Homemade Gingerbread Paleo Granola. Ingredients: 1 cup almonds 1 cup pecans 2/3 cup pepitas 1/2 cup coconut flakes 1 tsp cinnamon 1/2 tsp ground ginger 1/2 tsp salt Pinch of ground cloves 1/3 cup maple syrup 1/4 cup coconut oil 2 tbsp molasses 1 tsp vanilla extract Instructions: 1. Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper. Add the almonds, pecans, and pepitas into a food processor and pulse to break the mixture into smaller pieces. 2. In a large microwave-safe bowl, melt the maple syrup, coconut oil, molasses, & vanilla together for 45 seconds. Remove from the microwave, add in the nut mixture from the food processor, & stir gently. Add the cinnamon, ginger, salt, & cloves. Stir well to combine. 3. Transfer the granola mixture to the lined baking sheet & spread it out in an even layer. Bake for 20-25 minutes until golden. Remove from the oven and let cool completely. Break into chunks & store in an airtight container or resealable bag for up to a week.

I spent the day with my boyfriends mother today helping her make up some soft meals because she just had some teeth removed. She is totally #blind so I helped her make tons of chia seed pudding she can just go to the fridge and grab! We made 7 different flavors. Raspberry cream cheese, pumpkin, blueberry, apple, orange mango and carrot, strawberry beet, chocolate banana!!! Another relatively quick (from what I can remember) syn free dinner which is also perfect for anyone that wants a dinner that doesn’t contain any meat products. This is called spicy mixed bean jackets and I added my Hex a cheese (no surprise there) and a speedy side salad. Cooking for 1 person can be difficult. Let’s face it - eating the same meal all week is boring. I had tons of turkey meat but didn’t want to make 10 servings of chili. So, I split the meat - half went to chili, half to spaghetti sauce. I froze this sauce until I finished all the chili, heated it up on the stove & served it over whole-grain noodles & raw spinach for the perfect meal. Getting creative in the kitchen & thinking ahead will allow you to stretch your ingredients. This saves $$, keeps you on track, & reduces food waste 🌍 Chili recipe is two posts back if you’re up for tackling both in the same day like I did! •• ——————————————————— - 3/4lb lean ground turkey - 1/2 cup diced sweet onion - 1 can crushed tomatoes - 2 tbsp minced garlic - 1 tbsp coconut oil - 2 tbsp coconut sugar - s + p to taste 1. Sauté onions and garlic in coconut oil on med. for about 2-3 min, until fragrant. 2. Add seasoned turkey meat to pan. Cook until grayed/browned, about 7-9 min. 3. Add can crushed tomatoes and coconut sugar. Let simmer together for about 5-7 min. 4. Freeze or serve immediately! 🍝

With all of this in mind, I made these delicious Gut-Loving Tofu Fritter Burgers with @kelloggsaus All Bran, because its been proven (by me) that breakfast cereal tastes 95% better at dinner time😜 . ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients: ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 150g extra firm tofu ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 2 Tbs @Kelloggsaus All Bran ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 3 finely sliced spring onions ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 2 Tbsp wholemeal flour ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1 tsp grated garlic ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1 tbsp soy sauce ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Rocket, tomato, beetroot, kimchi, Greek yoghurt and bread rolls to serve. . ⠀⠀⠀⠀⠀⠀⠀⠀ Method: ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1. In a large bowl mash tofu into small crumbs, then add cereal, flour, spring onions, garlic, soy sauce and mix well. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 2. Gently form the tofu mixture into two equal patties ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 3. Dates are rich in potassium which helps the body in building muscle and regulating blood pressure. Also, they contain vitamin A, which helps protecting the eyes, skin, and mucous membranes. Dates are an excellent source of iron too and this is important for making red blood cells and helping them carry oxygen to the cells of your body. Despite the large amount of sugar, dates are considered low on the glycemic index. This means that they don’t cause a huge spike in blood glucose after you eat them. This is especially important for people with type 2 diabetes.❤️ For me, this is the key on dates, the amount of sugar and still being a healthy ingredient (but remember! Too much of a good thing can be bad!). I love love loooove using dates on almost anything that I want to give a sweet twist to : smoothies, some desserts, energy bites, granolas and even brownies and pies! HOW TO MAKE YOUR BAGEL AS HEALTHY AS POSSIBLE: Part II #BaeGoals 👅 (check out my previous post for Part I 😎) * * For my spread, I included the following ingredients in order as they appear in my previous video 😍 —— ✨ ✨ 🥑 | half of an avocado, smashed with a fork 🧀| tofu cream cheese, with diced chives stirred in (can substitute nut butter, hummus, vegan or light cream cheese 👌🏾) 🌱| red onion, sliced 🍅 | tomato, sliced 🌱 | radish, sliced 🥒 | cucumber, sliced 🌿 | lettuce ✨ ✨ Of course, you can add or remove toppings as you wish!! Do you hate radishes, but adore smoked salmon? Are pickles an absolute no go? Bagels CAN be included in your rotation as long as you have the proper prep materials! ✨ ✨ ✨ Here are some ways you can reduce your caloric intake ———— * * - Size - Find a bagel that isn't as big as your head lol 💁🏾‍♀️ . If there is a ton of filler bread, remove it! * * - Type - Forgo the chocolate chips or sugary toppings. There's nothing nutritious here 🙃 * * - Schmear - Instead of full-fat cream cheese, opt for the light, vegan, or tofu cream cheese. You could even try HUMMUS or NUT BUTTERS as an alternative. These tweaks can reduce fat intake by almost 50% 😱* * - Toppings - Here's the most important step... ADD VEGGIES. Most people stick to just the classic cream cheese, when they can maximize their nutrition by adding some fresh veggies 🥑🍅🥒.* * * BAM 🤗😍 You could be SO.MUCH.CLOSER to your daily veggie intake... SO WAS I. Apparently some nutrients are fat soluble, meaning they need to be combined with fat in order to be utilized! 🤗🤗 🤗 In short, we love you avocados (I love you the most though).
