It’s been quite some time since I have done a full reset. This year has been full of the most amazing travel and experiences, weddings and celebrations, and fitness fun. And it has finally caught up to me. So today starts my Day 1 of the #septemberwhole30. With Life Time Athletic OKC opening in a few weeks, getting back on regular running miles, picking up more classes, and upcoming @piloxing Instructor Certification Trainings I need to feel my absolute best. # What I am aiming for: better sleep in duration and quality, consistent energy throughout the day, better physical recovery post workout, improved gut function, ditch the skin breakouts, and satiation from balanced meals. # I picked today to start as I know the next 30 days I’ll be able to navigate with the least amount of roadblocks. I looked at my calendar and it’s pretty clear as far as events and travel. So, setting myself up for success before I even start. # I have @truefare in my freezer and will be looking to get back in the kitchen again after taking a break all summer. # Want to join me? Not always pretty, but it works! Went on a quick road trip and this is some of the colder things I packed up in the cooler. The eggs and avocado were breakfast for the husband and me, apples and @eatnuttzo were snack, and I packed some chicken egg avocado salad and some crackers to eat then with as well as the mass amounts of jerky and other snacks that I also brought lol. We ended up not having to buy any food which was a first! It wasn’t perfect but it was a good learning experience and I think as I do it more, I’ll figure out more easy things to take along 🙂

Spaghetti with baked spaghetti squash 🍝 one of my favorite meals 😍. I used the #skinnytaste spaghetti recipe (link below). Instructions for the squash: I cut it in half and scoop out the insides, then brush it with olive oil, salt & pepper, and place it face down on a lined baking sheet. I bake for 45mins (or 1hr if I'm doing two) then let it cool for 5mins before using a fork to shred the inside in to spaghetti-like strands. 1 cup of spaghetti squash is just 42cals! I'll often mix this with a bit of pasta to ensure I'm rebuilding my glycogen levels post workout 😊 . Whole30 grub! I make really delicious burgers & wings. 🍔🍗 ▪️ -Burgers - 1 lb of @butcherbox ground beef, chopped onion, coconut aminos, & garlic powder. #septemberwhole30 Day 20- + My first real meal in a couple of days. The stomach flu swept through our house this week.... Having the stomach flu while pregnant, is hard enough, but add having to take care of kids while also not feeling well yourself, and the exhaustion level skyrockets. I was grateful to be feeling almost 100% today and sanitized every surface and corner of our house. No toilet, countertop, floor, doorknob, or bedding went without extreme sanitizing. 🤪 + And then we sat down to a delicious meal to refuel ourselves! + Boneless chicken thighs marinated in @thenewprimal mustard BBQ and regular BBQ (1 batch of each) Sautéed green beans Roasted sweet potatoes + It’s crazy how once you’ve set yourself up with good habits, your body will crave some seriously good nourishment after illness + I hope you’re all having a better week than we did! 🙃

Just a little reminder. That isn't a bump in the road, that's the road. Things will always come up and the true sign of maturity isn't how you dodge the unexpected but how you recover from it. I had barely eaten all day when my kitchen flooded (it got worse after this). I'm just now sitting down to dinner and the whole time I thought I was going to throw in the towel on my most important Whole30 (for reasons I can't discuss). Today was not a failure, I thrived!

Plant-Based Chocolate Cake 🎂 Ingredients: 1 cup and 2 tablespoon tigernut flour 1 cup coconut sugar 1/4 cup arrowroot powder 1/4 cup coconut flour 1/4 cacao powder 1 teaspoon baking soda 1/3 coconut oil @dignitycoconuts 3 flax eggs 1/2 cup warm water Instructions: Preheat oven to 350°F. Grease a round 4inch cake pan with coconut oil. It makes 3 small cakes. Create 3 flax eggs by mixing 3 tablespoon flaxseed meal and 9 tablespoons water. Let rest in your fridge for 15-30 minutes to thicken. Whisk flax egg, tigernut flour, coconut sugar, coconut flour, arrowroot flour, baking soda, vanilla extract, coconut oil, cacao powder, water, and mix until smooth. Pour into prepared cake pan. Bake for 35 minutes. Melt your favorite vegan chocolate and pour on the cake and enjoy or make your own chocolate sauce. Chocolate sauce ¾ cup 100 gr cacao butter chopped 4 tablespoon maple syrup or honey ¼ cup 25 gr cacao powder Use a double boiler or add 3 inches water in a large saucepan bring to a boil over medium heat. Put a glass mixing bowl on top. In honor of the first day of Oktoberfest in Munich, we have a #Whole30 compliant dinner of German potato salad, bratwurst and asparagus. This warm potato salad with a tangy vinegar dressing is delicious and tasty way to have a warm meal on the first day of fall! I was also happy to find a Whole30 compliant sausage at @wegmans. After two weeks straight of work travel, I’m happy to be home for the next while making my own food!

