Hey lovelies💕Sharing yet another banana bread recipe with you with no added oil or sugar. Just PLANTBASED GOODNESS 🙏🌱
🍌🍞 BANANA BREAD vol.987654321 😅 with Cacao Nibs 😋
2 chia eggs (2 Tbsp ground chia seeds + 6 Tbsp water)
4 medium ripe bananas + 1 on top!
3 cup rolled oats (DIVIDED!)
1/2 cup cacao nibs
1 cup walnuts
1/4 cup (80g) cashew butter
1 Tbsp apple cider vinegar
1/2 tsp baking soda
2 Tbsp baking powder
1 tsp vanilla extract
1/2 tsp salt
1/2 cup plant milk/ water
▪Preheat your oven to 180°C.
▪In a small bowl, combine the ground chia seeds and water, stir and set aside for 10 minutes.
▪Add 2 1/2 cups of the rolled oats into a blender/food processor and blend until they form a fine flour.
▪Place the oat flour into a medium sized bowl and add the coconut sugar, baking powder, remaining 1/2 cup of your oats, and salt. Mix well.
▪In a separate large bowl, mash 4 ripe bananas until they form a runny texture.
▪Add the tahini, apple cider vinegar, vanilla and your chia "egg" to the bowl. Mix well.
▪Slowly incorporate the dry mixture into the wet, stirring well until no clumps remain.
▪Pour the batter into a parchment paper-lined bread pan, smooth the top with a spoon. ▪Layer the last banana on top, slightly push down.
▪Bake at for 45-55 minutes, or until the top is golden brown, and a toothpick comes out clean.
▪Remove from the oven & let cool for 10 minutes in the pan, then remove from the pan & allow to cool completely before slicing.
▪Store in a container at room temperature.
