When your weekly schedule looks so filled up that you even doubt there’ll be an hour free to fit dinner in. That’s exactly how I’ve been doing lately; trying to fit as much as I can in the schedule knowing that Christmas is on it’s way and all the experiments need to be planned very wisely (being away from the lab for two weeks is no good unless planned well). I feel ready stressed; I’m under pressure of getting more results by the end of the yr and it’s not even my exaggerating. Being a PhD student at Oxford is as great and lovely as it is also hard and stressful...
Nevertheless, I’ve managed to put up something nourishing last night (at 9 o’clock - great!). Half a cup of @ Good Health Wholewheat Penne in veggie and egg sauce (I fried in coconut oil one egg, beans, peas, red pepper, carrots, aubergine, onion, garlic and parsley; added some home roasted pumpkin seeds and @ sunflower seeds, @ soya, and wild rocket). Made my evening cozy and complete ♥️
