Today I made laksa, which is an Indonesian noodle soup. It was so so so good! . . . Ingredients: 4 small shallot onions 1 lime in thin slizes 1 red chilli minced 50 gram fresh spinach 150 gram of sugar snaps sliced diagonally 3dl of either green lentils or black beans (cooked) 3 toes of garlic 2 table spoons of grated fresh ginger 1-2 teaspoons of red chilli paste 1 can of coconut milk 1 bouillon block 5 dl (2 cups) of water 1 or 2 table spoons of soy sauce 175 gram of noodles Fresh coriander . . . Put the onion, lime, chili, spinach and sugar snaps on the table as the toppings. Fry the ginger, garlic and the chili paste for a few minutes in a little coconut oil. Add the coconut milk, water and bouillon block. Let it simmer. . Prepare the noodles according to the package. Put everything on the table and start with some noodles, put some soup over that and finish with the toppings of choice. . . I’ve been vegan for almost 6 years, however I think it’s so important to not switch to ANY diet just because it’s getting more trendy. . I love that vegan diets are becoming more accepted in sports and the health & fitness industry. But I do believe that if you’re currently considering going plant-based, it’s crucial to do your research FIRST. . Vegan diets tend to be lower in calories, because plant-based foods are higher in fibre which promotes satiety. While this is great for weight loss, it can be a disadvantage if putting on muscle mass is your goal - I personally struggled with this for years & it kept me from gaining muscle until I finally started to track my macros & got used to eating a lot more food. . Vegan diets also tend to be lower in protein, vitamin B12, calcium & iodine, but are usually higher in carbs, fibre, other micronutrients & antioxidants & lower in saturated fats. . While most vegan protein sources are incomplete, meaning they don’t contain all essential amino acids, foods such as beans/legumes are good sources of lysine that's often missing. Other BCAAs can be obtained by consuming a variety of protein-rich foods. Higher carb intake might help to decrease inflammation & promote recovery from training. Vegan diets are also typically lower in fat which is great when it comes to saturated fat that is associated with heart disease, hypertension, type II diabetes, cholesterol & cancer. Nevertheless, eating enough healthy fats found in e.g. avocados, nuts & seeds is important (25-35% of total calories). . There can also issues with digestibility & absorption of nutrients such as protein, calcium, Vitamin D,B12, iron & zinc. Getting sufficient levels of micronutrients is important for everyone’s health. . Bottom Line: If you’re smart about your food choices, consider your calorie goals, macro & micronutrient recommendations and appropriate supplementation, a vegan diet is a great choice even for athletes. . Make the right choice for you, your beliefs & body.Make it a lifestyle, not a diet. As with all diets, it’s difficult to maintain restrictive eating that go against your normal eating habits. . Pink hummus and home made pita bread to start this Saturday right👌🏼 I mixed cooked beets with hummus and garlic for the pink hummus. It’s seriously good with all kinds of raw veggies but extra good on pita bread. For the pita bread I used flour, baking soda, pink salt, thyme and warm water. Then just flatten out the dough and cook in pan for a couple of minutes. happy Saturday!!✨ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ mine has started off extremely sweaty! i ended up doing 40 mins on the stairmaster with no handzzz because the machine decided to stop at 20 mins so had to restart it 😒 but i can’t complain, pushed myself further than i thought i could! ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ i often get asked how do i manage doing the stairmaster with no handsss?! and the trick is to get focused & stay focused. cardio for me is definitely more of a mental challenge than a physical one, because if you’re able to just relax your mind and focus on how your body is moving rather than how it’s feeling, you’ll exceed past the boundary you set yourself every single time. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ so next time you do cardio challenge yourself! if you’re used to spending 15 mins on a treadmill and you feel like you’re completely cream-crackered after, do an extra 5 minutes!! because if you can do an extra 5 minutes then i can guarantee it’s your mindset giving up on you, not your body. ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ have a fab weekend peeps!♥️

S E C O N D ° B A S E Ok ok.. I'll be more inventive next time, but honestly, what's better than hazelnut spread shared with someone you have the hots for? And when some of it gets left on their lip and you gotta do the right thing 😉💋 I was making this up as I went along so the recipe and method might not be the best out there, but the spread is divine! HAZELNUTS 200G COCONUT MILK 1/4L RICE MILK 1/4L (OR WATER) DATES 5 (W/O STONE) CINNAMON 1TS COCOA POWER 5TBS VANILLA BEAN (OPTIONAL) 1) Add hazelnuts to a bowl and cover with boiling water. Peel the "skin" off all the nuts (and feel your life force slowly fade away). Alternatively leave the skin on and save about an hour of your time and, as a bonus, the will to live. 2) After soaking in water for an hour (peeled or not), add them to a blender with the coconut milk and pulse until well combined. 3) Add one date at a time and add a splash of water if the concoction becomes too thick. Don't worry about it being soggy, you can boil it off later. 4) Add a spoonful of cocoa powder at a time. You can try it as you go along and add more or stop adding when you are happy with the taste. 5) Transfer the blobby goo to a pot and bring it to a boil. This is where you add the vanilla beans (sliced down the middle). Stir it continuously for about 10 minutes until the liquid has reduced significantly. 6) Let it cool down for a while and (remove the vanilla bean) transfer it back to the blender for a last spin on the highest setting. 7) Let it cool down further and plop it into a glass jar and store it in the fridge. ⚠️Heads up! Breakfast at work! (Hence the background 😂) It’s so freaking freezing in the morning at the moment, nothing warms me up better than cinnamon oats. I tend to have oats in some form every morning. They keep me full for ages and when it gets busy time to eat can be hard to come by!
