Hi my friends....today they call them Instant Pots. I bought mine 10 years ago on QVC when they were a new thing. It was made by Todd English who is a Chef, and it was a combination pressure cooker, slow cooker, soup maker, rice maker and had a saute feature in there...so I didn't have to brown in a pan on the stove, and then add to the crock pot. My point is...if you don't have one, get one...especially if you are a working mom.
Turkey Chili (This makes alot so decrease yours..freezes well)
2 1/2 lbs lean ground turkey
2 vidalia onions diced
2 red peppers diced
1 can white beans, drained and rinsed
2 cans black beans, drained and rinsed
1/2 bag frozen corn or fresh corn
2 large cans of diced tomatoes
2 palm fulls of chili powder
2 palm fulls of cumin
1 tbsp Italian Seasoning
1 tbsp black pepper
Salt to your taste
Siracha, hot sauce or crushed red pepper or fresh jalapenos if desired.
Saute ground turkey in bottom of pot....add onion and saute around 5 minutes. Add red pepper and cook for 5 minutes more. Add beans, corn, diced tomatoes and seasonings.
Cook in slow cooker mode high for 4 hours, low for 8 hours. Cook in soup mode for 30 minutes under pressure. Cook in pressure cooker 20 minutes, all raw under pressure.
Serve with Greek Yogurt on top or shredded cheese if desired.
If you are following keto omit corn and beans and add other veggies...the sky is your imagination...the flavor is great!!
