Lemme talk to you about the mince pies. Raisins, currants, sultanas, chopped mixed peel. Some Bramley apple and lemon juice gives the mincemeat a freshness which is usually lacking in supermarket mince pies. The fruit is soaked in brandy AND sherry so you will definitely taste the booze, but it’s not overpowering. There’s ground cinnamon, ginger, nutmeg and mixed spice so a lovely festive spice flavour going on. Vegetable suet makes these suitable for vegetarians. Lastly, dark brown soft sugar gives the mincemeat that gorgeous treacle flavour, but I don’t add too much as can’t stand mince pies which are sickeningly sweet. The pastry is my usual all-butter shortcrust, but I also add some ground mixed spice to it so as the pies bake those spices get toasted and (as well as making our kitchen smell amazing!) complement the flavour of the mincemeat. A little demerera sugar is added on top for a crunch, and that’s it! Thanks for this beautifully festive pic @ ❤️🎄 @

seriously, these mince pies are gorgeous! I'm sure Santa would love to find a plate of these by the chimney. If, IF I haven't eaten them all beforehand.
