This delicious and super healthy spaghetti with a homemade tomato, basil & garlic sauce takes no more than 10 minutes from start to finish 🤗 It’s full of fresh, natural goodness and tastes out of this world 🙌🏻 Plus the ingredients are mega cheap and all things you can find in your local supermarket ✨ Proof that healthy eating isn’t expensive, time consuming or difficult 🌈 • INGREDIENTS (serves 2) • 150g pasta of your choice (I like brown rice) • 15 cherry tomatoes • 1 tbsp tomato purée • juice 1/2 lemon • 2 cloves garlic • 2 tsp olive oil • small handful fresh basil • 1/2 tsp chilli flakes (Optional) • 1 tsp dried herbs (optional) • salt & pepper 🌿 METHOD 1. Bring a saucepan of water to the boil then add your pasta and cook according to packet instructions. 2. Add the olive oil to a pan over a medium heat and allow to warm. 3. Cut the tomatoes into halves and add to the pan along with the crushed garlic, herbs, chilli, salt and pepper. Allow to cook for around 6 minutes, allowing the tomatoes to go all juicy. 4. Mix the tomato purée and lemon juice together in a bowl to combine then add this to the pan followed by the fresh chopped basil. Give everything a mix and cook for a further couple of minutes. 5. Drain the pasta and then add to the pan with the sauce. Mix well so the pasta is fully coated in the delicious sauce! Serve and top with a few extra basil leaves for decoration and flavour ✌🏼🌿

WHAT A SUNNY DAY ☀️ Today is really hot outside. With these hot days you don’t feel like eating too much food or spend many hours in the kitchen. This is what happened with today’s lunch. We had chicken breast with a sort of pico de gallo and a tomato, green onions and cucumber salad. As I said, this is a slightly different pico de gallo because apart from the white onion and tomato, I had to add green bell pepper because we run out of jalapeños and lime, so I used lemon juice. On the top, some cilantro. this is the ultimata brekkie plate 💯💯💯 baked a new batch of my chocolate chip zucchini banana bread yesterday and it came out SO good once again!!! reposting the recipe because you have to make it! 😋😋 CHOCOLATE CHIP ZUCCHINI BANANA BREAD: 1/2 c mashed banana (so one medium banana) 1/4 c unsweetened apple sauce 1/4 c of unsweetened nut milk (I used unsweetened vanilla almond milk) 4 eggs 1 1/2 c almond flour 1/2 c coconut flour 1/2 tsp baking soda 4 tsp cinnamon 1 tsp nutmeg Pinch of sea salt 1 cup shredded zucchini (make sure you squeeze out the moisture!) 1/3 c chocolate chips 2 scoops of @vitalproteins collagen (optional) 1. preheat oven to 350 and lime a loaf pan w parchment paper 2. In a mixing bowl whisk together the wet ingredients 3. In a large mixing bowl whisk together the dry ingredients 4. Add wet ingredients to dry and stir to incorporate. Stir in zucchini and chocolate chips. Empty batter into loaf pan and bake for 45-50 min or until a toothpick comes out clean. Let cool for 10 min before slicing ENJOYYYY!!!! 💕🍌💖🤗🎉😋

WHO WANTS SOME CHOCOLATE DATE SQUARES? 🙋🏼🙋🏼🙋🏼 • I made these the other day and they turned out amazing! No need to bake them in the oven since this recipe is 100% RAW AND VEGAN! • RECIPE: - 1/2 cup almonds - 1/2 cup walnuts - 2 tbsp ground flaxseed - 1 1/2 cup dates (soaked) - 1/3 cup cocoa powder - 1/2 cup quick oats • In a food processor or high speed blender, turn the almonds and walnuts into fine pieces. Add the dates and blend until smooth. Add a little water if needed. Transfer the nuts and date paste into a bowl and add the ground flaxseed, cocoa powder, oats. Mix well until it forms a dough. In a bread mold lined with parchemin paper, transfer the dough and flatten with a spoon. It was too hot to cook and I had some leftover chicken in my fridge, so...this became dinner! Chicken salad loaded with veg and a yogurt dill vinaigrette on top of Boston leaf lettuce with sprouts from @sprouted_earth . The lettuce became perfect wraps for all that deliciousness! I only wish there were leftovers of my leftovers 😋 . Chicken salad 1 4oz piece of chicken, chopped 1 scallion, diced 1 celery rib, diced 1 tbsp red pepper, diced 1 tbsp