Got snowed in today because of all the snow we got...about a foot with some sleet and rain too. I'm definitely gonna be sore tomorrow from that heavy shoveling. ❄
It was a VERY productive day. It started with coffee and Bible time (church was canceled) and then shoveling. From there I made Chicken Noodle Soup, Curried Chicken with Couscous and Cauliflower...that will be for my lunches at work. I have hummus and veggies for a snack and also an apple. I love food prepping! #success 🍽
I got Sasha's meals prepped but I forgot a pic. She gets a roasted chicken, mixed veggies, rice and greek yogurt (yes, she's #spoiled 🤷♀️)
Then for dinner I made a Shrimp Stir-fry with Quinoa Fried "Rice." #getinmybelly 😋
Sometimes my rest day doesn't feel like a rest day and that's okay...I am fully prepared to be on point with my nutrition for the rest of the week. .

i was recently in Norway and the food was amazing. my favorite was this dish, Skagenröra, made with little shrimps. tired it today and though they serve it on bread, i used avocado, and it made enough for three servings, approximately $2 per serving. #lilfitgrl#getinmybelly
Hand down one of the best meals I've ever made. (If I do say so myself 😉.) Roasted cornish hen and Instant Pot green beans and potatoes. I have made hens in a really long time. Thanks to a 2-hour slow roast, the skin came out crispy while the meat was still juicy. It was all so perfect.
