My day started rough with some battle wounds from the box jump (check my story haha)
So I'm going to end it well by sharing my delicious 3 cheese pasta bake with you!
I used @ lentil spirals because they're super high in fibre, tasty and gluten free for those who need it 😉
So this recipe is pretty easy, anyone can do it! And also it's mainly sauce because I loooove saucy pasta. So the sauce may serve about 4 normally 🤷♀️
125g lentil spirals
125g haloumi, thinly sliced
1 onion, diced
2 tsp minced garlic
1/2 can of chickpeas
1/2 jar passata
1 carrot grated
1 small zucchini grated
1 bunch of broccolini diced
1 bunch of basil, chopped
Handful of tasty cheese
50g of crumbled fetta
Preheat the oven to 180c
Cook the pasta according to the packet
Saute the onion and garlic in some @ olive oil on a medium heat until browning. Add all of the veg and saute. Add the passata, basil and chickpeas and cook until the passata begins to reduce.
While it reduces, cook the haloumi in a fry pan with a little olive oil and brown each side.
In a small deep dish pan stir through the pasta, sauce, haloumi and cheeses. Sprinkle with extra tasty cheese. Bake for 20 mins until the cheese is melted, hopefully golden. And devour 🍝
