, I actually poached 2 of them together and it worked out just fine👌! Details 👇: # 1. Sauteed veggies in @chosenfoods avo oil, adding in this order bc they cook at different rates and this keeps em all at the crunch level I like - onions, mushrooms for 1 min, sliced brussles for 3 min, chopped red peppers for 2 min, added salt + @primalpalate steak seasoning. 2. Meanwhile, brought a pot of water + a few glugs of white vinegar + salt to the lowest of boils, cracked a @vitalfarms egg (and then later, 2 eggs) into a bowl for easy water entry, then swirled the water with a slotted spoon and poured egg(s) in, allowing the swirling water to wrap the yolk up in the white. Let sit for 3 min, removed with the slotted spoon and set on a paper towel to drain. 3. Added eggs to bowl + topped with salt, pepper and smoked paprika. Love me some egg muffins! And they are great any time as a meal or a snack. . . Place eggs in muffin cups (grease with a healthy cooking fat like coconut oil, butter, ghee, or avocado oil), add whatever you like (these have mushrooms, cheese and peppers), bake until firm. . . These are great because you can prepare them in advance and grab them on the go! . . Eggs are a complete protein (they contain all the essential amino acids), they contain antioxidant nutrients (vitamins A and E, lutein and zeaxanthin), choline (good for your brain), vitamin D (bones, mood, brain), B vitamins (B12 and folate), selenium (mineral important for antioxidant enzymes and thyroid hormone production), and iron (helps your red blood cells oxygenate your tissues). . . Another version of "eggs and some veggies for breakfast" and I am not even a little bit sad about it. Some @vitalfarms eggs, sauteed veggies (added to my cast iron + @chosenfoods avo oil in this order since some things cook faster than others: onions 1 min, brussels 2 min with lid for steaming through, chopped broccoli 2 min, red bell peppers 2 min), @goodfoods guac that I grabbed on my @costco run this weekend (meaning you'll be seeing it on the regs), salt and pepper, cilantro and a dash of @franksredhot. # Full disclosure, this omelet is empty inside, which I believe disqualifies it from being classified as an omelet, but I just kind of forgot to scramble the eggs so this is what I ended up with (lightly beat 2 eggs, poured in pan, left for 2-3 min, then flipped, left for 30 seconds, slid out of the pan and folded). So I wasn't sure what to call it, but didn't want yall to think there was something special hiding in there. This morning, a gnat flew into my mouth 😝. In the rain. I'm still reeling over how that even happened - why are gnats out in the rain, why did they seek refuge so aggressively in my mouth, so many questions 🤔. But of course I handled it like a champ with my usual amount of grace 💁🏻‍♀️by gagging, choking, coughing and making a general spectacle while my 7 yo, Rhett, stood by and laughed singing "mommy ate a bug again, mommy ate a bug again" (the again part is a story for another day). # The protein with which I prefer to start my day - 2 @vitalfarms eggs. When your friend brings you her backyard eggs...😍 . . . When I go to the grocery store, I always look for organic and pastured eggs. Vital Farms is my go to choice from large chain grocery stores. The best option is to have your own hens and feed them from the dirt/grass as much as possible. This isn’t an option in our current house...someday! There are farmers markets all over that have venders who supply great pastured organic eggs! Just ask around and find out what they are fed! No soy, or veggie-fed (chickens aren’t vegetarians!) and hopefully mostly getting fed from the ground. (Worms & bugs!). “Cage Free” is a NO GO!
