I love eggs in the morning because they are protein-packed, great after a morning workout, and the whole thing only has 242 calories! _ 242 calories / 15g Protein / 14g Fat / 14g Carbs Ingredients: 2 🥚 eggs, 1 tsp your choice of fat (I used olive oil), 4 🌶 mini bell peppers, 3 🍅 mini tomatoes, 1/4 cup 🌱Italian parsley _ To make this: Crack the eggs into a bowl and whisk. Heat your pan to medium and once hot, add your choice of fat. Pour the egg mixture into the pan until it’s a circular shape. When the egg begins to get more solid, add your peppers, tomatoes, and parsley to one side. Fold the omelette in half and flip it over. If there were two things Tom never wanted in a girlfriend it’s a girl that talks about poo and a girl that talks about periods. Well it’s safe to say Tom drew the real f***ing unlucky card with that one... firstly I have endometriosis so I talk about my period, well period and secondly I have a bowel disease so well I’ll talk to anyone who will listen about my poo (heck I don’t even care if you’re listening or not I’ll be talking about it anyway) and well today I have my period. And boy oh boy is it a bloody good one (pun was actually not intended, but I am sure we can all agree it was an ace one) so much so I am going to drop a small fortune to finally see Dr Karen Coates next week because my god if this situation doesn’t get any better I’m looking into full uterus removal... and look I’ve tried ALLL of the things! Not even the poo of the yak worked for this uterus. So for now until the appointment I will eat my weight in these cookies #noragrets plus I’m a ‘one size fits all’ kinda gal ... and it’s winter and track pants or tights don’t hold me back! Ps I think we can all agree Tom is going to DIE when he reads this, sorry Tom... unfollow me it’s ok I understand. I spent my Sunday with the co-owners of Redox Health & Performance. How good it felt to leave my phone behind and go for a 2-hour walk whilst enjoying lots of sunshine, ocean, trees, wildlife and grounding. When I’m connected to nature it feels so easy to be mindful. When I have days like this, it reminds me just how disconnected we’ve become as a society. We are nature deficient. There’s no wonder we are seeing such an increase in poor physical and mental health. My focus for several years has been on my health and self-care and, this year, I am choosing to take it up a notch. I know what it’s like to have poor physical and mental health and to feel the complete opposite of vital - anxious, stressed, depressed, burnt out, lethargic, flat, emotionally exhausted, irritable, overwhelmed and tired. This is why I am making my health and wellbeing a priority. This certainly doesn’t have to mean bubble baths and pedicures every day. For me, it might look like going to bed a little earlier, switching off work emails in the evenings, having a tech free day, going for a walk, meditating more, getting extra sunshine, or making myself a nourishing meal. Time to reveal the results of my 7 day x30 varieties of fruit and veg CHALLENGE! And pleased to report I managed 33 different varieties, averaging 9 portions per day. Suffice to say, I think summer eating helps enormously because my typical lunchtime salad will invariably have upwards of 5 or 6 salad/veg varieties, so repeating this exercise in the winter may be more of a challenge. When it’s so hot outside, cooling vegetables make a difference to our internal balance of heat. We made some kombu (kelp) salad. It’s one of our ingredients in our vegan broth. Once we take the kombu out of our vegan broth, we wash it cold water and slice it up very thinly. We make a tamari based sauce with water and coconut blossom nectar by bring it to a boil and simmering to reduce the water. Pour it into a bowl of thinly sliced kelp and sprinkle with toasted sesame seeds. It’s so 😋 and came be had with cold noodles or mixed with rice and made into a rice ball.
