This easy muffin recipe for kids is healthy and quick, just what you want as a parent!
Coming up with breakfast ideas for my almost 3-year-old has been tricky recently. It has to be quick, I like it to be healthy, and of course it has to be tasty. The good thing is that she loves getting involved in anything I do. So I try to have her help make her own Muffins.
With these kiddy Muffins, she can help pulling ingredients out of the cabinet, mixing the batter, and scooping the batter into the muffin cups. It was a fun process (well.. much quicker when I just do it myself – 10 minutes tops). Ingredients
Muffin Base • 1 1/3 cups whole wheat flour • 3/4 cup old fashioned rolled oats • 3 tablespoons light brown sugar • 3 teaspoons baking powder • 2 medium eggs • 3/4 cup whole milk • 1/4 cup unsalted butter - melted • 1 handful blueberries
1 Preheat the oven to 375°F / 190°C.
2 In a medium bowl, mix together the flour, oats, brown sugar, baking powder. 3 In a small bowl, beat the eggs. Beat in the milk and butter. 4 Pour the egg mixture into the batter, and fold together, being careful not to over mix
5 Gently mix blueberries 6 Using a cookie scoop, evenly distribute the batter into the muffin tin, filling each muffin cup about 3/4 full
7. Bake for 10 minutes, or until cooked in the middle and a toothpick inserted into the center of the muffin comes out clean
