to all you out there who love a good recipe, oh boy do I have one for you. BEET + BEAN BURGERS. this protein packed patty is for all my vegetarians, all my meat lovers (because you have taste buds too), all my Sunday preppers, all my busy moms... pretty much everyone. takes little to no prep, but a food processor or high powered blender will be your friend here. I slathered mine in tahini + avo, on top of some home grown kale 🌿 — I say it all the time and I will say it again ⚠️ these are the perfect meal to make and FREEZE for all your busy, “I don’t want to cook right now” kind of days- because you’re lying to yourself if you don’t have those times. — leaving the recipe below 👇🏽👇🏽 this one is definitely worth the little (emphasis on little) extra time to prep - makes a ton of freezer friendly, big family fueling patties — BEET + BEAN BURGERS: 4 raw beets 2/3 c cooked lentils 1/2 c black beans 4 tbsp of whole wheat flour 1/3 onion 1 garlic clove 1/4 c oil (I used avocado oil) 1 1/4 powdered mustard salt + pepper 1️⃣ peel and dice the raw beets, then toss them in your food processor/blender and pulse to small bits 2️⃣ transfer beets into a large bowl, then pulse the onion + garlic clove until finely chopped and add it to the bowl 3️⃣ mix in the rest of the ingredients (cooked lentils, black beans, flour, oil, mustard powder, s + p) and spoon the mixture back into the processor (may have to do it in batches) and grind everything together 4️⃣ ice cream scoop the mixture onto some foil and mash into patty form 5️⃣ bake on the stove top over medium heat until crispy on each side, then let them cool!! that’s when they’ll harden up, then you can pop them back on for a few minutes each side to rewarm them before eating ⚠️ freeze your extras for easy heat and eat meals!!! ⚠️ remember, the freezer is forever and always your best friend

Beef fajita tostadas (chulpas?) 😋 one made with a flour tortilla and one with a corn tortilla. I baked them for 20-30 mins on 355°. Then layered with very little refried beans and rice. And you already know I got that salad on the side 😉😄

Typical grocery shopping for our household for 2 weeks. We hit up our local farmers market first for organic and local produce... got to support our Western Canadian Farmers ( Alberta and B.C) Then we head up to our favorite Costco to grab our meat and staples. Todays unexpected find was tumeric Curcuma all natural vegan linguine. Looks like a huge amount of food right! GOOD MORNING ☀️☀️☀️ • it’s another sunny day so this girl is happy! also it’s the weekend 😍 so today I decided on homemade gluten free everything bagels for breakfast! • low calorie (about 150 calories depending on brands used) & also high protein (12 g for me- also depends on brands) 👏🏽👏🏽 • recipe is posted a few posts back! the only difference is the first time I made them it was with whole wheat flour so I couldn’t try them 😕 these are made with @bobsredmill 1 to 1 baking powder, greek yogurt, baking powder, an egg, salt, and @traderjoes everything but the bagel seasoning 👅 start making them & be eating them in less than an hour! • pro tip- when topping use an egg wash to make toppings stay! • happy weekend to everyone 🤗

today I couldn’t decide whether to have greek yogurt for breakfast or oats so I opted for both 🤷🏽‍♀️ I missed them both so much!! oats & plain greek yogurt are my two favorite things for breakfast 👅 today’s creation: • -1/3 cup @fage plain greek yogurt 0% milkfat 1/4 cup gluten free @quaker oats -splash of @almondbreeze unsweetened almond milk -1/4 cup blueberries -1/4 cup red raspberries -2 tbsp @pb2foods • NUTRITION INFO: 16 g protein 32 g carbs 5 g fiber 10 g sugar 3 g fat & a whopping 214 low calorie meal to start my metabolism 👅👅

hey friends 👋🏽👋🏽 i’m back!! i’ve been in Africa the past month working in a psychiatric ward with mentally ill patients. due to being in Africa my diet consisted of ALL CARBS. which was nice for a couple days but then I started feeling SO SLUGGISH. all the fruit, plantains, rice, beans, yams, and fries for me 😷😷 I did not eat any vegetables while there (NOT by choice!) so it’s safe to say I was super excited fo return back to the states and giving my body the fuel it needs!! • green smoothie for this morning 🌿🌿 -strawberries -bananas -mango -unsweetened almond milk -vanilla pea protein -ALL THE SPINACH!!!!! • so delicious , so nutritious, and has fine feeling great!!

fourth of july TACOS 🌮 that’s right, tacos, because bbq was just too predictable. of course we still had to pull out the grill, so grilled fish tacos it was! 🐟 spruced up our tacos with some homemade slaw. you definitely can’t have a good taco without a little crunch, especially when that crunch packs in the nutrients + beautifying healthy fats. I’ll probably be throwing this mix on just about everything this week • SWEET LIME SLAW with ☀️flower seeds: 1/2 red, 1/2 green cabbage sliced thin radish slivers 1/2 cup sunflower seeds shredded carrots DRESSING: 1/4 cup oil 1/4 cup apple cider vinegar 2 1/2 fresh squeezed limes drizzle of honey to taste • everything chopped up in a bowl, dressing drizzled over top, and chilled in the fridge for an hour or so

I feel like a lot of times the “always do more” mentality is pushed on us more than we might imagine. for me, I feel more accomplished when I work out 7 days a week, always pushing myself to go my hardest. I tend to let myself neglect the fact that the growth is in the rest. “more” is not always better, and rest can be a challenging thing. it can be easy to compare to all the noise that is at our finger tips. I find that I have to remind myself that sometimes less is more, and the body needs rest to make the gains!! ~ today I am reminding myself to slow down, take a rest, and appreciate my body for all that it does. @heinebroscoffee in hand, giving my body what it deserves (which is actually my butt on the boat, feet up, sun shining, livin’ the LAKE LIFE for the day)
