Chocolate Peanut Butter Banana Protein Muffins! 🍫 🥜 🍌 💪 After years of trial & error of swapping in healthier ingredients into sweet recipes, I actually nailed this on the first try! Yummy, healthy, moist, and super chocolatey! My recipe makes a small 12 muffin batch. Each muffin is 106 calories, 4g protein/14.8g carbs/3.7g fat! Preheat the oven to 350. Mix your wet ingredients: 1. 3 small/medium bananas mashed 2. 1 small egg 3. 6 TBS baking stevia 4. 3 TBS unsweetened applesauce 5. 1/4 c peanut butter In separate bowl, mix the dry stuff: 1. 1/2 c GF baking flour 2. 3 TBS dark cocoa powder 3. 1 scoop chocolate protein powder 4. 1/4 tsp salt 5. 1/2 tsp baking powder 6. 1/2 tsp baking soda Slowly fold the dry stuff into the wet bowl without overmixing. I also added some Enjoy Life mini chocolate chips (about 2 TBS), but you can add nuts or peanut butter chips...whatever you like! Bake for 20 min (to 25 depending on your oven). Healthy blueberry muffins for an afternoon snack! At 90 calories and 5 grams of protein, it's hard to resist eating all of them! I had one hot off the oven 😝 Ingredients for 12 mini muffins 1 egg 1 T.sp coconut oil 2 Tsp honey 1/2 cup greek yogurt 0% fat about half a cup of any milk 1/4 cup or large scoop vanilla protein powder 1/2 cup oats 3/4 cup wholewheat flour 1/2 tsp baking soda 1 tsp baking powder 1 cup blueberries 3/4 wholewheat flour 1. Beat egg and mix all wet ingredients except milk 2. Add dry ingredients and beat together 3. Add as much milk needed to get a medium thick batter 4. Stir in blueberries and scoop batter into silicone mini muffin mould 5.Bake for 15-20' in 175 celcius until tops are golden brown. This easy muffin recipe for kids is healthy and quick, just what you want as a parent! Coming up with breakfast ideas for my almost 3-year-old has been tricky recently. It has to be quick, I like it to be healthy, and of course it has to be tasty. The good thing is that she loves getting involved in anything I do. So I try to have her help make her own Muffins. With these kiddy Muffins, she can help pulling ingredients out of the cabinet, mixing the batter, and scooping the batter into the muffin cups. It was a fun process (well.. much quicker when I just do it myself – 10 minutes tops). Ingredients Muffin Base • 1 1/3 cups whole wheat flour • 3/4 cup old fashioned rolled oats • 3 tablespoons light brown sugar • 3 teaspoons baking powder • 2 medium eggs • 3/4 cup whole milk • 1/4 cup unsalted butter - melted • 1 handful blueberries Instructions 1 Preheat the oven to 375°F / 190°C. 2 In a medium bowl, mix together the flour, oats, brown sugar, baking powder. 3 In a small bowl, beat the eggs. Beat in the milk and butter. 4 Pour the egg mixture into the batter, and fold together, being careful not to over mix 5 Gently mix blueberries 6 Using a cookie scoop, evenly distribute the batter into the muffin tin, filling each muffin cup about 3/4 full 7. These are so amazingly moist and delicious. I was looking for something for breakfasts on school days that was quick and easy. Last week I bought Belvita softbakes, which were tasty but full of sugar. And we were hungry by mid morning. Ella to the rescue! I used dark brown sugar instead of coconut sugar as I didn’t have that and it costs a fortune. I would definitely cut down on the amount of sugar in the recipe; my bananas were really brown which made the muffins really sweet, so I would use less brown sugar next time. My small girl moaned about he chunks of apple, so I may consider blitzing them in a processor before adding to the mixture in future. Need a base recipe for healthy muffins? This is it! Recipe from @fitfoodiefinds and it is totally “tweakable” to the flavor you are craving! Check out this easy recipe: 👇🏻 Ingredients: - 1 3/4 C whole wheat flour - 1/2 C coconut sugar - 1 tsp baking soda - 1 tsp ground cinnamon - 1 C pureed fruit (banana, applesauce, etc) - 2 large eggs (sub flax eggs for vegan) - 3/4 C almond milk (or any other type) - 1 tsp vanilla - 2 Tbsp coconut oil 👌🏼 Mix the dry ingredients in one bowl and the wet ingredients in another (minus the oil). Mix together and then add the oil. Fold in any extras you are adding and evenly divide the batter into a prepared muffin pan. Bake at 350 for 20 min. ⏱ So the first time I made this, I didn’t have bananas or applesauce so instead I pureed some dates with a little water. Then I folded in chocolate chips just before pouring into the muffin pan. AHHHH! They came out so fluffy and delish! 