•|The Plan|• Breakfast from The Shred program. I prepped on Sunday afternoon and have enough for every morning at work this week. My plan is to keep it as simple as possible. Choose foods I enjoy, I’m not into forcing myself to eat food I don’t like the taste of 😁 I’m also ok to eat the same thing every day, that’s not for everyone but it doesn’t bother me. Next week I’ll be doing a different breakfast but this week I’ve loved the overnight oats filled with seeds and spices. Going to enjoy trying some new recipes over the next few weeks! During the week I like to cook meals that are super easy and quick! I don’t have time to make intricate fancy things so I opt for buying LOTS of colourful vegetables (sources of PREBIOTICS) that I can easily chop up and toss through a stir fry. I like to add lots of herbs and spices like fresh ginger, chili, garlic and turmeric as well as nuts, seeds and udon noodles. Last night I posted an Instagram story asking you if you ate more than or less than 5 veggies per day. I was a little shocked because I didn’t expect that 30% of you would vote for less than 5!!! I guess I really am in my own bubble 🤣. Then I did another survey asking you what the biggest barriers were to getting your veggies in for the day, so far the most common responses have been: lack of time, not the best cook, affordability and availability. This survey was so helpful because now I know how I can help you guys out more! By providing easy recipe, with easy to access produce, that’s cheap and delicious! . Enter my gut lovin Crispy Fried Rice from GUTALICIOUS, this recipe has been my go-to for a lot of our main meals here in Bali. It’s the kind of dish you can create in even the most basic of kitchens. You seriously only need a chopping board, knife, large bowl, stove top/ burner, frying pan, plate and a spoon. It’s also great because it contains loads of veggies (more than 5 boo yeah) in it and you can add in whatever veggies you prefer or have access to + it can be made in 20-25 mins from start to finish! Finished the “GUT” book by Giulia Enders on the plane to Melbourne 2 weeks ago and thought it was super interesting. A new and fun perspective on the gut and its intelligence. Found it fun to get to know how our digestive system really works and how complex and wise our gut really is. There are some really useful tips on various bacteria in the gut (not all of them are bad!), great explanation on allergies, gluten and lactose sensitivities, fun facts about faeces 😱💩, vomiting, constipation, probiotics & prebiotics, gut flora and other cool things! There is still so much to learn about this subject but I’m getting closer step by step. . Interestingly, I was never into nutrition and the digestive system. I always found it too complicated with all the calories, carbohydrates, proteins and other things I still don’t really understand. As a child I was diagnosed with chronic gastritis (I would guess 80% of Eastern European children are) and I remember lying in hospitals with my sister constantly to fix this issue. I still don’t know what the real problem was... I even had endoscopy done when I was around 8-9. Terrifying experience. Never again. @giuliaenders So the only reason I am into nutrition and digestive system now is my adult acne problem. I’m still battling with to this day, being almost 30 😔😢🤐 I know the solution is out there and the issue is in the digestive system. In fact, I was off sugar for 2 weeks now and it feels great. My #nosugar experiment was compromised with lots of wine and ocassional cigarettes smoking while in Melbourne 🤦🏼‍♀️🤷‍♀️🙇‍♀️ But I’m back on track now. Self-discipline is a b*tch. . CURRENT; Focusing on just feeling great - Honestly feeling just amazing is underrated. I can’t remember the last time I felt super healthy, digestion wise or mentally. Sure my body physically is doing alright, but did you know 90% of serotonin (happy hormone) is produced in your gut??? I am a person recovering from a chronic and painful back injury. And when I say recovering, for the longest time I've just been existing and identifying as the person who can not do most of the things because of pain. I've swallowed thousands of pills over the last 7 years to the detriment of my spiritual, emotional, mental and physical health. Many of the prescriptions contain medicine that fuelled painful symptoms and created many side effects. After several months slowly removing types and quantities of medication I am now medication free, with exception of a magnesium supplement and the occasional paracetamol (which I would like to be able to cope without). I still have a long road ahead of me. My body's ability to regulate inflammatory response is shot, my gut health has been severely compromised through years of abusive behaviour in search of being pain free. Not to mention that my back injury is not fully resolved. Today I went through my medicine cupboard and bagged everything left over, which was enough for about 6 weeks and I returned it to the pharmacist for safe disposal. So after a weekend of buns (because buns are just easier sometimes and let’s be honest, a weekend of salad & chicken wrapped in bread is not going to ruin my life! Once again I winged the recipe a bit but I will start writing them down and sharing if there’s enough interest!! 🤷🏼‍♀️ maybe I should be recording them for my future cookbook 😂 Anyway, in a nutshell I’ve used roughly 1 cup spelt flour, 1 apple, 2 carrots, 1/2 cup coconut, 1/2 cup milk kefir (sub Greek yoghurt), 1/3 cup coconut oil, 1 tsp bicarbonate soda or baking powder, 1/3 cup oats, 1 tsp cinnamon, 1 egg to yield 10 muffins - grate carrots and apple, dump the rest in, blitz without over mixing (I over mixed mine) poke in a blueberry or two and cook in 180C got 23-25 mins. Warning: the mixture will look thicker than you would normally see. Would be beautiful with some walnuts if you have any and bubs is ok with them 😀 also top with a blob of Greek yoghurt if your heart (and his or hers) so desires.

Ah...ginger Chimes...I used to live on these. TODAY I am 4 months in to my #plexusjourney out of the forest. I have more energy (which also means I’m exercising more I RAN over 3 miles tonigh 🏃🏽‍♀️😮), I have a much less sensitive stomach, I sleep 💤 so much better, and I haven’t got that nasty 😷 that’s going around(🤞).
