I was lucky enough to find green peppers on sale 5/$2.50 which I thought was a good deal. They were pretty ripe and needed used up. So I made another one of my daughter’s favorites, stuffed pepper soup! It’s delicious, makes a ton, and all the ingredients are pretty affordable. There’s a lot of different recipes for stuffed pepper soup but this is how I make mine.
Brown 1 lb ground meat (I used turkey) with 1 small to medium sized onion and 2 cloves chopped garlic. Add one box beef broth, one beef bullion cube, 1 can crushed tomatoes, 1 can diced tomatoes (or fresh if you’re fancy😂), 3-5 green bell peppers (chopped), and spices. I do onion powder, salt, pepper, garlic powder, sugar, paprika to taste. Simmer until peppers get soft and then add 3/4 cup of uncooked rice and continue to simmer until rice is cooked. It made enough to fill a freezer bag plus a Tupperware container for the fridge. My daughter and I have been living off of this since Friday after noon and still have enough in our Tupperware container for lunch today and maybe tomorrow. #momsohard #recipes #frugalliving
