Check it out, my fermented pineapple drink Tepache was today ready for imbibing, and damn it was good. I made this at @hapinz Wednesday wastefree workshop, run in partnership with @plasticfreehb. It’s cheap, simple to make, uses scraps and is good for your gut health - a quadruple win 👊👊👊 👊This has pineapple skin, pineapple core, water, chilli flakes, a cinnamon stick and coconut sugar (but you could try without sugar, it’s sweet enough). For this round, I added a bit of miso and substituted some of the Korean chili flake with powdered chili de arbol. Gai lan / chinese broccoli. My new favourite ferment. Most of you will know it as one of the only vegetable on offer at the yum cha establishments you visit. This version forgoes the questionable oyster sauce in favour of just three ingredients ; salt, sauerkraut liquid and time. Was fortunate enough to have a vacuum sealer at my disposal. These were bagged, sealed and put away at room temperature for 5 days. Today was day 2 of my 9-day pickled cucumbers. After sitting for 24+ hours in a simple water and salt brine, they were drained and I added a gallon of vinegar, spiced, salt, sugar (lots) and dry mustard. Now it’s about stirring and adding lots of sugars for a few days. I’ve been eating cultured foods for almost sixteen years. I eat them most every day with very few exceptions. When I first started eating cultured foods, I had diabetes, high blood pressure, joint pain, and felt discouraged and depressed. These foods were the answer to my cries for help, but never did I think the answers would come in the form of food that was filled with invisible microbes. These special helpers filled my body with microbes that help lower inflammation, thus reducing my blood pressure and normalizing my blood sugars. It shocked me that these foods could be so powerful and it filled me with gratefulness. I then went on a mission to find the wisdom they could impart. Fast forward fifteen years later, and the journey has continued to amaze me. Each of these foods helps me in a myriad of ways, and as the years have piled up I have found new ways they help me such as seasonal allergies, stress, menopause, candida, digestion, colds and flu, stomach distress, and the list continues to grow. I love microbes and every day I walk by the jars on my kitchen counter excited that soon they will become a part of me. Fermentation mode again! Look carefully in the background of the first image and you will see two carboys sitting in my pantry. One is filled with our first attempt of making a sour beer called Tundra Haskap from our own berries and the other is an ale using our fresh lime basil from the garden called Lime Basil Summer Ale. So the brewing season is in full swing and so is fermenting veggies! This is going to be a fermented salsa and the ingredients are all from the garden except for the Celtic sea salt. This is my favourite salsa because I prefer the fresh flavour of the veggies compared to the cooked salsa. I threw in fresh sliced okra to add that special touch!💚
