On the go dinner today 🙌🏻 Last on the go meal for awhile 👌🏻 Leftovers from dinner last night made for a great little meal at the airport tonight 🤗 Who needs to spend money when you can bring your own 😎 TSA lets you bring food through security (and even an ice pack!) so take advantage on it 💯 Let’s you have more money for things you actually want (in my case: shoes and kombucha 😜) Ready to get back into the kitchen and make some fresh meals but for now I’m thankful to have this in front of me 😍 Had a long day + evening of traveling but no complaints from me- just gives me an excuse to eat snacks and read books 😉 I’m enjoying this meal on my layover now then just another short flight + an hour 1/2 drive home then I’m reunited with Eli and Tippy (don’t know who I’ll be happier to see) 😜 What’s your favorite part of traveling?! Besides the obvious of getting to see loved ones/go new places mine is being completely offline for a few hours! I used agave and arrowroot powder and swapped out rice wine vinegar for @betterbodyfoods coconut vinegar. Super easy and super delicious 😋👌

Normally when I travel I go all out with food and drinks. SHOULD I GIVE OVERNIGHT OATS ANOTHER GO? I’ve been trying out some different breakfasts as I’ve been sick of my usual rotation! This was my semi- successful attempt at chocolate + chia overnight oats. I love porridge (and could pretty much eat it for every meal) but this was my first attempt at overnight oats, the taste was good but I’m not sure about the texture. Tuna salad gets a makeover by getting stuffed in an avocado! 🥑🥑 Now that’s a beautiful thing✨ ⠀⠀⠀⠀⠀⠀ INGREDIENTS 2 avocados, pitted 1 can albacore tuna 1/4 red onion, minced 1-2 celery stalk, chopped 3 Tbsp Greek yogurt 1 Tbsp Dijon mustard Juice of 1 lemon Salt and pepper, to taste Chopped parsley, for garnish INSTRUCTIONS Scoop out avocados, leaving a small border. Dice avocado and set aside. In a large bowl mix together the tuna, red onions, celery, Greek yogurt, Dijon mustad and lemon juice. Season with salt and pepper. Fold in the diced avocado Spoon the tuna into the crevice of the halved avocados. ok— i’m OFFICIALLY the last person on the planet to get on the trader joe’s cauliflower gnocchi train, but now i’m never getting off 🙅🏻‍♀️ i’m ADDICTED! take note, if you don’t already know the “trick,” the trick that i learned from others is to ignore the package instructions or you’ll end up with a pile of soggy slop, and no one wants that 🤭 my method - i let one bag thaw at room temp for about 20 min, then lightly oiled a pan over medium heat on the stove, tossed the entire bag in, added a few tb of @bonafideprovisions bone broth, and kept flipping them for about 10-12 min till they were nice and crispayyy!!! once done, i tossed the gnocchi in my fav @truestoryfoods chicken sausage, and @michaelsofbrooklyn tomato and basil sauce and added lots of micro broccoli sprouts! how’s that for easy! HAPPY TUESDAY FRIENDS!!!!! #kalejunkie
