Day 22 of 365• Avocado Protein PB Balls 💪🥑🍫I have been a real food junkie these couple of days. I have been experimenting with a bunch of recipes to make new energy balls. Here is one of them that I created… Filled with healthy fats to curb that sweet tooth of yours and keep you fill! 👌 - 1 mashed avocado - 1/4 cup chopped peanuts - 1/4 cup 100% natural peanut butter - 1 scoop @leanfitbrand complete green protein powder - 1/2 cup unsweetened coconut - 1 tbsp cocoa powder - 2 tbsp almond flour - 1 tbsp coconut flour Topping - 3 tbsp melted coconut oil +1 tbsp cocoa powder - 2 tbsp unsweetened coconut - 2 tbsp chopped peanuts *many of these ingredients were bought @bulkbarnfoods because I like to buy my ingredients in bulk to stock up my pantry 👌 Place all the ingredients into a bowl. Mix all ingredients together to create a thick paste. Roll them into balls. Create your melted chocolate using “3 tbsp melted coconut oil +1 tbsp cocoa powder”. Dip each ball into the chocolate and top with some chopped peanuts and coconut. Place into the freezer for about 20-30 minutes till harden. Take out and enjoy! These are super satisfying. But since I have a CBS mutation (meaning my body doesn’t process sulfur well), I need to eat a high fat, low sulfur diet (read low protein, no cruciferous veggies). When you whip up a yum lunch with a few things left in the fridge ! So delicious ! Added curry powder cumin and coriander onion to my riced cauliflower with an egg and fried and finished in the oven .Im not sure whether to call these fritters as they are a bit drier than fritters.. and nice and crisp. #dinner tonight was a sausage #bowl . i'm a big fan of bowls. 😍not only can you usually get away with one pan but it amazes me how you can blend so many flavors and get such a good serving of #healthyfats , #vegetables and nutrients so quickly. i sautéed up a bunch of veggies in some #duckfat because we have a good #fattitude in our house. 😜 tossed in some #grassfed sausage and seasoned it with some @redmondrealsalt . i also made some #glutenfree rice noodles in my #homemade #chickenstock for added #guthealth . topped the bowls with a bit of #saurkraut after they cooled a minute. A failed attempt to make @thetoastedpinenut peppermint pecan brownies turned into energy bites 🤷🏻‍♀️ But no regrets because they taste like the mint girl scout cookies! 1 c pecans + ½ c ¼ c hemp hearts ¼ c unsweetened cacao powder 1 tbsp coconut oil 2 tbsp agave nectar 1 drop of peppermint essential oil Cacao nibs (or chocolate chips) • Combine in food processor, roll into balls, and store in the fridge!
