Need a cheap & fast paleo dinner? This is one of my favorites! Full of flavor! Lemon Italian Chicken with Cauliflower Rice. I promise it takes less than 30 minutes to make and is less than $5 per serving. (Serves 3).
6 boneless, skinless, chicken thighs (~1.5 lbs)
2 tbsp extra virgin olive oil
1 tsp garlic salt
2 tsp paprika
2 tsp ground cumin
1/2 tsp Italian seasoning
1/2 tsp red pepper flakes
16 oz bag of frozen cauliflower rice
2 tbsp Italian Parsley, chopped
1/2 grape tomatoes, halved
1/2 cup water
1.) In a small bowl, mix together all of your dry spices. Only use HALF of the mixture to sprinkle on both sides of your chicken thighs.
2.) Heat 2 tbsp olive oil over medium-high heat. Once warm, add chicken to skillet and cook for 2-3 minutes per side. This will only make a nice crispy brown look on the chicken. They will not be fully cooked, but remove them from the pan and set aside on a plate. You'll finish cooking them later.
3.) Scrape up any remains from the bottom of the pan and leave all that flavorful goodness in the pan!
4.) Add your frozen cauliflower rice to the pan and make sure to break and large chunks into smaller pieces.
5.) Sprinkle the other half of your seasonings over the rice, add juice from just half of the lemon, and add the half cup of water. Mix together and spread out evenly over the bottom of the pan.
6.) Place chicken on top of rice and cover with a lid. Turn heat down to medium-low and cook for 20 minutes, or until chicken reaches 165°F.
7.) While its cooking, slice the other half of your lemon, halve your tomatoes and chop your parsley.
8.) Garnish with lemon, tomatoes and parsley. Enjoy!
