As a qualified Nutritionist I take a lot of care with the ingredients I choose to bake with. I just cannot buy a lot of the products I see in cake decorating shops after looking at the ingredients list. They're full of unnecessarily nasty ingredients that I won't work with or give to my customers. Quick and easy butter chickpea bowl served with some brown and wild rice and some chopped tomato, cucumber and red onion salad on the side. Here’s the recipe: (Serves 6) Ingredients * 3 tins of chickpeas drained * 2 tins of chopped tomatoes * 1 cup of tomato sauce * 2 red onions chopped * 3 cloves garlic, minced * 3 tsp garam masala * 1 tsp cumin, * 1/2 tsp cinnamon * Thumb sized piece fresh ginger minced * 1/4-1/2 tsp cayenne pepper * 2 tbsp vegetable stock powder Instructions Place all the ingredients in a medium sized pot, bring to the boil and allow to simmer for 15-20 minutes until heated through. Thai Squash Curry - The ultimate weeknight dinner. It’s creamy, spicy, sweet and comforting. Done in 30 minutes ❤️ 😋 Hope you give this recipe a try ✅ . ✏️ What you need * 4 cup butternut squash, cut into large chunks * 2 tbs. vegetable oil * 1 small yellow onion, cut into large chunks * 1 red bell pepper, seeded and cut into 1-inch (2.5-cm) pieces * Salt and pepper * 2 1/2 tbs yellow or red curry paste * 1 can (13 oz) unsweetened coconut milk * 1 cup low-sodium vegetable broth * 1/4 cup fresh basil leaves * 1/4 cup chopped cilantro . ✏️ How to make this 1. Bring a large pot of generously salted water to a boil over high heat. Add squash and cook until soft but not completely cooked, about 5 minutes. Drain well and set aside.
. 2. In a heavy saucepan over medium-high heat, warm vegetable oil. Add onion and bell pepper, season with salt and pepper, sauté, stirring occasionally, until soft, about 6 minutes.
. 3. Add cooked squash and curry paste, stir until vegetables are well coated with curry paste, and cook for 2 minutes longer.
. 4. Add coconut milk and vegetable broth and bring to a boil. Reduce the heat to low and simmer until the squash is fork-tender but still holds its shape, about 15 minutes. Season to taste with salt and pepper. Ladle into serving bowl, top with fresh basil leaves and cilantro. Serves 4 to 6. .
