We get ours from our weekly shipment of half a pig from @. 🐖 While jokbal is typically braised in spices and sliced when served, we dice ours after a lengthy brine in an aromatic salt bath. We slow roast the pork for at least 3 hours until the meat is soft and tender, and the skin is triple fried to add a crispy texture to every bite. All in all, the entire process to make this takes us 5 days, a true labor of love.
Enjoy it wrapped in salted napa cabbage, and you can choose to dip it in soy-based sauce or a salted shrimp condiment. If you want an extra kick, top it with a crunchy and lightly spicy radish kimchi.
