Oo Jesus Christ Are you ready for this ? The best comfort food !! It’s mix of Twix bars and toffifee! I’m so excited to share the recipe with you guys. So I saw somewhere similar cups like these and I felt in lovee. I wanted to veganise them, but I was so skeptical about it because I had to make vegan caramel which I have never made before, let me tell you it wasn’t easy ! It took me 3 times until it was the consistency I wanted it to be but it was worth it!
So here it goes!
180g Digestive cookies
110g ritz crackers
1/2 vegan butter
Put everything into a blender and blend until the dough gets bit sticky.
Next transfer the dough into the cupcake pan and spread evenly, press the mixture with hands or glas, press as much as you can so it won’t fall apart.
Now the fun part begins!
1/3 + 10 ml vegan butter
3 spoons of water
2/3 cup vegan whipped cream I used alpro 26%
3 biiig! spoons of golden syrup
1 cup sugar
1/2 teaspoon salt
Into a sauce pan on medium heat add water, golden syrup and sugar, but be careful to pour the sugar into the middle, don’t let it touch the sides of the sauce pan, mix the ingredients gently! When the mixture is boiling cover the sauce pan with lid for 2 min, then remove it. Next Put the Candy thermometer into a sauce pan ( the thermometer shouldn’t be touching the bottom of the sauce pan)
The temperature should be about 100-120 C cook for 10 min (You have to check on in all the time but do not stir!!), meanwhile you can heat up the cream and butter together until butter dissolves then remove it from the stove.
For a 3 min increase the temperature up to 130-140 C, The mixture should be golden brown, at that point add bit by bit of the butter mixture, be careful the mixture will bubble so add slowly to prevent the mixture form bubbling, stir just a tiny bit and leave it for another 5-6 min slowly decreasing the temperature.
Remove it from sauce pan and pour into the cups. Let it
