So... I saved a piece of the gluten-free gingerbread cake that I made for the boys with the organic butter/powdered sugar frosting. Put it in the freezer. For later. Just in case. (Just in case of what, I have no idea: I have yet to encounter a Gingerbread Cake emergency in my entire 49 years on this planet.) Well, so, I'm sorry to say: It's gone. This is my version of #transformationtuesday :) . Some of you have seen this pic before, but I wanted to share again in the hopes of encouraging some of my new friends here. . The pic on the left is me in the depths of my autoimmune disease (Hashimoto's), the right is after I changed my diet and made some significant lifestyle changes. . I can still remember how I felt in both pictures. . The right felt like I had lost my life. I honestly felt like I was edging closer to death at a faster pace. Each day was full of exhaustion, depression, stomach issues, and physical aches and pains. . The day I took the pic on the right I remember sitting down and thinking, "Wait a minute! I feel like myself again!" . It was a delightful surprise to have that moment of quiet to check in and see how things had changed. . Most of this was done by eating a real foods diet (leaning toward the autoimmune protocol) and eliminating gluten. But, diet could only get me so far. . Reducing stress, improving sleep, and changing my exercise habits were also crucial. . This have improved so much and I am thankful. . But that being said, I don't want to give you the idea that every day is rosy! If I let stress, sleep, and diet get off track too far, I can easily slide backwards. . In fact, I was reminded recently how a stressful event (like moving) can trigger a flare up. That happened when we moved from California to Missouri and it took quite a while to recover from it. But recovery is possible, and way back in the first picture, it didn't feel like it was. . If you are struggling with your health, I want to encourage you to hang in there. I know it gets tiring trying to find answers. And it can get expensive paying for doctors, supplements, and treatments! Keep doing the best you can. . Raw taco salad! Mixed greens, minced mushrooms/peppers/carrots/cauliflower/sun dried tomatoes, cabbage and brussels sprouts slaw, and pico de gallo. Would be extra tasty with sunflower sour cream. Not doing nuts or seeds for the remainder of this 28-day Raw January. We found ourselves reaching for them too often because of their ease and calorie density. So, we’re sticking only to fruits and vegetables now. 😊 I can’t believe it’s already been 13 days we’ve been Raw. That’s nearly 2 weeks! After workout recovery. Day 2 of #80dayobsession is done ✅! 60 minutes of working exclusively on your booty. OUCH. That burned... One thing I love about this program is that it focuses on fueling your body instead of depriving it. The portion containers are really helpful. First time making my own #elderberry I may have let it simmer too long trying to get kids to bed. It's a little strong but the kids don't even notice it mixed with a little 100% grape juice! I have #hashimotos and especially after having a #baby and #breastfeeding I find it extremely difficult to keep my levels normal. I'm working on #guthealth and #eatingbetter to #feelbetter Now let's hope this helps with the cold my kids keep passing back and forth

My favourite coconut oil 💛This particular brand of oil doesn't actually taste like coconut. I prefer it for frying meat and veggies for a neutral flavour. I wasn’t trying to be uber mysterious in yesterday’s post, I just am not sure what is going on yet 🤷🏼‍♀️. I figured I’d share though since I know many of you deal with the same problems! I was disagnosed with Hashimoto’s (autoimmune thyroid disease) five years ago and it appears that I may also have Celiacs. I’m not sure of anything right now, all I know is that my insides are malnourished and nutrients aren’t being absorbed correctly. My doctor said that she’s amazed I can stand without fainting. I told her I was a badass female and that’s why 😉 It could also all stem from my anemia so we have a game plan going forward. High doses of supplements for three months to help build my storage and then we will regroup and see what catches. . It’s stupid frustrating to work so hard to take care of yourself and it feels like you aren’t getting anywhere but I know that isn’t true. Caring about what I put in my body and exercising are great habits and who knows where my health would be if I hadn’t. . The best part? I get to eat gluten for a while 😊 apparently they can’t test for Celiacs unless it’s in your system so woooo! First stop, pizza! (Pizza pictured is from Rock Bottom Brewery, btw) . Nothing major, just frustrating...thyroid has gone up (really hoped it would have stabilised) and weight has gone down (needed it to stay up). Just as many of you will have been given medical advice to lose weight, my mission is to increase my BMI as it is “borderline” and my clinic needs BMI to be comfortably above 18.5- it seems equally as tough though, for me. My endocrinologist already posted 🐌 💌 my results (you may ask what happened to that super fast messaging service called email?) so I don’t know exact TSH just know to increase dosage as trying to keep it between 0-2.5. It’s a constant frustrating juggling 🤹‍♂️ act, seemingly with no positive outcome! It’s another snow day here, so the kids are all home and Jarrod is back to work. Just completed day two of #3weekyogaretreat. I have had a mostly symptom free day so far, and if you don’t have to hear me complain regularly 😉, know that this is VERY rare and makes me so happy. I’m really going all out right now by sharing my weight. My biggest fear has always been someone knowing how much I weigh. Honestly I’m not sure why. Like what’s the worst that could happen?? You think I’m fat?! 