Everyone always asks me what can you do with the olive brine? The options are endless! Add a little more DAFNI Olive Oil, herb of your choice, pepper and garlic (depending on the use) and you have dressing in a jar! Use to dip, toss in salads, pasta, marinade, roast meats, fish, veggies...sauté your lamb chops! I love using the DAFNI Green Olive brine with fish. Below is a recipe I used for cod, but the same deal goes for a wide variety of fish you broil/bake, just adjust the temp and time. I’m Greek and therefore don’t measure so forgot to get the numbers down, but you cooks will figure it out Greek style! 😉🇬🇷 Greek Green Olive Broiled Cod -1 lb wild cod
Marinate cod overnight if you have time, but can apply before cooking as well.
Marinade mixture: -8-10 DAFNI Green Olives -Atlas or Cracked -Green Olive brine, enough to cover fish 1/4- 1/2 way -DAFNI EVOO, drizzle extra in the brine to thicken marinade -DAFNI Wild Greek Oregano to taste -Wild Greek thyme to taste -fresh chopped garlic 4-6 cloves or to taste -fresh ground pepper to taste
You don’t need to add salt because the olive brine is salty enough! Combine the ingredients and let the fish marinade in it for as long as you choose.
Put broiler on high and cook fish in its marinade for 10-12 minutes until flakey. It’s that easy!
