Oven roasted veggies!! 👩🏼🍳🥔🥕I chopped up some potatoes, carrots, cauliflower, asparagus, mushrooms, onions, and cherry tomatoes and coated them with a little oil, garlic, salt, and pepper. Then I threw it all in a pan and baked it for about 45 minutes at 400 degrees. Next time,I probably won’t add the tomatoes. They exploded pretty early on, making it hard for the other veggies to crisp up.
