This chicken and vegetable casserole is a great keto meal • • • Start by preheating your oven to 400°F. Prep your chicken by cutting it into cubes, seasoning it with salt, pepper, and cajun and then frying it in butter on a pan until it turns golden brown. Place the chicken into a class container. Into this container, mix in whipping cream and pesto. To this mix, add your favourite chopped veggies (this recipe uses cauliflower and broccoli). Sprinkle some cheese on tip and bake in the middle of the oven for about 25 minutes. • • • It’s as easy as that!

Bring on the fall and fiber with The Oatmeal Apple Skillet! • Recipe Ingredients: 1 c rolled oats 1/3 c chopped pecans, divided 1/2 tsp baking powder 3/4 tsp ground cinnamon Pinch of salt 1/4 c maple syrup 1 c milk of choice 1 large egg, lightly beaten 1 Tbsp melted butter 1 tsp vanilla extract 2 ripe bananas, peeled and sliced 2 thinly sliced apples, divided Directions: 1. Heat oven to 375° 2. In a bowl, mix oats, half of pecans, baking powder, cinnamon and salt. Stir to combine. In another bow, combine the maple syrup, milk, egg, butter and vanilla. 3. Place sliced bananas in single layer on bottom of oven safe pan or casserole dish. Top with half of apple slices and sprinkle the oat mixture on top. Pour liquid ingredients over oats. 4. Place remaining apple slices on top and sprinkle remaining pecans over apples. 5. This is a must try if you love Mexican food! My recipe is delicious and so satisfying. Great low carb day option if you omit the tortillas. Try it and let me know what you think! . . ✅1 Tbsp coconut oil ✅½ cup chopped onion ✅½ cup chopped celery ✅½ cup low-sodium chicken stock (I use homemade) ✅½ tsp ground cumin ✅¼ tsp salt ✅Pinch cayenne pepper ✅4 cup shredded cooked chicken ✅2 cup baby spinach ✅4 whole wheat flour or gluten free tortillas ✅Salsa (use your favorite brand) ✅¾ cup shredded mexican blend cheese ✅1 avocado, diced ✅Chopped tomato to top ✅Fresh squeezed lime juice . . DIRECTIONS . . Preheat oven to 350F. Spray a 9x9 square baking dish with nonstick cooking spray and set aside. . . Heat coconut oil in a large skillet over medium heat. Add onions and celery and sauté for 2-3 minutes. Stir in chicken stock, cumin, salt, and cayenne pepper. Add chicken and spinach and mix to combine (if mixture appears too dry then add more chicken stock). Careful though, you don’t want to add too much and your tortillas end up soggy. . . Fill each tortilla with the chicken mixture, roll up, and transfer to prepared baking dish. Top with salsa and cheese and bake for 10-12 minutes until cheese is melted. Serve with additional salsa, chopped tomato and diced avocado seasoned with fresh lime juice and salt. . . TIPS . . • Buy bone in chicken breast and boil until chicken is tender. Remove the chicken from the bone to use and use the chicken broth for the recipe. . • Buy two rotisserie chickens and pick all the chicken off to be used in the recipe. . • Use the scraps and bones from the rotisserie chicken to create your own broth or buy an all natural broth to use in the recipe.

This is very much my first successful attempt at cooking a roast beef! This photo doesn't quite show how decadent this actually tasted! First I seared the roast, and then cooked it in my slow cooker in a red wine and broth mixture with rosemary, tarragon, onions, carrots and celery. What depth of flavour!! . On the side I steamed some fresh and organic cabbage, kale and collard greens. All topped with a grass fed butter and some jus from the slow cooker! . Also of note is the ratio of veggie to meat. It is so healthy to have vegetables be the biggest portion on your plate. Plant based with healthy meats and fats gives the body a wonderful balance of micronutrients! . . . .

Receta para el adobo estilo cochinita pibil: 1/2 barrita de achiote, el jugo de 1 naranja, el jugo de 2 limones, 1 pizca de clavo, 1/2 cucharadita de comino, 1/2 cucharadita de canela, 1 cucharadita de orégano, 1 diente de ajo, 1- 2 cucharadas de vinagre de manzana (con madre). Licuar todo. Used every hack I could to make this 🐔noodle as simple and healthy as possible -- leftover @costco rotisserie chicken + grated the carrots for a softer feel + homemade broth from the freezer + thyme from the garden + store bought pasta 👍😍 This took less than 30 mins to make. #homemadewithlove #comfortfood . Homemade broth is great for your health. The glucosamine helps reduce joint pain and inflammation, the collagen and gelatin helps hair, skin and nails to grow strong and beautiful, and the calcium, magnesium and phosphorus helps bones to grow and repair 💪 #prettyandstrong #amazing . It's also really easy to make. I take whatever is left of my rotisserie chicken once I've pulled the meat off and throw it in my slow cooker with some h2o 💦 and whatever veggies I have on hand (garlic, carrots, leeks, celery, onion...) a little apple cider vinegar and some black pepper. Cook that bad boy for 8-12 hours, cool it, freeze it and use it when I need it. #bonebroth #soeasy
