Adam’s “Eat Ya Veggies” Fried Rice (recipe below) 💕
2 Cups Basmati Rice
2 Brown Onions
4 cloves garlic
1 Red Chilli
1 head Cauliflower
1 bunch Gai Lan
3 tbsp Tamari
1 Chinese Five Spice
1 tbsp Extra Virgin Olive Oil
2 Cups Organic Vegetable Stock
1 Cup Water
Oven to 160 deg.
Chop cauliflower, add to bowl with Chinese Five Spice and EVOO. Place on tray and bake for 30 min.
Chop celery, carrot, onion and add to saucepan with 1 tbsp coconut oil.
Cook until onion colours nicely. Add rice, chilli and garlic. Stir for 1 min.
Add 2 Cups Vegetable Stock, 1 Cup Water, 2 tbsp Tamari, Pinch of salt and bring to boil. Once boiling, reduce heat to low and simmer for 14 min.
While Rice is cooking, chop Gai Lan and add 1 tbsp Coconut Oil to saucepan. When there’s 4 min to go, sauté Gai Lan with 1 tbsp Tamari and fry eggs (optional). Once rice is cooked, add Gai Lan and Cauliflower, mix and serve. Too with eggs and fresh parsley.
Feeds a huge family, or 1 person for a week 😝
