I had so many asking for the recipe, so here it is! Elderberry is amazing at boosting the immune system, preventing the flu (there are actual studies on it), and shortening the duration of the flu if you DO catch it. I’ve been giving it to my kids for quite a few years, but this year I decided to turn them into gummies because one, it’s a quicker way than having to get out a measuring spoon every time and two, gelatin is amazing for their gut lining! Win.
Elderberry Syrup Gummies 🍇
2/3 cup dried elderberries
3 cups filtered water
1 tsp ground cinnamon
1/2 tsp fresh grated ginger
1 cup local raw honey
2/3 cup raw apple cider vinegar
Bring berries, spices and water in a sauce pot to a low boil and then simmer stirring occasionally until liquid is reduced by about a third.
Strain liquid into bowl and discard/compost elderberries.
Let it cool till no longer hot to the touch. Then add in honey and apple cider vinegar. Mix well
Pour into glass jar and refrigerate for up to 3 months or move onto next step for gummies! Makes about a pint.
1/4 cup filtered water
2 tablespoons + 1tsp grass fed gelatin (I use @)
1/2 cup elderberry syrup
Put water in pan and sprinkle gelatin on top. Turn burner on low and whisk until melted. You might have small clumps, but that’s okay. Don’t heat it too much! Add elderberry syrup to the pan and stir till mixed together. Strain the mixture into glass bowl and syringe into gummy molds that are laid out on a cookie sheet! Put in refrigerator for about 30 minutes, then pop out of the molds and store in the fridge for 1-2 months.
Easiest way to do all of this is to make elderberry syrup ahead of time and store it. Then when you want to make gummies, it takes about 15 minutes to do it all!