🙌🏼 This batch pictured is made with bananas as the base and then blueberries folded into the batter. The oats are just sprinkled on top for fun. 🍌 The options are endless! Si todavía no sabéis que desayunar mañana @letgaga79 nos da una versión de muffins saludables diferentes. Si os gusta el combo de dulce y salado estos son los vuestros👌🏻. . MUFFINS DE ARANDANOS 🍇 Y PARMIGIANO🧀. . 3 huevos. 1 clara. 50ml de aceite de coco. 100ml de leche de almendras. Edulcorante (opcional). 150gr de harina de espelta integral. 50gr de almendra molida. 100gr de arandanos. 25gr de queso pamigiano recién rallado. 10gr de levadura. . Juntar la harina, almendra, levadura y el queso en un bowl y reservar. Espumar los huevos y clara junto con el edulcorante (si los queréis salados suprimirlo). Añadir el aceite y la leche y remover otro poquito mas con las varillas. Ahora añadimos poco a poco la mezcla de ingredientes secos. Cuando tengamos la masa incorporar los arándanos y a los moldes. Rallar otro pelin mas de queso por encima y horno unos 15 minutos a 200 grados. . La hora de la merienda ya se acerca, el bagre empieza a picar🎣 y las ganas de algo rico SIEMPRE están🐷 Así que les recomiendo que pongan manos a la obra👷🏽‍♀️y hagan estos tremendos 🍩🍪FLUFFY DOUBLE CHOCOLATE MUFFINS🍪🍫 con este pasito a pasito qué les dejo acá⤵️ Para unos 8 muffins aprox. usé: •3 huevos •1 y ½ banana •1 y ½ taza de avena tradicional •1 y ½ cucharada de cacao amargo •Chorrito esencia de vainilla •1 cucharada de polvo para hornear •Endulzante (usé 14 sobres de Stevia🌿) ✨Topping: chips de chocolate amargo 👉🏽Licuar/mixear/procesar todos los ingredientes excepto la AVENA y el polvito para hornear. 👉🏽En un bowl, unir la avena con el polvo e integrar la mezcla recientemente licuada. Your weekend baking fix sorted 💁🏼‍♀️ these muffins are the BOMB - low in sugar, dairy free and a fibre hit! Recipe: 100g almond meal 100g rice flour 50g arrowroot flour 2 larger ripe bananas, mashed 80g nutlex, melted 1 tsp vanilla extract 125g almond milk 1tsp baking powder 1/2tsp bicarbonate of soda 2 eggs 1 tsp ground cinnamon 200g dairy free choc chips (optional, but seriously? 🍫) ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Method: 1. Preheat the oven to 180 degrees 2. Place the banana, nuttlex, vanilla extract and eggs in a bowl and whisk until combined 3. Add the almond milk slowly and continue to combine 4. In a seperate bowl combine the dry ingredients (apart from the choc chips) and mix. 5. Add the wet ingredients to the dry ingredients and mix until combined. Fold in the choc chips. 6. Split evenly between the muffin cases and cook for 15 minutes or until slightly brown and springy. Enjoy!! 🌼 ZUCCHINI BRAN MUFFINS 🌼 If you’re struggling to get your kids to eat green veggies, try disguising them! 🤷‍♀️ These muffins are another great, healthy lunchbox snack for both adults & children! 💚 My whole family smashed them in a few days. INGREDIENTS {makes 18}: ▪️1 cup water ▪️3 cups All-Bran cereal ▪️1/4 cup coconut oil ▪️1/4 cup applesauce (I made my own by boiling a few apples with 1 tsp of cinnamon then blending in nutribullet) ▪️1/2 cup organic maple syrup/honey ▪️2 large eggs ▪️2 cups zucchini, grated ▪️2 cups plain yoghurt ▪️2.5 tsp bicarbonate of soda ▪️1 1/4 cup almond flour ▪️1 1/4 cup oat flour ▪️1/2 tsp salt METHOD: 1️⃣Preheat oven to 180 degrees. 2️⃣Peel and grate your zucchini. 3️⃣ Bring 1 cup of water to a boil.
