Couple more American heritage breed, pasture raised goats are headed out into kitchens this week. We're grilling out here, I'm sure @viciarestaurant and @winslowshome will outdo us but it cooks up pretty good! This is leg of goat, we followed a leg of lamb recipe, grilled for about 2 1/2 hours. It was amazing, with grilled green tomatoes, onions, and zephyr squash.
Eating meat from animals we know have lived good, natural, healthy lives is really important to us, and we are grateful to steward these animals and contribute to a community of chefs and consumers that believe in responsible food production.
