Finally made bean balls again 😄 along with hassleback potatoes, spinach gomae and a dill carrot salad that was supposed to have cucumber but I forgot 🙈😅 Was all so good! 😋 Using tahini and frozen spinach means that gomae is super quick to make aaaaand super quick to eat 😅
Let's look at the bean ball recipe (as promised!)
What you'll need:
🍠A 400g tin of butterbeans
🍠 Two medium sweet potatoes (between 200g-300g in total)
🍠Biggest clove of garlic ever, or two small cloves 😆
🍠1tsp tahini or olive oil, you can omit this if you want it oil-free
🍠1tsp Japanese curry powder
🍠1tsp smoked paprika
🍠Pinch of salt & pepper
🍠Dash of lemon juice
How to make it:
🍴Open the tin of beans, rinse and mash in a large bowl. I use a fork to mash with, but you can use a potato masher or whatever works for you.
🍴Cut the sweet potato 🍠 into small cubes, and steam either in a microwave steamer for about 5mins or over a pan of hot water until soft.
🍴 Preheat oven to 200°C.
🍴Mash sweet potato into beans.
🍴Add oil or tahini, if using, to the bowl, as well as all the spices, seasonings, garlic and lemon juice.
🍴Mix all ingredients well together until an evenly distributed doughy texture forms.
🍴The mixture can be sticky, so you can form the falafel balls with your hands if you don't mind getting messy. You can also use a spoon or cling film if you have it to form the balls. Reuse it if possible, though! It makes between 6 and 8 balls.
🍴Bake in the oven for about 20mins, all ovens are different so best to check after about 10mins and see how you go.
