This is how you get your toddler to eat their vegetables! EGG VEGE CHEESE MUFFINS 🥦🥬🥚 (I’m not big on measuring or reading long stories about recipes🤷‍♀️) Here’s how it’s done: Pre-Heat oven to 350 degrees. Boil broccoli, carrots and peppers. Chop spinach. Whisk 12 eggs with 1/4 cup Ripple Pea Milk. Mix everything together, including shredded cheddar cheese! Use a Ton of coconut oil to coat a muffin pan. Bake for 25 minutes. 12 eggs makes 15-18 muffins. ¿No aman la masa de galletas? Yo necesito comer algo dulce en las tardes, es súper común tener antojos alrededor de las 5 de la tarde. Para ganarle a ese antojo trato de comer frutas pero aveces quiero otra cosa, así como estas bolitas de “cookie dough”. También sirven perfecto para el lunch de los niños, de hecho esto se va mañana en las loncheras de mis hijos. Esta muy fácil de preparar, tan fácil que los niños las pueden hacer solitos. Ingredientes 1 taza de harina de avena (si no tienen no salgan corriendo a comprar, solo muelan avena y listo) 1/2 taza de crema de cacahuate, nuez de la india avellana, almendras, etc la que ustedes prefieran 3 cucharadas de miel 1 cucharada de aceite de coco derretido 1/2 cucharada de vainilla 1 pizca de sal 1/2 taza de chispas de chocolate, me gusta mucho usar Callebaut, las consiguen en las tiendas de repostería, pero otra vez, si no tienen usen las que tengan a la mano, si es Hersheys es Hersheys, no pasa nada la cantidad de azúcar va a ser muy baja, porque solo son un poco de chispas en cada bolita… Procedimiento. Mezclan todo con una paliza y luego con las manos. Si la sienten muy seca le pueden poner un chorrito de agua. Hacen las bolitas, le ponen algunas chispas afuera para que se vean más lindas, y listo! I don’t feel like adulting today. ⁣ ⁣ I actually overslept. I went to bed at 9:30pm and didn’t get up until 7:05am. 😬😬 I had and alarm set for 5:30am and I shut it off and went back to sleep. I should not have done that!! ⁣ ⁣ I woke up with my kids which automatically makes my morning chaos. Maya was crying, Izabelle was asking questions and Aryanna had said “mom” about 27 times before I put pants on. ⁣ ⁣ I had to get 3 kids dressed, fed, teeth brushed, hair combed, dressed in winter gear and buckled in their car seats in less than an hour AND I didn’t have coffee yet. ⁣ ⁣ FML. ⁣ ⁣ But, even though days can be chaotic especially when I don’t start my morning before my kids wake up, I’m so grateful that this is my life. I love my life and my kids. ⁣ ⁣ Also.... lesson learned. No more snoozing my alarm. Today taught me to just get out of bed. A little morning peace makes for a happy productive mom.

I love making pesto! Can put on so many different things! Always popular in our house and Sienna demolished this lunch yesterday and kept telling me how much she loves pesto😂😂😂Mommy’s is best i think! 60g salted pumpkin seeds 60g Parmesan Handful spinach 25g chopped basil leaves ( one pack) 120ml olive oil Pinch salt Pepper to taste Clove of garlic Simply blend all together in a blender or with a handheld one until all the ingredients have been blended together well. This freezes well and can be used for so many things. Yesterday we both had for lunch on a bagel and today Sienna had it with pasta for lunch. “INSTANT” CINNAMON RAISIN COOKIE OATMEAL ✨ Does anyone else overthink what their kid will eat when going out of town? I almost bought some of those instant oatmeal cups at the store to pack for a convenient breakfast. I stopped myself because they were all full of sugar (and so wasteful.) Instead, I came home and made my own “instant” oatmeal cups in small mason jars. They’re just as convenient as the store-bought ones with way less sugar and packaging waste! ✨ 1/4 cup oats 1 tbs raisins 1 tbs chopped walnuts 1 tbs hemp seeds 1/2 tsp cinnamon 1 tsp maple syrup ✨ When ready to eat, add 1/4 cup of liquid (water, milk or non-dairy milk) and microwave for 1.5-2 minutes. Tastes just like an oatmeal raisin cookie 😋🍪

Little One’s temperature is still flirting with the 100s, but luckily he’s not showing too many signs of feeling sick . Me before kids: “my children will enjoy fresh fruits and vegetables more than chips and candy.” 🤦🏼‍♀️ . . Me as a veteran parent: stuffing my purse with fruit snacks and suckers before stepping out of the house. . . A friend introduced me to this idea a few years ago and I do think it helps the kids like their veggies. This tray is the only snack option between school and dinner. I like to make mini burgers or patties as they are super versatile, freeze well and are loved by my toddler. These pictured here are made with chickpeas, carrots and egg. They took me just about 15 minutes to prepare and while they were baking I could play with my daughter (win!) Oh, and the side dish is cauliflower rice with green peas to switch it up a bit.

What is it about serving kids food on sticks? Is it the fun factor? The novelty? 🍡 I am not entirely sure but I do know that skewering food revolutionised mealtimes for me. 🍡 I vividly remember a few years ago when my picky little eater who had refused his vegetables at lunch was happy to snack on these when they were threaded on a stick. Maple sweetened Quinoa and Oat granola 🍁 It’s so easy to make and so forgiving if you don’t have the exact ingredients. Any nut or dried fruit will work. Our house is filled with granola and cereal snack monsters. In general my kids eat nonstop, but they prefer an afternoon granola snack. Anyone else hit up the grocery store today? I’m always amazed at how quickly we go through fruit in our house. Amazed and HAPPY. Knowing that our kids are filling their bodies with the most nutritious and vitamin rich foods makes me feel like I’m doing something right. There have definitely been times when snacking was thoughtlessly shoveling goldfish, pretzels or pirates booty into their mouths. But, I’m trying to not even buy options like that for the house anymore. I’m sure when they’re with their friends and even at school, they’ll come across processed snack foods like that and that’s fine. But at home, I’d rather offer our kids a variety of colorful, nutrient-rich and natural foods. It’s all about balance, right? I honestly don’t even think they’ve noticed that I stopped buying the unhealthy options. 👍🏼👍🏼👍🏼

For snack today we have kept it very simple. Orange slices and apple slices and cheese stick. All my fruit is seasonal you will never see me have strawberries blueberries in the winter because they are from Mexico or elsewhere. To help the environment and eat organic and lower costs you have to keep it local and seasonal. What is the point of doing a diet that you know you can't sustain? My goal with myself, as well as my clients, is to create habits that we can keep forever. Eating well does not mean eating perfect. Trying to get as much of the good stuff in, sprinkled with a little bit of that stuff that you can't live without. For me that's tortilla chips, so of course I'm making sure I get some in today.😄❤ Recipe for this chili is up on the blog (link in my bio). I think I'll have it every day for the rest of winter!
