Simple pleasure: lunch time! After 4 years of teaching I finally have a lunch hour! Previous years I used to have planning time and usually ate with the kids or during their nap time, but never did I have a time set aside to leave the classroom and enjoy lunch. With the new position I have, I have a 45 minute lunch AND a seperate ECE planning period like all my K-5th grade colleagues. And guess what?! I get to home and cook😉

🌱 | Homemade Herb Spread | 🌱 I made this herb spread with a tonne of greens from the garden recently, and it’s quite possibly one of the tastiest things I’ve ever eaten – kind of like a pesto but without nuts or dairy Full of leafy greens and edible (medicinal!) weeds, garlic and olive oil, not only does this taste delicious, but it’s also pretty damn good for you too - jam packed with vitamins, minerals and antioxidants 😇🙌🏻 The recipe calls for: - massive bunch of spinach - massive bunch of parsley - whatever other greens you’ve got or can get a hold of …. Mint, nasturtium leaves and flowers, thyme, oregano, puha, ribwort, plantain, dandelion leaves and flowers, lemonbalm, sage, rosemary, calendula flowers, silverbeet, beetroot greens, sorrill, basil, lettuce varieties etc - garlic (the recipe I loosely based this off says 1-5 cloves, but that’s not how I live my life 😂 so I put in closer to 10 and it packed a punch but was still delish!) - quality olive oil (heaps – depends on how much greenery you’ve got, and what texture you’re going for, but probably allow for at least 500mL?) - a good few splashes/lugs of apple cider vinegar (ACV) - salt I washed and roughly chopped the greens and started adding them to the food processor with some olive oil, ACV, salt and garlic, stopping to push everything back down and add more greens until it was all the right texture . . Put into jars and refrigerate or freeze – this will keep for up to 3 weeks in the fridge (although this didn’t even last 2 weeks in our house, it was too tasty!) . . Trust me, you’ll want to put this on EVERYTHING! 👀MACULAR DEGENERATION👀 ———————————————————- Got my baby’s blues checked today at my annual optometry visit (🤫 I’m blind without corrective lenses). Anywho, I also had my macular pigmentation retested. Genetically speaking, I’m at high risk for macular degeneration and glaucoma so these check ups are extremely important to me. It should also be important to y’all due to all the “blue light” we’re exposed to with screen time and other bright lighting. GOOD NEWS though.... I have improved my pigmentation density by 30% over the past 5 years!!!!! You see (pun intended), foods that are high in lutein or zeaxanthin as well as cardiovascular exercise are both associated with lower risk of macular degeneration and glaucoma! And according to Dr Cynthia, my increasingly healthy lifestyle is helping to heal my eyes!!! ———————————————————- Foods that are rich in lutein and zeaxanthin include: spinach, kale, broccoli and eggs. Zeaxanthin is also found in orange and yellow fruits and vegetables. It’s in season and I just can’t get enough. A crunchy, sweet, tangy and filling 🥗 almost a meal 🥘 Recipe 1 head raw cauliflower 4 tablespoon olive oil 1/2 teaspoon ground cumin 1/2 teaspoon ground coriander 1/2 teaspoon paprika 1/4 teaspoon cinnamon Pinch of cayenne 1 cup green lentils 1 large handful toasted almond coarsely chopped 10 fresh or dried dates, pitted, chopped 2 cups baby spinach Kosher salt to taste Freshly ground pepper Creamy Tahini Dressing 2 tablespoons tahini 2 teaspoons honey (or maybe agave or maple syrup for #vegan ?) 1 tablespoon lemon juice 2 tablespoon water to thin, or more if needed 1. Preheat oven 420° 2. Cut the cauliflower into smaller florets and chop the stem. Spread out in a roasting pan. 3. Put cauliflower in a bowl, drizzle oil, sprinkle spices, salt and pepper to coat all florets. 4. Roast in the oven for about 20-25 minutes until the cauliflower is golden brown, turning as needed. 5. Place lentils and 2 cups of water in a saucepan. Bring to boil, then lower the heat and cook gently for about 20 minutes or until soft. Drain any excess water and set aside to cool. Salt immediately. 6. Remove the cauliflower from the oven, set aside to cool. 7. Prepare the dressing by whisking all ingredients in a bowl. Mix gently with the cooled lentils. 8. Add almonds, dates, and all remaining ingredients to the mixing bowl and toss to combine. #recipe #meatfreemonday

Monday night workout—not easy at all. Thankfully I knew I had a tasty and healthy dinner waiting for me post workout! . Tonight’s dinner was inspired by my nutritionist/dietician—perfected plated, full of flavor and guilt-free! . I used some help from my local grocery store (Rego’s) and picked up a seasoned, roasted turkey breast. I paired it with (cubed) butternut squash which I purchased from @costco and roasted in a 350 degree oven with olive oil spray, Himalayan sea salt and pepper for 25-30 min. Last, but certainly not least—the star of the meal, caulisotto! I started by sautéing chopped red onion & chopped red pepper. Then I add a bag of frozen cauliflower rice, salt & pepper. Once the mixture was all sautéed and browned, I add in 2 @thelaughingcowusa pepperjack cheese wedges & 1 white cheddar wedge and stir until melted. . It tasted delicious and the best part—hubby and toddler approved ✅ . Want to reduce toxins when baking? Here are a few things you need to replace: ___ 🍋 BAKING POWDER- should be aluminum and GMO free. Aluminum is a heavy metal neurotoxin that can build up in the body over time and cause severe neurological problems such as Alzheimer’s. Synthetic vitamins are then added to enrich the flour and create “nutritional value.” Organic white wheat flour is a better choice and sprouted white wheat flour is even better. There are also lots of great gluten-free flours such as coconut flour that work well in baking. ___ 🍋SPICES- Most herbs and spices are sprayed with chemicals and pesticides. Choose organic for the purest form. Warm Creamy oatmeal bowls... Aka The perfect fall breakfast! It's easy, its delicious, it's plantbased, super nutrient dense, and it's filling... Could you ask for anything better? To make 2 servings: -soak 5 pitted dates in hot water for a few minutes...in the mean time -Add 1 cup of whole rolled oats to a pot. -pour 400-500ml of plantbased milk on to the oats (i personally use soy milk). -add 2 tsps of cinnamon. -drain most of the date water and blend them until smooth. -add the dates to the pot amd mix well. -cook on medium heat until the oats soaknup most of the milk or until you reach your desired consistency. -top with whatever you like... My brother and I went for pomegranate, grapes, homemade peanut butter, unsweetened coconut shreds, and chia seeds😋. But you can definitely add different things bananas, nuts and dark chocolate would go well here too. .Remember to try and tune into your body needs. I find that this inner voice is usually masked by all the bad habits we aquire and it would take practicing mindfulness in our everyday life to strip down the barriers and get to actually know ourselves.
