When your week has felt a little like the Chopped Kitchen Challenge home 🏡 edition, it can make one can feel very grateful for buying a whole bunch of coconut 🥥 butter on sale once upon a time.
Today's masterpiece is Keto Pumpkin 🎃 Mousse with homemade whipped cream (the canned fake stuff was all gone! 😱). It is fit for a queen!!!👸🏻 👑
15 oz can of pumpkin purée,
4oz coconut butter (softened), 1/2 cup coconut oil (also softened but not liquified), 1 Tbsp erythritol,
2 drops each of Young Living Clove Vitality, Cinnamon Bark Vitality, and Nutmeg Vitality. (Or 2 tsp pumpkin pie spice, but the oils taste better!)
A sprinkle of Enjoy Life mini chocolate chips (not keto, but Mama needed chocolate!)
Mix it all up very well in a large bowl or stand mixer and top with a dollop of whipped cream. or, skip the whip to keep this a dairy free treat.
Some of it got layered up right here in this glass, and the rest is going in silicone candy molds and in the fridge overnight to make fat bombs.
