This is my favorite Gluten & Dairy free Blueberry "Cheesecake" recipe. It's the @ cookbooks - the second & third books, both labelled "Nourishing Meals". I doubled the filling recipe, and left out the blueberries to make the white layer, and after chilling it in the freezer for 20mins, I blended blueberries with the remaining filling and poured that on top for the blue layer. I wish I had artistic talent with a piping bag because you could do some beautiful designs on top with a blueberry coulis! I used maple syrup for the sweetener instead of honey.
