Harissa Cauliflower Steaks, veggie rice & roasted peppers This is a sweet & spicy dish that was packed full of flavor! What you’ll need: 1 1/2 lb head of cauliflower (0.7 kg) 2 teaspoons water 1 large clove garlic, minced 1 tablespoon lemon juice* 1 tablespoon + 2 teaspoons olive oil 1/2 teaspoon salt 1 tablespoon maple syrup 3/4 teaspoon paprika (sweet)** 3/4 teaspoon cumin 3/4 teaspoon coriander 1/4 teaspoon smoked paprika** 1/8 teaspoon cayenne Wegmans veggie rice blend 2 red bell peppers Preheat oven to 425°F. Cut tops off of bell peppers & remove seeds. Drizzle with olive oil, salt & pepper. Bake for 25 min until soft & charred. Set aside a baking sheet lined with parchment paper. Prepare cauliflower by trimming away any green leaves. With the cauliflower sitting on it’s stem, use a knife to slice it in half. Cut one thick slice from either side - so that you have two “steaks”, each about 1 ½” (4 cm) thick. In a skillet over medium-high heat. Add 2 teaspoons olive oil, and once hot, add cauliflower steaks. Let them sear, undisturbed, for 3-3 ½ minutes on each side (cooking for approximately 6-7 minutes total). Remove once they’ve developed a golden crust on either side. While the cauliflower cooking you can assemble the harissa glaze. In a small bowl combine 2 teaspoons water, maple syrup, paprika, cumin, coriander and smoked paprika. Mix well. Once the cauliflower is seared, transfer steaks to lined baking sheet. Brush harissa glaze on both sides, coating all the nooks and crannies. Transfer to oven for 5-7 minutes or until tender. In a pan add veggie rice blend with olive oil, garlic, lemon juice, salt & pepper. Sauté until soft. Assemble on a plate & enjoy!

Sharing the recipe CHICKEN BACON CAESAR CASSEROLE Ingredients 8 oz cream cheese softened 4 oz sour cream 4 oz mayo 2 tsp roasted garlic powder (this is worth the investment, the flavor is amazing!) 2 tsp dried minced onion 2-2.5 lb cooked chicken , cubed 12 oz bag frozen spinach , thawed and drained 1 cup grated parmesan cheese 4 slices crisp cooked bacon or 1/4 cup bacon crumbles 2 oz shredded mozzarella Instructions Preheat oven to 350 if baking immediately. Or you can prep ahead and keep in the refrigerator for a day or two. Combine cream cheese, sour cream, mayo, and spices and mix thoroughly. I do this first in a big metal bowl. In the big bowl combine the cream cheese mixture you just made with the chicken, spinach, parmesan cheese, and 1/2 the bacon and mix well. Dump into a 9x13 baking dish sprayed with cooking spray. Sprinkle remaining cheese and bacon on top. Bake until hot about 35 minutes.

