Moreover, we are not facing a kwashiorkor epidemic among vegans or anyone else in developed and developing nations, but we are facing both diseases and chronic health problems associated with the consumption of excess protein. It is also noteworthy that people have been thriving on a plant-based diet throughout history, and more people are choosing to do so every year without suffering from a protein deficiency. Other factors being equal, vegans have been and continue to be at least as healthy as their peers in this regard. Layer the following refried beans, Jalapeño queso sauce, Tami’s Easy Red Salsa, sliced green onions, fresh cilantro and fresh lime juice. So filling and flavorful. Vegan Stir-Fried Garlic Tofu and Japanese Eggplant. Inspired by @thekitchn and produce from local farm market 🌱 ⠀⠀ There are a number of ways to make crispy tofu but I use no oil and still the tofu browns nicely and with the help of Turmeric has this beautiful yellow color. ⠀⠀ For the stir-fry: 1 half of the twin package extra firm tofu drained and cut into cubes. 5 Japanese eggplants, cut into 3/4 inch dice. 5-6 garlic, finely chopped. Method: Heat large nonstick pan over med high and roast cumin seeds for less then 1 min. Add garlic and water sauté it for about 3 min. Add onion and do the same for another 3 min. Add the tofu, spread into a single layer and season generously with Turmeric, Black and Cayenne Pepper, Paprika. Cook, flipping rarely until yellow golden brown for 10 min. In separate pan water sauté eggplant, seasoned with Tamari sauce, 2 tbsp Tikka Masala sauce @saffronroadfood, adding water when needed. Add frozen mixed peppers strips. Heat all through for 4-5 min. Mix together tofu and eggplant mix. Serve over baby arugula and Pearl couscous. Garnish with dill and baby tomatoes. Serving up stir fry for dinner tonight! Snatched this recipe from the @engine2diet cookbook - meaning it’s 100% vegan, oil-free, and also happened to be gluten free! I am shocked that through this process I’ve realized how TASTY my food can be without any added oils! Cooking and prep work has been quite easy and doable and the food I’ve been making doesn’t lack flavor one bit! Tonight’s stir fry contained baked tofu, broccoli, carrots, green onions, zucchini, and homemade teriyaki sauce that contained liquid aminos, sesame seeds, ginger, maple syrup, tomato paste and sesame seeds served over brown basmati rice. Who else out there loves stir frys and what do you put in yours!? 👇🏼🌱💛

🙋🏻‍♀️ Who else LOVES having breakfast already prepared for you in the morning?! 😅 Well, I 💯% do as well, and have recently been hooked on these overnight oats. 😍 They’re incredibly easy to make, power-packed with #fiber, #plantprotein, #omega3 fatty acids, #antioxidants...honestly—the perfect meal for busy mornings. 🤗 Give them a try & let me know your favorite add-ins/toppings! 🍌 . . Place the following ingredients in a jar: * Heaping 1/2 cup rolled (AKA old-fashioned) oats * 1-2 Tbs ground flaxseed * 1/2 tsp cinnamon (or more per taste—you can also substitute or add any other spices of choice!) * 1 large, ripe banana (or 2 small), thinly sliced * 1 cup water (or more if you were extra generous with your scoop of oats 😜) 👉🏻 Place lid on jar and shake! Feel free to use a 🥄to help mix if the ingredients clump together. 👉🏻 Refrigerate overnight. When you’re ready for breakfast, simply pull it out & add your toppings! 😄 👉🏻 I chose almonds and frozen blueberries today, but any nuts, seeds, nut butter, and fresh or frozen fruit are great choices. So this is a Ramon noodle bowl. I added more than the @engine2diet did. I just added vegan chicken seasoning to the noodles and it gave an amazing flavor. Next time I think I’ll marinate the tofu with the same seasoning to give it more flavor. Red beans, @dirtydickshotsauce, sfouf bread (baked with tahini), collard greens, @fierceferments excellent Chile Kraut, and applesauce: this is weeknight, plant-based soul food. 🍛 I made the collards in the Instant Pot - 1 bag of greens, 1 pint of cherry tomatoes, and a tablespoon of chopped garlic, dark miso, and two of Bragg's. I also added chopped onion, carrot and celery, which I keep bagged in the freezer, straight in still frozen. I added Ethiopian berbere, and garam masala because I'm a deranged genius. I’ve tried quite a few different lentil recipes but this one is my absolute favourite. It is so good you can serve it on a bowl of brown rice, baked potato, in a pita or Make a sloppy joe burger. No 273 in my #365healthybowls challenge. Lentil Dahl on brown rice😋😋 Here’s the recipe if you’d like to give it a try, it’s an adapted Engine2diet version: Ingredients 1 red onion chopped 4 cloves minced garlic 1 tbsp freshly minced ginger 1 tsp ground cumin 1 tsp ground turmeric 1 tsp curry powder 1/2 tsp chilli powder 1 can chopped tomatoes 3 tins lentils Dry fry the onions until cooked through add the rest of the ingredients and heat through for a few minutes.
