SWEET POTATO NACHO FRIES 🙌🏼🍟
Sweet potatoes are in my top 5 favorite thing to eat! For a long time I struggled with ways to transform them from a side dish into a complete meal.
The answer is to load them up with ALL of the delicious, colorful, flavor packed fixings!
Toss on the spice, bake up the sweet potato spears, load them up with black beans, fresh veg, avocado, and smother them with a creamy cashew queso sauce that is TO DIE FOR...
or at least worth doubling & keeping on hand 🤣
—> set oven to 400 F, toss sweet potato spears in olive oil and spice mixture
1 tsp of each:
Spread spears on baking sheet & cook for approx. 30-35 minutes.
—> mix cashew queso sauce: in food processor place & blend up:
1/2 cup raw cashews
2 Tbsp tomato paste
1 tsp chili powder & paprika
3 Tbsp nutritional yeast
1/2 cup water
1 Tbsp lime juice
My bowl deets —> sweet potato spears on the bottom, top with black beans, white onion, avocado, and cilantro. Drizzled with the cashew queso sauce 🤤🤤
