Tonight's dinner: Shrimp fried cauliflower rice! OMG this is so good! Same amazing flavor without the side of guilt! #eatinggood #goodfood #goodeats #foodporn #healthyrecipes #healthylife #healthylifestyle #eattolive #loveyourveggies #seafood #seafoodlover #pescatarianrecipes #sodelicious #myrecipes #giveitatry #tastyfood #tasty #youwillloveit #guiltfreefood #pescatarian See recipe below: Ingredients: - 1 lb of shrimp (I used a frozen bag of medium size shrimp that were pre cooked but you can use fresh) - 1 12oz bag of frozen riced cauliflower - 2 eggs (3 if you want more) - 1/4 to 1/2 cup of frozen peas (you can use more or less depending how much veggies you want) - 1/4 to 1/2 cup of frozen diced carrots - 1/4 of an onion diced - 1 1/2 tblspn of low sodium soy sauce - sesame seed oil - red pepper flakes (optional...I like a bit of a kick) - pink himalayan salt & pepper Preparation: - thaw shrimp and make sure you pat dry them (set aside) - heat abour 1 tblspn of sesame seed oil in a large deep pan or wok - add shrimp but dont overcrowd pan. Sprinkle a little salt and pepper. Cook for about 3 minutes. Take out of pan and set aside. - heat a little more oil and scramble the eggs. Cook well and set aside. - heat a little bit more oil and cook onions for about 3-4 minutes or until they are cooked through and start to caramalize slighty. - add the bag of cauliflower. Cook for about 4 minutes stirring everything together. - add the peas and carrots and continue to cook and stir everything together for about another 4 minutes. - then add the shrimp and eggs back in the pan. - add the soy sauce to taste. I start with about a tblspn. (You don't want to over do it) - sprinkle some red pepper flakes. - mix everything together and cook on medium heat for about another 5 minutes. - serve & enjoy!!! This makes abour 2-4 servings depending if you are eating it on it's own or as a side.

My low carb buns made a nice bed for mango chutney topped with soft boiled eggs. There's a layer of cream cheese on the toasted bun too. Perfect for breakfast or just about any time of the day. This homemade mango chutney of mine is savory, tangy, spicy and it actually goes very well with eggs. I love how the egg yolks oozes out and to get this consistency, lower the eggs into vigorously simmering water for exactly 5 1/2 minutes. Run under cold water then peel gently. Just assemble everything and sprinkle with salt and black pepper. Garnish with cut fresh chilies and spring onions. Once cooked I added a tub of passata, @knorruk beef stockpot and paprika. Simmer and then remove from the heat when the tagliatelle pasta has five minutes left. . . After a few minutes add a tub of quark to make it creamy 😋 ..** top tip - take quark out the fridge as you start cooking, that way it’s at room temp when you add it to your sauce ** .
