Saturday morning breakfast salad 🥗 A bed of romaine with easter egg radishes, some babaghanouj, heirloom tomatoes, a lil guac, some sautéed purple potatoes/white sweet potatoes/carrots/bell peppers covered in dill and rosemary, and these @pedersonsfarms breakfast sausages. Saving $$$ is very important to me. In fact, you may not know that I'm an extremely frugal person. Eating healthy and in a way that makes me feel my best is also a top priority for me. # # # It can feel impossible to balance those two things when you focus on fresh produce, humanely-raised meats, and staying mostly gluten-free. # # # My husband and I did a #nospendmonth for June. That meant only buying the essentials and cutting out *most* of the fun/packaged foods this month. We took our food budget down to $290! (About $110 less than we usually budget.) # # # I had $40 left in the budget this month to use for this week's groceries. My total at @krogerco was $74.02 when I first checked out. BUT I MADE IT WORK FOR UNDER $40 WITHOUT PUTTING ANYTHING BACK! See how in my stories. 😄

Served up a glass with lemon vanilla @nutpods. Yum! 😋 Pan fried some frozen shredded potatoes (Brookshire's store brand is #whole30compliant! Who'd have thought?!) Fried up 2 crispy, runny yolk eggs in ghee. Reheated leftover roasted zucchini & summer squash. Added a dollop of homemade mayo (which melted) & my everything bagel seasoning. While I'm not on a #whole30 round officially, I have been feeling the effects of my food choices more and more over the past couple of weeks, and I don't like it. I've suffered from a variety of tummy troubles, headaches, increased inflammation resulting in carpal tunnel symptoms, PMS symptoms which include breast tenderness and most recently heartburn. I'm getting ready to go on vacation, so I'm going to start a quick 5 day reset tomorrow. I just feel better when I'm eating #whole30compliant foods. .. Dont be afraid to combine veggies in your skillet. To be honest, this has become one of my favorite breakfasts and it all started one day when I had some left over grilled potatoes. I cut them up and just started adding what sounded good. I ended up with potatoes, onions, garlic, bacon and sugar snap peas in a sauté. DIAS 6 E 7: Só preciso de um cochilo Hoje é o Dia 6 e você passou pela última fase sem atacar ninguém. Viva! Na verdade, hoje você já não sente aquela vontade de esganar o primeiro que aparecer na sua frente como se sua vida dependesse disso. São 10 da manhã e você só consegue pensar em se esconder debaixo da mesa de trabalho para tirar um cochilo. À medida que o dia se arrasta, sua mesa de trabalho se transforma de uma superfície de madeira dura em um travesseiro fofinho bem diante dos seus olhos. Você chega à academia sem nem saber como foi parar lá e se pergunta: será que alguém vai notar se eu tirar um cochilo aqui? Você resiste à vontade de dormir até pelo menos as oito da noite, um horário razoável, apenas para acordar 11 horas depois sem se sentir nem um pouco mais descansado do que estava no dia anterior. Tonight’s dinner prep- chicken kabobs! Super easy especially with a grill that works and a Hubby that grills 🤣! What I did- marinated chicken breasts in pineapple juice and some @hawgstrough Mustard Sopp (all clean ingredients!) and tossed the veggies with some TLC House seasoning! Whole 30 day 8 breakfast game was strong 🍳🥓🥔😋 Pork Sausage Hash 3-4 red potatoes 1 large sweet potato 1-2 table spoons EVOO (although I used the bacon grease that was already in my pan 🙈) 3/4-1lb natural pork sausage (we got ours from a local farm) 1 bunch of kale 1/2 tsp garlic powder 1/4 tsp cumin A dash of paprika Salt and pepper to taste -------------------------------cook sausage in skillet and dice both potatoes into 1 in. Cubes. You can choose to skillet fry the potatoes in the leftover sausage grease for extra yummy flavor, or use EVOO. Add seasonings to potatoes. While potatoes are cooking (approx 7-10 min until tender) roughly chop the bunch of kale and add to skillet the last few min. And cook until wilted. Top with 1 or two fried eggs and your yummy sausage for a whole 30 compliant breakfast packed with protein!
