last nights dinner was a Buddha bowl of everything I was craving and even more😻
It had: roasted sweet potato, roasted butternut squash, cauliflower, asparagus, green beans, parsnip and this DELICIOUS broad bean stir fry.
Basically sauté garlic, turmeric and smoked paprika for a few minutes, then add a red pepper and mushrooms (I think it’s so cool cause they go neon yellow haha) then add your broad beans. Cook for a few minutes then add beansprouts and black pepper. Once that’s cooked add spinach for a minute then serve 🤤
- Life is so beautiful. Do you really want to spend the rest of your beautiful life worrying about how many calories are in that apple and how much you weigh day in day out? Because I know I sure don’t. I want to spend the rest of my life laughing, learning, smiling, being giggly, making memories and living my best life. And the best way I can do that is to beat my eating disorder, prove each of its thoughts wrong and learn that I cannot life my life to its fullest if I’m ruled by a tantalising illness. Let’s recover because life is so beautiful 💛
