My kind of vegan chocolate mousse♥️😋 . . . Ingredients: 1 can full-fat unsweetened coconut milk , such as Thai Kitchen (see notes below) 4 tbsp powdered sugar (or maple syrup, see notes below) 1/2 teasp vanilla extract 3-4 tbsp unsweetened dark chocolate cocoa powder (see notes below) (optional) toppings of choice - cocoa nibs , fresh fruit, nuts, shredded coconut, etc. Directions: Place the can of coconut milk in the fridge overnight for at least 24 hours. Chill a small-medium size bowl in the freezer for a few minutes. Once you are ready to whip, remove the can from the fridge without shaking it. Slowly turn it upside down, and then open the can. You will see the liquid coconut milk (the part that did not solidify) will now be at the top of the can. Slowly pour out this liquid into a bowl or cup. This coconut milk liquid is not used in this recipe - you can save it to make a green smoothie. Once you have poured out the liquid, the part that remains is the hardened coconut cream. Scoop out this coconut cream into the chilled bowl (note, do not use too large of a bowl otherwise it will be difficult to whip). Using a stand mixer or a electric hand mixer and beat until fluffy. Start on low speed and work your way up to a higher speed until you start to see stiff peaks forming. Half way through, add the sweetener, vanilla extract, and cocoa powder and continue to beat. So a couple of friends have been wondering why I'm always falling sick. Fact is, I was never a very healthy kid to begin with and I mostly took it for granted that my youth was all I needed. I was so wrong. As I'm fast approaching the big 3-0 this year, I've begun making bigger efforts to eat better, work out more and have a healthier lifestyle. Check out my Choco Berry Oats for Breakfast! The improvements are significant and I feel great about myself! However on the surface though I may look alright, prior to this "cleansing", enough damage had already been done to my body - given that I had taken more than 5x antibiotics in 2017 alone. I probably lost all the good bacteria in my body to fight off any germs lingering in the air. My immunity is at an all time low now and repairing it may take months to rebuild. Got my first flu already in Jan this year (which is pretty disappointing) but whatever it is, I'm going to keep working on myself, stay positive and do my best not to let this deviate me from my path to Aging Gracefully :)

I made homemade almond milk once again (recipe on my feed), and that’s what happened with the almond pulp 😄 because I don’t like throwing or wasting food. • Things that went into these protein balls: - almond pulp - 1/4 cup @nutiva coconut oil - 1 packet of @artisanaorganics raw walnut butter - 3 scoops @primalkitchenfoods collagen - 1/4 cup raw @bulletproof cacao powder - 6 medjool dates soaked in hot water - 1 tsp vanilla extract - 1/4 tsp sea salt - 1/4 cup almond flour - coconut flour till the desired consistency is reached #holisticzest

