Pumpkin Muffins BY @veronicacleaneating . . Here's a great pre, post-workout or late night snack option. - repost from @caloriefixes - Gluten free, grain free and almost added sugar free. These are one of my favorite sweet treats to make. They are super easy and a great way to use up some old bananas! - All you have to do to make these muffins is throw all the ingredients minus the chocolate chips in a blender and pour it in a muffin tin. Top with a few chocolate chips. Bake at 400F for 8 minutes. Each muffin has around 100 calories if you make 24 of them. A lot of these calories come from the peanut butter. You could certainly get creative and come up with some ways to reduce the amount of peanut butter if you are interested in being more calorie conscious. Okay... these muffins are SO FLIPPING GOOD and so easy to make. ๐Ÿคค @chaseketron has been destroying 4 of these muffins every night haha - ๐ŸฏAll you need is: 2 serving of double chocolate @kodiakcakes 1 scoop of protein 2 tbs coconut flour 1/2 cup almond milk stevia 1 tsp butter extract 1 tsp maple extract 1 tbs blueberries 2 raspberries ๐Ÿ‘ฉ๐Ÿปโ€๐Ÿณ Preheat the oven to 350 and mix everything together. 4 dozen muffins ๐Ÿ˜ I am terrible when it comes to following a recipe or writing one because I'm a pinch/pour/throw-in type of 'measurer' lol What I can tell you about these breakfast/meal muffins is that they are super duper healthy and delicious!! They have a bit of a crispy muffin top but are wonderfully not dry at all although hearty (trying to avoid the dreaded M word here lol) Here's how I made them: Preheat oven at 375 degrees Your ingredients will be about or around...... - 3 cups of organic unbleached whole wheat flour - 1 cup of shredded unsweetened coconut - 4 large organic brown eggs - 1 full 650 oz jar of unsweetened apple sauce - 3 cups of organic 2% milk - 1 cup of softened virgin coconut oil - 1 tablespoon of pure vanilla extract - 3 pinches of fine Himalayan salt - 3 good pinches of cinnamon - 4-6 tablespoons of raw honey - 1 big teaspoon of baking soda - 1 big tablespoon of baking powder and another teaspoon of baking powder - 1 cup of organic quick oats - 1 cup of pureed zucchini - 1 pkg of enjoy life mini milk chocolate chips - 1 pkg of enjoy life dark chocolate chips - 1.5 cups of organic coconut sugar - 1/2 cup of organic golden cane sugar - 6 good tablespoons of milled chia seeds - 3 good tablespoons of Moringa powder - 1/2 cup of hemp hearts - 1/2 cup of milled flax seed - the kitchen sink ๐Ÿ˜œ I mixed the dry ingredients first And then all wet ingredients separately. Note I mixed the raw honey in the wet ingredients and whisked wet ingredients until they were frothy :) I made a 'hole' in my big bowl of dry ingredients ( you really need a BIG bowl here ) and I poured in the wet ingredients. Mixed it all up and added a bit more milk....about 2 tablespoons. Adjust your batter so it's sticky, and spoonable not stiff or crumbly. For every tablespoon of additional milk you add....also add a tablespoon of honey. Every 2 tablespoons of additional milk add 1 pinch of Himalayan salt so you don't dilute the taste while adjusting your batter. Bake for 15-18 minutes. Muffin tops should be a bit soft. Healthy Banana Bread Muffins for some Sunday night baking! Gluten Free & Paleo friendly sweetened with just bananas (unless adding chocolate chips) . ~ Ingredients: 1 cup almond flour 2 Tbsp coconut flour 1/3 cup almond butter 3 extra ripe bananas 2 eggs 1 tsp baking soda 1 tsp ground cinnamon 1 tsp vanilla dash sea salt Optional add ins: nuts, seeds &/or chocolate chips ~ Instructions: Preheat oven to 350ยบF. Grease muffin pan or use muffin liners. In a large bowl puree bananas wish handheld mixer, then add eggs, almond butter & vanilla and mix to combine. In separate bowl stir together almond flour, coconut flour, baking soda, cinnamon & sea salt. Combine dry & wet ingredients then fold in your mix-ins if using them. Evenly distribue batter into muffin tins, then top with a few more mix-ins if using. Bake muffins around 18-20 minutes, or until a toothpick comes out clean. Keep muffins in pan for 10 minutes before transferring to wire rack to cool completely.

But tbh, nut butter would probs work just as well as frosting in this case๐Ÿ˜ I got A LOT of requests for more vegan recipes, and even though Iโ€™m not vegan, I want to accommodate all of u who are!!! These muffins are lightly sweetened with date nectar, but the star is the super ripe banana๐Ÿ˜‹ Iโ€™m a huge fan of easy recipes, and this one is a new favorite, plus check out that inside shot๐Ÿคค Let me know if you give it a try!! Have a good rest of your night๐Ÿคฉ . . . dEATS: 1 cup of @quaker old fashioned oats, grinder into oat flour (I used a in a food processor) + 1 mashed banana + 2 T of @barneybutter almond butter + 2 T of @dvashorganics date nectar + 1 flax seed egg (1 T of milled flaxseed w/ 2.5 T of water) + 1 t of baking powder + a splash of pure vanilla extract + lots of cinnamon // Preheat your oven to 300 degrees. Mix your flaxseed and water, and let that sit for a few minutes. In a medium sized bowl, mash your banana, then add in your oat flour, almond butter, vanilla, and cinnamon. Taste, then add in your sweetener (add more and last based on preference/consistency.) Finally, mix in your egg and baking powder, then let it sit while the baking powder works itโ€™s magic!! Line a muffin tin with liners, or lightly grease each tin. Bake for 15-20 minutes, or until you can poke a toothpick in the center and it comes out clean. Let them cool before enjoying! The texture of these muffins are veryyy moist which I personally love๐Ÿคค and theyโ€™re packed with nutritious ingredients! ๐Ÿ™Œ๐Ÿ™Œ โ€” RECIPE: โž–1 cup almond flour โž–1/4 cup brown rice flour โž–1/2 cup grated peeled carrot โž–1/2 cup grated unpeeled zucchini โž–1 egg โž–1/3 cup coconut oil โž–1/3 cup raw honey โž–1/2 tbsp date syrup (optional - but adds a nice caramel taste to them) โž–1 tsp vanilla extract โž–1/4 tsp Himalayan pink salt โž–1 tsp baking powder โž–1/2 tsp baking soda โž–2 tsp ground cinnamon โž–Handful of crushed walnuts (or pecans would be amazing too!) โ€” DIRECTIONS: 1๏ธโƒฃPre-heat oven to 350 degrees F.