Staying on track while on holidays 🏝 This week I’ve been enjoying some time in the Maldives on my honeymoon, so I’ve put together a few tips that help me stay on track with my training and nutrition: 1. Stay hydrated! I always carry a water bottle with me so I can sip on it throughout the day. This is especially important in the sun and warmer weather. 2. I try to keep my eating habits fairly normal. Just because you are on holidays doesn’t mean you need to pig out. Choose foods and portion sizes to suit and you will feel so much better for it. 3. Eat your fruit and veggies! I fill up on fruits and whole grain options at the breakfast buffet so I’m not tempted to reach for less nutritious foods, and I have salads or vegetables with my dinner. Today’s breaky was wholegrain toast with a freshly made omelette 😋 4. Stay active! When I can’t train at @f45_training_greenhills , I still try to fit in a sweat sesh. There are usually so many activities to do on holidays - today we went snorkeling, bike riding, kayaking and squeezed in a quick session at the resort gym. Even going for a walk each morning will do the trick. 5. Finally, enjoy yourself! Have been subsisting off this cauliflower alfredo pasta pot for the last few days and it just keeps doing it for me 😛 🍴recipe: Cauliflower alfredo sauce: 🌿1 head of cauliflower (boiled in broth until fork tender) 🌿1 head roasted garlic 🌿3/4 cup almond milk 🌿1/4 cup nutritional yeast 🌿1/2 tsp salt 🌿1/2 lemon 🌿pepper and/or red pepper Put all ingredients in blender until smooth. Hi guys! You’re following me on Instagram, awesome! First post is a food post. I talk a lot about nutrition and it’s major role in my life, so here’s a photo recipe. If you like what you see and want it I can explain it more in detail. Turkey, broccoli, asparagus, coleslaw, broccoli slaw, roasted mini potatoes. I made enough here to take me a little further than two days. I’m not in a position where I’m weighing my food right now, so the amounts are eyeballed. I eat when I’m hungry and stop when I’m satisfied (maybe sometimes a little more but I’m working on it 😉). I eat kind of a lot because at over 5’8” and almost 160 lbs I need the calories, vitamins and nutritions to work at my best capabilities. For me one of the most important aspects of this is the bite sized pieces. I can eat this in my car, the school, and easily on the go. No need to drive through if you have fast food in the fridge! Galleticas saludables 🍪para estos días fríos ❄️ . Son muy fáciles de hacer y de verdad que quedan deliciosas. Me gusta escribirles las marcas y mercados donde compro las cosas para que ustedes tengan un referente: . 1/2 taza de semillas de girasol 🌻 crudas y 1/2 taza de semillas de linaza (las compro en @la.cesteria de la marca @frutosysemillas ) 1/2 taza de cacao en polvo (me encanta el de @chocolates_leyenda que consigo en @la.cesteria) 1/2 taza de azúcar de coco (antes la pedia a 🇺🇸 pero ahora la consigo en @fitfoodmarketcol de la marca madhava que es orgánica y sin refinar) 1 cdita de bicarbonato de sodio 1/4 cdita de sal rosada 8 cdas de ghee (yo la hago en mi casa, es mantequilla clarificada, pero la puedes conseguir en cualquier mercado saludable) 1 huevo 1 cda de esencia de vainilla 3/4 taza de chips de chocolate oscuro (las gotas de chocolate de @xocolatandmore son las que usé y las consiguen en @fitfoodmarketcol ) . 1. Agregar las semillas de girasol y linaza a un procesador hasta que queden con una consistencia como de harina. 2. Añadir el cacao en polvo, el azúcar de coco, el bicarbonato de sodio y la sal. Procesa bien y luego añade el huevo, la mantequilla ghee y el extracto de vainilla. Procesar todo hasta que sea una masa homogénea. 3. Pasar la masa a un bowl y agregar las gotas de chocolate. Mezclarlas con una espátula y cuando este lista la masa usar una cuchara 🥄 para porcionarla y agregarla en forma de bolitas sobre una bandeja para horno cubierta en papel parafinado. Presiona ligeramente cada bolita de masa con los dedos y agrega mas chips de chocolate. 4. Lleva la bandeja al congelador por 10 min y precalienta el horno a 350F 5. Luego hornea las galletas por 10 min. Dejar enfriar por 5 min y listo ✅. Guardalas en un recipiente de vidrio o hermético.

There’s something about being strong in your self that translates into being sexy in your own skin. ✨ Two of my dear friends are incredibly talented photographers and a few months ago they generously gifted me a budoir + branding session. 🙌🏻My first thought tho was .. “I don’t have someone to share them with.” Budoir photography is typically gifted to your significant other, usually as a wedding gift. In fact, i gifted it to my ex husband on our wedding day. (Brides, do it! It’s SO fun and such an intimate gift for your husband.) 💕 Fast forward to the day of my shoot and i had spent the last month emotionally and physically drained from countless trips to Cornell for Dangers surgeries, sleepless nights and endless sob sessions. I was in survival mode for EVERY aspect of my life, as i had been for the last two years. That day was the MOST fun i had had in a long time. It was all about me, being comfortable in my skin, for me. I realized that my friends gifted me the best gift of all - a way to capture how strong I’ve become over the last two years. I survived a divorce that could have wrecked me, I’m surviving Danger having cancer, I’m stronger because of the struggles I’ve been placed in on purpose. And because of it, i realized these photos are meant for me to recognize i can be sexy in my own skin just for me. Girls - celebrate YOU regardless if you have a special someone in your life. But you can bet your ass one is getting blown up and framed in my bathroom, isn’t that what the Kardashian’s would do? 😜

🚨GOCHUJANG CHICKPEAS🚨 . . . . Oh yes!! Gochujang chickpeas...AGAIN!! 😝 We can’t help it! They are amazing and go so well with lettuce shells!! 🙌 . . Super easy to make too: 3tbs gochujang sauce 2tbsp water or veggie broth 1tbsp agave Splash of rice vinegar 1tbsp Bragg's liquid aminos Garlic and ginger powder to taste . INCONCEIVABLE 😂 . @everydayherbivores . . When we first went plant-based 👩‍⚕️ we did it for health reasons, but it’s hard to ignore the environmental impact as well as the treatment of animals in factory farms (which is where most meat comes from). 😞 . . I’m ashamed to say it, but I thought the animals didn’t know what was happening, FALSE. 😔 That they were well taken care of, FALSE. 😞 And that we needed meat to survive, SO FALSE. 😢 . I’m so grateful we no longer drink the koolaid 👍 . . The way that animals are treated is appalling the majority of the time. They are no longer living beings, but treated as products. Crammed into small cages, not able to even turn around, no sunlight, and many or forcefully impregnated over and over again until they are killed. 😭 . It’s 2018, we don’t need to be doing this and I just hope more people realize that too 🌱 . . Giving up meat and dairy was an adjustment, but truly not hard. ✅ We eat healthier and with more variety than we ever have! 😃 . We feel so much better: mentally and physically and the more we educate ourselves on the benefits of living a plant-based vegan life the more we know we won’t ever go back! 🌱🙌🙌🌱 . .
