Parmesan breaded chicken tenders with Pesto Ricotta Pasta🍗🍝
For the chicken🍗:
•16oz chicken tenderloins
•40g grated Parmesan cheese
1️⃣Mix the breadcrumbs and grated Parmesan along with sea salt, pepper, Mrs. Dash Garlic & Herb seasoning, Mrs. Dash Onion & Herb seasoning, onion powder, garlic powder, thyme, and oregano.
2️⃣Dip chicken tender in egg, then in breading. Do for all the chicken tenderloins.
3️⃣Cook in a pan spray with non-stick spray on high heat until cooked through, alternating sides. Spray with more non-stick spray throughout cooking on each side
For the pasta:
•8oz Banza chickpea pasta •124g low fat ricotta cheese
•60g pesto •200g grape tomatoes (cut in half)
•50g fresh spinach
1️⃣Cook pasta (follow box directions)
2️⃣While pasta is draining, spray the same pot used to cook pasta with non-stick spray, add grape tomatoes and spinach, sauté for about 5 minutes on medium-high heat
3️⃣Mix your ricotta cheese and pesto in a separate bowl
4️⃣Add pasta back to pot with your sautéed tomatoes and spinach, then add your pesto/ricotta mixture, stir and lower heat to low heat
5️⃣Serve with the cooked breaded chicken tenders!