During the last 30 minutes of my 2 1/2 hour cycling class all I could think about was having a nice cold stout and a big plate of black bean nachos at Corner Pub , but I remembered my post yesterday and need to “walk the walk” . I decided to make vegan nachos at home .. not gonna lie .. lots of work . You know when you want to buy some corn tortillas and you only need about 8 of them, but you get 50 of those bastards in a package .. take the extras and cut them into 6 wedges, put them on a baking sheet and mist them with olive oil cooking spray and sprinkle a little garlic salt on them . Put um in a 350’ oven and bake till light brown .. maybe about 15 minutes . Check often because they go from almost to burned in seconds. Next I took about 1/2c crumbled vegan chorizo and sautéd it in a small pot till heated through then added a can of drained black beans and a squeeze of lime . Then I sauted 1/2 a red bell pepper and half an onion in a splash of oil until they started to caramelize. So far not bad .. then I attempted vegan nacho cheese for the first time .. not bad , the only thing that could have made it taste more like cheese was to add some freakin cheese .. I will keep working on it. If any of you #vegansofinstagram have a good recipe hook a girl up ! All in all they were very good and ... completely healthy ! Getting to know all the functions in instagram story can come with some growing pains 😩. I wanted to post a photo from dinner last night but, I accidentally added an emoji statement that made no sense on my photo (stress level gage) and couldn’t get rid of it. So, I deleted it forgetting that my photo isn’t saved in stories 🤦🏻‍♀️. Unless it is and I haven’t figured that out yet. 🤷🏻‍♀️ * Golden Coconut Lentil Soup and it was YUM! 👅 Topped it off with cooked farro, toasted coconut 🥥 flakes, cilantro 🌱and some red pepper flakes 🔥This soup is poppin’ 💥 with fiber for your tummy bacteria to❤️ on…Yay! * Who would like the recipe? 🙋🏻‍♀️ Props go to Budgetbytes.com Adjust this recipe to your liking. Didn’t have jasmine rice, used farro. I didn’t have carrots and made it without and it was still scrumptious. I used light coconut milk b/c that’s all Harris Teeter had that day. I used yellow lentils and turmeric from @charlestonspiceco * Ingredients: 1 Tbsp olive oil 1 yellow onion, diced (I used a smaller one) 2 cloves garlic, minced 1-inch fresh ginger, grated 1/2 Tbsp ground turmeric Pinch of red pepper flakes 2-3 carrots, peeled and sliced 1/2 lb red or yellow lentils 4 cups of water 13.5oz can coconut milk salt to taste Toppings Optional: 1/3 cup large, unsweetened coconut flakes 1/4 bunch cilantro 2 cups cooked jasmine rice Instructions: 1. Add olive oil to a large pot. Add onion, garlic and ginger. Sauté over medium heat for 2-3 minutes until the onion is soft. 2. Add turmeric and red pepper to pot and sauté for a minute more. Add carrots to pot, sauce for a minute more, add lentils and water. Place lid on pot, bring to a boil over high heat, turn down and simmer for 20 minutes. 3. Toast coconut flakes, add to dry skillet, brown over medium low heat. Stir continuously. Remove from pan immediately when done. 4. After 20 minutes lentils should be broken down. Stir in coconut milk. Use immersion blender or carefully blend in batches until about 1/2 of the soup is pureed. Once blended start adding salt to taste and adjust red pepper flakes if you desire. 5. Serve soup, top with 1/2 cup rice, fresh cilantro, and sprinkle with toasted coconut flakes.

The last thing I wanted to do when I got home Thursday night after a 2 hour commute thanks to Metro North delays was to make dinner. I had been defrosting a pound of ground beef since I’ve been craving a childhood favorite, but the thought of making dinner at 8pm after a long day seemed out of the question. With my finger about to tap “Place Order” for a fast but sodium-filled Chinese food delivery, I thought to myself how much I love cooking & how relaxing it can be (for some, it could well be work for others). 35 minutes later, I went back to the motherland with a vat of kheema, stayed healthy with brown rice, & had a good dollop of Greek yoghurt & hot mango pickle; thinking no Seamless order could ever conjure up the happy memories that a spoon of this provided. 😊🇮🇳🔥

What if I told you that looking at yourself everyday in the mirror for five minutes can help you see better than you have in a whole day. Perhaps even in your lifetime. Clarity comes from within, that is why eyes are the window to a person’s soul. Always will be, always have been. There is something within them that no person would ever be able to deny, not a good liar, not a good cheater, not even a good heart that is shielding itself from pain. Maybe we are blinded because we know so well what we will find when we finally look straight at it and see.✨

Such a fun morning at La Boulangerie in SF enjoying these delicious parfaits made with @goodmixfoods @yoconutdf coconut yogurt, @myfavoriteindulgence granola, @rigoniasiagousa hazelnut spread and the new @eatnuttzo bars! Sooo delicious! Plus we got to try @laboulangeriesf pastries which were amazing! Their chocolate chip cookie was unreal! Thanks @peachonomics for the invitation ❤️
