Trying a new breakfast casserole recipe this week. I forgot to grab some breakfast meat so I subbed in some cottage cheese instead to keep up the protein. To be honest, I’ve never cooked with cottage cheese so it could be a complete disaster. You’ll have to check back tomorrow morning for the verdict! ..

890g (about two medium) yams, sliced
350g (about 4 cups) broccoli, chopped
200g (about one large) sweet onion, thinly sliced
350g (about two medium) zucchini, diced
1 fresh jalapeño, finely diced
540g egg whites
7 large eggs
1/2c nutritional yeast
2c 2% cottage cheese
Salt and pepper to taste
Line 9x12 baking sheet with sweet potato slices and broccoli, bake at 425 for 20 minutes. Meanwhile, cook onions covered on low heat to caramelize. Combine eggs, nutritional yeast, and cottage cheese in large bowl, whisking to combine. Remove baking dish from oven, sprinkle with zucchini, peppers, and top with egg mixture. Return dish to oven and bake for additional 30-35 minutes or until cooked through and not jiggly. Enjoy!
