Another shortcut meal using @traderjoes falafel mix! 🥙You can either deep fry or bake them. Like anything else, fried probably tastes way better, but I'm trying to keep things healthy before vacation! The mix smells amazing, but does come out a bit on the dry side using the baking method. Easily fixed by serving with hummus, tahini or whatever you like (Mike topped his falafel with BBQ sauce, and it actually tasted great! 🤷🏻‍♀️). Don’t ever think you’re the only hot-mess mom out there. There’s plenty of us who are in this together. Here I am today in all of my post-workout glory, drinking a gas station coffee and homeschooling my 5 year old. My kids didn’t care that I looked like this. They didn’t care that I fell behind in laundry today or that I don’t look Instagram perfect with my Starbucks PSL. They just care that mommy’s there with them through it all. They know that I was there cheering them on when riding a two-wheeler finally clicked for both of them tonight. I’m far from having it all together, but together, in this family, we have it all!!! Pancakes made healthy?😍😋 Yasss please! These Whole Wheat Oatmeal Pancakes are light and fluffy and they’re sure to please the pickiest eaters.👌🔥🥞 . They’re easy to throw together and you can make minis for the kids and standard size for the adults. It makes a bunch, so chill some for those busy mornings before school. . This is how you do comfort food! Now pass me the fresh blueberry syrup! . Mini Whole Wheat Oatmeal Pancakes . Yields 26 mini pancakes . 1 1/2 cups 2% Organic Milk 2 1/2 Tbsp fresh organic lemon juice 1 cup (86g) organic quick oats 1 cup (146g) organic whole wheat flour 1 tsp baking powder 3/4 tsp baking soda 1/2 tsp salt 2 large organic eggs 2 Tbsp organic unsalted butter, melted 1 1/2 Tbsp honey 1 tsp vanilla extract . Measure out the milk into a liquid measuring cup then whisk in lemon juice, let rest 5 minutes. Meanwhile in a medium mixing bowl whisk together quick oats, whole wheat flour, baking powder, baking soda and salt for 20 seconds. Make a well in center of mixture. In a separate mixing bowl whisk together the rested milk mixture, eggs, melted butter, honey and vanilla extract until well combined. Pour milk mixture into well in flour mixture then whisk together just until combined. Let batter rest 5 minutes (this allows time for oats to absorb liquid and batter to thicken up). Meanwhile preheat an non-stick electric griddle over medium-high heat (375 degrees). Lightly spray griddle with nonstick spray if needed. Drop batter about 2 tbsp at a time onto griddle to make mini pancakes. Cook until golden brown on bottom, then flip and cook until golden brown on opposite side. Repeat until all of the batter has been used up. Eating well. It's tough. So many things trying to throw you off course. Choice Prep Cost Overthinking what to have is a huge factor for most people. But it doesn't need to be so overwhelming. Sure, there's a billion amazing food combos to hit the spot but when you're struggling to figure out " What the hell am I going to eat?" Sometimes just keep it simple. I took : 1/2 bag broccoli florets 1 tbsp Coconut oil 4 eggs And POOF! I stayed on my diet. And it was fast: 5 min in the microwave for the broccoli 2 min in the microwave for the eggs (yup, in the microwave!) And it was cheap: $2 for the veggies (2 servings) $3 for the eggs (3 servings) Staying on our diet doesn't need to be as difficult as we make it out to be sometimes. 👉🏻Y’all, I am so excited that fall is here and I can start experimenting with new soup recipes! 🥣 Last year I came up with a few favorites but I would like to have a few new recipes for this fall and winter!We do a ton of soups and side salads this time of year because they are healthy, easy, and cheap! A triple win in my book! 🙌🏻 It’s been a rainy lazy week so I thought now was a good time to play around in the kitchen! This Lentil soup is the very first recipe I created on my own! I was pretty proud the first time I made it because I threw a little of this and a little of that in the pot and said a little prayer we would have something edible for dinner! My sweet hubby likes it when I follow a recipe because I’ve had a few fails in my day! 🤣 I kinda fib sometimes when I’m trying to come up with a “Keli original” because I tell him I’m using a recipe so if it’s a flop I can blame it on the recipe and not my desire to concoct something new in the kitchen! 😂 I know...I’ve told my secret and he’ll read this but I’m pretty sure he has figured out this game over the last 12 years we’ve been together! 🤷‍♀️ Today I added a few things to my original recipe and omitted the dairy so that my sweet #dairyallergy baby could eat some too! My kids love lentil soup so I wanted to make sure it was safe for him to eat as well! I subbed coconut milk for the heavy cream and I’m so happy I did! It tasted amazing and just as good as when I had heavy cream in it! 🤗 It also made it healthier so that’s awesome too! I can’t wait to take some other recipes of mine and change them up to make them healthier for the whole family! I’ve tried in the past to cook healthy meals but I had so much to learn about eating a balanced diet! My nutritional program is amazing and has taught me so much in such a short period of time! Just got done with my first session of Rolfing. I suffer from an incredibly tight leg muscles and back muscles that cause vertigo/dizziness and no matter how much yoga, stretching, walking, biking I do they never will release and I always just end up making my neck and back worse. So I heard of Rolfing through a friend and looked into it and after reading up on it everything became clear and it was definitely something for me. If your fascia is tight then your muscles can't release. So they work ok releasing your fascia. After injuring my back in the 8th grade than having a very demanding physical job for 6 years then going from that to a desk job for 4 years my body went through a lot. Plus I was 100+pounds heavier through most of it! I suffer from dizziness vertigo and migraines due to neck issues. A lot of that has gone away and decreased when I went plant-based and was getting rid of heavy metals and viruses. But the vertigo and dizziness wouldn't stay away and it's because I have neck issues due to the tightness in my body. The tightness throws my whole body out which causes other issues. My main issue right now is vertigo and dizziness which I don't get very often unless my neck goes out which unfortunately when my neck goes out it pinches my Vagus nerve, causing a panic attack and dizzy spells. This is why I wanted to try Rolfing. I had a lot of anxiety leading up to my first session because I was afraid they were going to release something or move something that would aggravate my vagus nerve and I would end up with a panic attack vertigo or dizziness or all. Thankfully I only had anxiety here and there and a short wave of vertigo. At the end of the session I sat up slowly and thought wow I feel better than I thought and then the dizzy vertigo hit me at once it was very overwhelming it is very freaky my Rolfer worked on relaxing my back and my neck. She says most people experience dizziness for 10-15 minutes after the session especially the first one it may be very intense. I hope that doesn't happen ever time! There is a total of 10 sessions. 1 down 9 to go. I can tell a big difference in my diaphragm, the way I walk and rotate my arms way more range!