W30|R3|D20|M3: my husband and I went to Apple Fest in a nearby town. My husband got a cider spice donut and I have to be honest...I was really wanting one. But, I stayed strong and just drank my water. Then we went out for an early dinner at an Italian restaurant and I was faced with a heavenly smelling bread basket and a menu that was 90% non-compliant. My hubby ordered a cocktail, my favorite — a straight up vodka martini with blue cheese olives — and I was getting the hangry “why the eff am I here on a @whole30?!” feeling. I took a deep breath and ordered sparkling water. I found a menu item “tutto pesce alla griglia” and confirmed it was grilled octopus, calamari and shrimp topped with EVOO and garlic. Nothing else. I ordered a house salad with no dressing and just used the EVOO on the table. Three years ago, when I said I was going to do my first @whole30, my hubby said he would join me. Together, we’ve lost over 150 pounds and have gotten off all prescription and OTC medications. . One year ago, when I said I wanted to apply to be a #whole30certifiedcoach, he said he believed in me, and has been cheering me on since. . 20 days ago, when I said I wanted to do @tmacfitness 20 day challenge, he agreed to get up early with me! For many of those days I was up 1-2 times at night to nurse my youngest, but my hubby made sure I followed through with my commitment. Many nights my husband’s sleep was interrupted with our other kiddos needing something, but he still found his way to our living room to workout with me. I even battled a respiratory infection and felt pretty crummy, but my hubby encouraged me to persevere. We didn’t make excuses, we followed through with our commitment, and we showed up on our mats in our living room, together. AND. IT. WAS. AWESOME! . Thank you, Todd, @_laurenschwab and @b.long5 for creating a program that busy, sleep-derived parents can do from the comfort of their living room. I’ve noticed I am more patient with my kids, more thankful for my body, and I’ve really enjoyed connecting with my husband first thing in the morning. happy fall y’all 🍂 // here in florida, the first day of fall feels like anything but. it’ll be more like november or december before we feel chilly temps. even so, fall is still my freakin’ favorite and I’m stoked it’s finally here. to celebrate: a colorful plate full of goodness. chicken and apple sausage, scrambled @vitalfarms eggs, roasted sweet potato, and roasted organic tri-color potatoes. thanks to that maryland diner, I can’t stop putting old bay seasoning all over everything!

UK friends, the Asda good living magazine has had some amazing recipes lately - we tried chimichurri salmon and cumin sweet potatoes tonight and it was so easy and didn’t need any tweaks to make it #whole30 friendly. Plates cleared for us both, thumbs up for day 6!

Meal Prep ! ! ! ❤️ I looooove a good Meal Prep to get me through the week. This time we made super versatile dressings that can kick-up any simple meal: Dairy-Free Ranch, Avocado Oil Mayo and Coconut Curry Sauce. Then we used some of the mayo in my tried and true Buffalo Chicken Casserole. Sounds weird but it’s the bomb!! Link’s in bio. —— Homemade Ranch and Mayo are super fun because you can use them as creamy bases in a TON of sauces and the homemade versions (check my links in bio) do not contain hydrogenated God Knows What or sneaky sugars. #checkyourlabels #healthyfat —— I’m excited about adding wasabi or Dijon to the mayo for veggie dips and some Franks’s red hot for a buffalo ranch. Also, if you have mayo on hand you’ll always have a base for a quick chicken salad, egg salad or tuna salad. So easy!

Made with 5 simple ingredients and in less than 5 minutes it is always on repeat in my house. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Tuna and Tahini⠀⠀⠀⠀⠀⠀⠀⠀⠀ 👉1/4 Cup Tahini⠀⠀⠀⠀⠀⠀⠀⠀⠀ 👉1/4 Cup Water⠀⠀⠀⠀⠀⠀⠀⠀⠀ 👉Juice of 1 Lemon⠀⠀⠀⠀⠀⠀⠀⠀⠀ 👉1-2 Garlic Cloves⠀⠀⠀⠀⠀⠀⠀⠀⠀ 👉1/2 Teaspoon Salt⠀⠀⠀⠀⠀⠀⠀⠀⠀ 👉2 Cans of Tuna (Drained)⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ To Make:⠀⠀⠀⠀⠀⠀⠀⠀⠀ Combine everything but the tuna in a blender. Sooo September has been busier than expected... to say the least 😴 . I’ve been feeling guilty, I didn’t stick to a perfect #SeptemberWhole30 and I’ve allowed the guilt to really get to me, feeling disappointed and unmotivated. But today, in a dark room on a bike, I let that guilt go🙅🏼‍♀️ . Especially this week, when I haven’t felt like myself, beyond busy and frankly feeling a little run down after fasting on Wednesday, I committed to myself for 45 minutes to do my very best, FOR ME, with a new instructor at an almost new studio (3 years since I’ve rode in #BKHT!) with my best friend @hallelauren by my side. Where have you been all my life sheet pan dinners??? 5 mins of prep, 30 mins of cook time at 400F +/- and dinner is on the table. Literally, a working wo/man’s life saver! ⁣⁣ ⁣⁣ This colorful pan included @aidellssausage (chicken and apple), peppers, onions, baby bella mushrooms (Stu’s favorite) and some left over boiled potatoes...tossed in olive oil and @frontiercoop Cajun seasoning.⁣⁣ ⁣⁣ I served a nice big helping over some arugula, along with a tall glass of water (I’m trying to drink more water 🤷🏻‍♀️) that I pretended was a gin & tonic 😜. ⁣ ⁣⁣ What’s you favorite sheet pan combo???
