Have your cake & eat it too cuz there's veggies in it! Chocolate zucchini bread. Rich, dark, black magic and a must try👍, it's that easy!
HOW TO MAKE IT
.5c cocoa powder (sub in some black cocoa powder)
1t bak soda
2 eggs, RT
.5 c melted oils: oil, 2 packets coconut oil (Trader Joes), and rest w/ butter
3/4c brown sugar
1.5-2c shredded zucchini
1c bitter choc pieces
1. Mix dry: flour, cocoa powder, baking soda, and sea salt.
2. Mix wet (lumpy is OK): eggs, melted butter, oil, vanilla extract, and brown sugar. Stir until smooth.
3. Mix wet & dry -don't overmix. Stir in the shredded zucchini & 3/4 chocolate until just mixed.
4. Fill a bread pan (line w/ parchment) and top w/ remaining choc & bake at 325. Sprinkle the remaining 1/4 cup of chocolate chips over the top of the bread. Mine took 30 min (and a loaf looked this is usually closet to 50. I felt it was slightly overcooked.
5. Let cool for 10 min.
