Featuring my very first #glutenfree recipe! 😃 I am excited to share with all of you a dish that has long been a favorite of mine pre, and post GF - Chicken Pot Pie! After having to go completely gluten free I worried I would never again enjoy this meal, but with @geefreefoods to the rescue, I can! To prevent a long story here, I'll just post the basics of my recipe. I will soon have a blog where I will list step by step directions if anyone would be interested? Gluten Free Chicken Pot Pie:
I start by filling my bowls with slightly heated peas & carrots, then top them off with boiled chicken breast that I have cut into cubes, followed by two ladles of gluten free gravy. This puff pastry dough by GeeFreeFoods should be defrosted prior to rolling out on a large cutting board and cut into circles sized with the circumference of your bowl, or a similar-sized lid for a pot, either works. Cover the pot pie filling with the thinly rolled dough and press a fork around the rim to make a traditional look. Finally, using a sharp kitchen knife, make a slit in the center of the pie in the shape of an 'X' to allow steam to escape. Baked at 375 for 25-30 minutes, the insides will be very hot when done, so allow proper cooling time. My bowls are by @williamssonoma , but you can use any oven-safe individual-sized bowl. For added ease, I place each individual bowl on a large baking sheet prior to baking.
