~ Vanilla and Cinnamon French Toast with Lemon Curd and Berry Salsa ~
We are currently in Lyon, France - the foodie capital! Yesterday we ate at a bouchon (a traditional Lyonaise restaurant), where we were served a three course lunch. No wonder we just felt like nibbles by the river for dinner!
We have also eaten galettes (buckwheat crepes) and other local delicacies.
When seeing a cafe menu, I was reminded of one of my old favourites - French toast! My mum used to make it for us when we were young, by soaking the bread in eggs and milk and frying it, only serving it with salt and pepper. When I was at uni I used to do the same but add cinnamon & vanilla to the egg mixture and then top it with caramelised banana, Greek yoghurt and honey. French toast always used to be a regular weekend treat for me. Full of protein and topped with fruit and yoghurt, it is actually a healthy breakfast, yet feels like a real indulgence! This version is made extra special with the addition of healthy lemon curd and fresh, seasonal berries! It is also important to use a quality gluten-free bread (or quality bread of choice if you can eat gluten). If you are vegan, simply add some ground chia or flax seeds to some almond/coconut/rice milk and let the mixture thicken to an ‘egg consistency’ before dipping your bread in. You can top the toast with whatever you please. The caramelised banana is a go-to and this lemon curd is scrumptious. The possibilities are endless!