Loved this spread tonight. The store didn’t have ground turkey OR ground chicken 🙄 so I went with organic chicken strips and cooked it with @traderjoes 21 seasoning salute. Then sautéed some carrots, mushrooms and onions for the toppings. Put it all in lettuce wraps and topped it with @yaisthai almond sauce. Honestly the whole thing was very spicy 🔥 (I added a lot of seasoning to the chicken & the almond sauce has a kick!) but I’m a baby so it’s probably not saying much 😂 #jennarallyhealthy

Dinner👌👌Grilled chicken breast + red cabbage salad + yumms!! My salad has red cabbage, carrots, red onion, cilantro, bell peppers, lemon juice, olive oil, salt, fresh garlic or garlic powder. I don’t know about everyone else, but I just feel so much better mentally when I only eat plant based foods. It’s crazy how we have the power to make so many traditionally dairy/meat based dishes vegan AND delicious. This macaroni and cheese was both of those things. Oh - and healthy. 🌱 - I used @frommybowl recipe for the cheese sauce - potatoes, carrots, nutritional yeast, tahini, plant milk, and spices. And it tasted pretty close to dairy cheese sauce with no guilt or upset stomach. I also added vegan hotdogs and broccoli because, why not? 🥦🍝 #CrueltyFree

Cajun Shrimp🍤, Sausage🐷, and Vegetable🥒Skillet 👇🏻 Makes 6 servings Per serving 1 Leanest 1 Healthy Fat 3 Greens 2 1/3 Condiment INGREDIENTS 28 ounces cooked shrimp 12 ounces jennie-o turkey sausage 3 Cups zucchini 3 Cups yellow squash 1 Cup asparagus 2 Cups red bell pepper ¼ Teaspoon salt ½ Teaspoon pepper 2 Tablespoons olive oil 2 Tablespoon Cajun seasoning INSTRUCTIONS In a large bowl add the shrimp, sausage, zucchini, yellow squash, asparagus, bell pepper and salt and pepper. Add olive oil and cajun seasoning and toss until coated. Add to a large skillet and turn to medium high. Cook for about 5-7 minutes until the shrimp is pink and the vegetables are tender. Preheat oven to 350℉, spray muffin tin with nonstick cooking spray. In a blender or food processor, blend graham crackers into crumbs. 2. Mix graham cracker crumbs, coconut oil and honey until combined. 3. Divide mixture evenly and press into the bottom of 12 muffin tins. Bake for 5-7 minutes or until golden brown. 4. Add Chocolate Cream Pie IdealShake, almond milk, cocoa powder, salt and melted chocolate chips into a blender. Add tofu to help thicken the mixture, and blend until smooth and silky. 5. Dinner done early today thanks to my handy crock-pot! 🙌🏻 I used it on Sunday too to make a chuck roast too and 🤤 it was sooo good.. I haven’t really posting as often but I’ve still been cookin 😁... I bought a small whole organic chicken and seasoned it with salt+pepper+ onion salt and covered it in fresh rosemary and thyme and a few slices of lemons. “How can you only eat 1x a day?” “Do you not get hungry?” — To make things short, I started IF (Intermittent Fasting) with the general starting rule of 16:8, that is fasting for 16 hrs. with an 8 hr. eating window. Eventually, as time progressed, my body and mind started to adapt to this lifestyle and little by little I pushed my fasting window to 17,18,19 hrs. and so on until now for the past 2-3 months I’ve been eating 1x a day (My fasts usually last 22 + hrs. 🕑🕒). — Not consuming food until nighttime (usually around 7-8pm) actually keeps me alert/awake at all times throughout the day whereas before I’d eat and feel lazy right after (mostly due to carbs).