pear, diced 1 tbsp raw walnuts, chopped . Yogurt Dill Vinaigrette (roughly as I never measure anything) 1tbsp Greek/skyr yogurt 2 tsp fresh squeezed lemon juice 1 tsp Dijon Fresh dill to taste S&P . Whisk vinaigrette and pour over chicken salad. Toss and place sprouts and mixture on Boston lettuce leaves. It fits - it fits - it fits!!!!! • On our 6 month wedding anniversary (4/28/18), I finally picked up my wedding gown from my parents’ house. I didn’t notice too much weight gain (we seldom ever do) so I wanted to try it on. It would not zip. My almost 3 year old niece was like “butt too big” 😂😂😂. She was right. I tried to pretend like it was just #bootygains🍑 but ever since that moment I have wanted to get back into it. I put my head down & got to work. My choices were no longer because “I wanted to be skinny” or see the scale move a certain way. They were ALL for this dress 😍. And yes, I had plenty of treats along the way, but majority of the time I was thinking of me fitting into this thing again. I told everyone what I was planning to do. Many people actually told me they didn’t think I could do it! Earlier this week, I tried it on. It still wouldn’t zip 😢 #iwasdevastated but determined to keep going. This morning (at 6am) I was getting ready to leave for my work trip. I walked past my dress & it was staring at me to try it on one last time. I did & it ZIPPED! You may not get why I wanted to fit into my wedding dress one more time - that’s why it’s MY goal & not yours! • The whole point of this story is: if you have a goal, KEEP going. INGREDIENTES: . ☞Avena procesada: 150 g . ☞Harina integral: 100 g . ☞Polvo de hornear: 2 cdas. soperas. . ☞Azúcar mascabo: 120 g. (o 10-12 sobrecitos de edulcorante) . ☞Huevos: 1 unidad . ☞Agua: 1 vasito. . ☞Esencia de vainilla. . ☞Ralladura y jugo de 1 limón. . Su fácil elaboración y lo versátil que me resulta para toda las épocas del año hace que sea perfecta. Me sirve tanto en defi como en bulk, días altos en CHOS o bajos, simplemente tengo que variar la ración y cantidades en el plato. . Ya la he subido muchas veces por stories 📲 , pero tras bastantes peticiones os la dejo por aquí. . Ingredientes: ✔️Carne magra picada a elección. Yo uso potro o ternera. ✔️Espinacas. ✔️Arroz. Yo uso vaporizado o integral. ✔️Fideos. ✔️Aceite de oliva virgen extra. ✔️Sal al gusto. . . Elaboración (más fácil imposible): 1) En una olla añadimos agua con un poco de sal y llevamos a ebullición con las espinacas. 2) Mientras en una sartén con un toque de aceite salteamos la carne picada y a su vez en otra olla (donde haremos el arroz) tostamos los fideos con AOVE. 3) Una vez están las espinacas se paga el fuego y añadimos la carne ya salteada (dejamos reposar hasta que esté el arroz). 4) En la olla de los fideos ya tostados añadimos el arroz y el doble de líquido, tapamos y esperamos a que esté cocido. 5) Servimos el arroz junto a la carne con espinacas, tenemos un orgasmo y me dais las gracias por MD. Our bodies cannot synthesize enough collagen on their own and our diets today contain minimal collagen so in addition to my morning collagen coffee, I always sneak a little in my baking! 🍌 This recipe is so versatile - this week’s version had a dark chocolate, cacao nib, and walnut topping that is TO DIE FOR! -COLLAGEN CHOCOLATE WALNUT BANANA BREAD- -3 medium overripe bananas -1/4 cup pure maple syrup -4 oz (or one individual container) skyr or Greek yogurt (any milkfat % is fine!) -2 eggs -1/4 cup milk of choice (I used almond milk) -1 tsp vanilla -2 cups whole wheat pastry flour (or gluten-free 1:1 baking blend) -1 tsp cinnamon -1 tsp baking soda -3/4 tsp baking powder -3 scoops @vitalproteins collagen peptides For the topping: -1/2 oz chopped walnuts -1 tbsp dark chocolate chips -1 tbsp cacao nibs . . . Preheat oven to 350 F. In a large mixing bowl, mix all wet ingredients (including bananas). Gradually mix in dry ingredients. Line a loaf pan with parchment paper or use a silicone loaf pan sprayed with coconut oil. Pour batter into pan. Mix topping ingredients in a small bowl and sprinkle over top of batter until evenly coated.