😂 Yeah, me too. 😉 Because I am, and well that number changes nothing. I’m still ME. ☺️ So those of you who really know me know that prior to all of this crap I deal with, I was in the gym like crazy. I meal prepped. I took supplements. But nothing changed. Fast forward to Jan 2015. I started following a zero carb, meat/egg/cheese diet and I started losing. I went from 280 to 255. I was 255 the day they removed the first half of my thyroid. Fast forward to Jan 19th, 2017...I weighed in at 291. I was miserable. And angry at my body. I managed to lose 10lbs between then and September but it was SO difficult. I’ve lost 12 more pounds since September after eliminating nightshades, dairy and eggs. That was without effort, just from removing them (another post for why). See, without my thyroid, nothing has been the same. Add in fibromyalgia, Hashimoto’s and PCOS...yeah, talk about a struggle. It feels like every odd is against me. But I never give up. I keep readjusting my plan. I continue to research. I continue to be my biggest advocate at every dr appt. I read...A LOT. I can’t exercise yet because, oh I forgot to mention...I have coronary heart disease. I had a stent put in my main artery in September and because recently I’ve had pain, I’m not allowed to exercise until they run tests. Anyway, this is just the medical stuff. Last night at the gym KICKED MY ASS. my stomach hurts so bad it's hard to sit up. I know it can be hard when you get a new diagnosis or receive test results aren't what you expected. But here's the thing... you and I both know that you are stronger than this disease. And something like that is not going to stop you. You are a warrior. You have an amazing community behind you. - I received test results last week that show that my thyroid is getting worse despite medication. Am I frustrated? Of course! Partly because I have to change my meds and wait another 8 weeks to see if it works. But also because all I want is to feel better. - Have you had any setbacks in your illness or treatment lately? Feel free to share and get help in shaking off the stress and disappointment. Sometimes sharing with someone that gets it helps as much as the treatment.

I am doing another trial with the #ketodiet to see if being in #ketosis helps my emotional well being and energy. I love teas, but making multiple cups in a day is hard, so I make a huge mason jar with 3 different teas in the morning. I usually drink it all in the morning, but sometimes have it throughout the day. I add #xctoil to get my body using fat right away. And I love adding a splash of pomegranate juice for flavoring. This helps me with #intermittentfasting and I don’t get hungry until 11/12 at least. I do have to time my meals because I have to take thyroid medication on an empty stomach at 2-3pm, so ideally, eating at 11 is best for me right now. January is Thyroid Awareness Month. Thyroid hormones affect and control all your organs. If your thyroid isn't functioning well it will affect the rest of your organs. You may think you're only suffering from PCOS or fibromyalgia, or some other ailment, but the root cause could very well be your thyroid. Find a good doctor. One who knows about thyroid disease. One who is willing to do a full blood panel and not just go by your TSH. One who is willing to look past the "normal level ranges" and get you to a level that is best for YOU! My doctor knows that even though my levels were in the higher "normal" range it was to high for me. It took 2 years of finding the right dosages to get me from my TSH high of 4.3 to 1.6 and I felt great! So great that when my prescription ran out I didn't ask for it to be renewed. A year later I began to notice it was acting up again. I got tested in August and it had gone up to 3.7. I got back on the meds for 2 1/2 -3 months before my specific dosage of medication was on back order and I ran out in November. I just saw my doctor yesterday to find out if it was back in stock and if not what else to do. She retested staying those results would determine if I go on the lower dose as just one pill or will need to take 1 1/2 to get me back to my normal dose. She called me today to say my TSH is up to 6.7! 😯😮Not something you want to hear. That explains the heightened aggravation in other issues I've been having concerning PCOS and fibromyalgia like symptoms. Now it's back in the meds with more testing in 8 weeks and going on an anti-inflammatory diet. I don't do will help with food restrictions so this is going to be very difficult. Feel free to slap any food out of my hands that you know I should not be eating!😉 Maintaining a function thyroid is an intricate Balancing Act. That requires lots of testing and retesting and medication that you will be on for the rest of your life. Day one! YOUR NEW TOMORROW STARTS TODAY! No more coffee for me. My day now starts with some herbal detox tea and a little Fizz! Calories saved per month, 11,760. Thats 420 calories for 2 cups a day.
