This is what my brunch looked like today and I swear I licked my plate clean .. swirl 👅 I made grilled pesto paneer with smokey mushroom in sweet chilli sauce and pan grilled cherry tomatoes with basil on side . I made sweet chilli sauce yesterday and was thinking how would it taste with mushrooms so tried it and it turned out so well. The sauce infused Mushrooms with pungent smokey flavour and a sweet tangy after taste while grilled garlic tomatoes did actually melt in my mouth. I just couldn't stop after a bite and finished it all under 2 minutes .🤦‍♀️ The entire combination of raw pesto paneer along with tomatoes and mushroom was such a Success. A perfect mix of salt sweet sour - S3 or rather S cube. Okay, let’s talk about how I’m feeling. Veganism is hard. I was told it would be challenging but to be honest, it was more than challenging after two weeks. I’m missing some foods i love and it’s affecting the way i think. I want to be happy. • • • • So here is the new plan: i work at a fcking sushi place & i love fish out of all meats and it makes me feel the best (mentally and physically). I already eat minimal dairy except for the accidental milk or eggs that are in the food i already eat. So I’m going to try being pescatarian (like i was in December) with minimal dairy and little to no sugar and see where that leads me. It’s winter. It’s cold. It’s dark. What to do? Reach for brights to cheer body and soul! I’ve been on a luminescent trip the last few days. Seeking out dayglow colours to inject some vibrancy into these short, dreich days. An acid-yellow jumper on a shopping trip. The urge to eat yellow/orange soup. Not any old food neon: specifically, yellow/orange! I think it’s important to go with those urges; to indulge our food desires and go with the food flow. I have a hunch that’s the body’s way of telling you what it needs. Hands up, I don’t know if there’s any evidence for that! At least not on a physiological/biochemical level. But sometimes – maybe quite often – it’s just good for you to have what you want. Some say comparison is the thief of joy. I say perfectionism is. I think they go together though. Being a perfectionist, I oftentimes thought - “Well if I can’t do it right the first time, something must be wrong with me.” And I would quit. Or worse yet, not even start because of my belief that I couldn’t, or that someone else could do it better. This is one of the most damaging ways of thinking. I think I am a relatively smart person and STILL I thought like this even though I knew better! Everyone begins somewhere. It doesn’t matter where you start. You don’t have to be perfect. You don’t have to know it all. You just have to create a belief that you can do what you can and that is ENOUGH. You are enough. You can do hard shit - and it doesn’t matter if someone can do it better. This move by the way was ridiculously hard and in the past I would have given up - but I’ve built my belief in myself. You can too.

Want to add some vitamins and antioxidants to your oatmeal? Shred some carrots! 🥕 . Mix 1 1/2 cups almond milk in a pot with some cinnamon and ginger to taste. Add 1 cup shredded carrots and 1/2 cup oatmeal, bring to boil and let boil until thickened (about 10 minutes). Add 1 tsp. of vanilla extract and about 1 tbsp. maple syrup. Stir in protein powder for a protein boost. Serves 2. Perfect on a cold, dark morning. Continuando as receitas dos sushis veganos! Fiz o hotroll assim: refoguei shimeji na frigideira com azeite e óleo de gergelim, quando parou de soltar água, acrescentei mirin e, em seguida, shoyo. Desliguei o fogo e acrescentei cebolinha picada. Fiz o arroz japonês seguindo as instruções da embalagem. Pro tempero do arroz, esquentei (sem ferver) uma xícara de vinagre de arroz, com meia xícara de açúcar, meia colher de sopa de sal, uma colher de sopa de mirin (opcional). Quando o arroz e o tempero esfriaram, misturei ambos. Quem manja, me diz se tá certinho mesmo? Também fiz um sour cream veg (foto tá no stories). Bati no liquidificador suco de limão, tofu, sal e fui colocando um fio de azeite enquanto batia. Aí fui acertando o gosto conforme fui experimentando. Daí estendi a alga nori na esteirinha, coloquei o arroz temperado, o shimeji, o sour cream e enrolei. Essa parte eu não manjo muito, então recomendo você ver uns tutoriais de sushi no YouTube. Passei o rolinho numa mistura de farinha de trigo com água (fica uma pastinha líquida) e depois na farinha de rosca. Fritei em infusão (nada saudável mesmo), tirei quando tava dourado e, então, cortei e acracentei molho tarê por cima.
