Feels great to be back behind the camera 📸 after so long. This was today's lunch I threw together, posh mushrooms on toast... Chestnut mushrooms cooked with garlic, thyme and parsley served on dark rye sourdough toast. Obviously there was more food than this though 😂. Nice and simple but very satisfying. Recipe below for anyone who's interested. Enjoy 💚
🌱2 cloves garlic, sliced
🌱few sprigs of fresh thyme (dried works too)
🌱handful of chopped fresh parsley (or dried)
🌱 sea salt and pepper to taste
1. Saute garlic in coconut oil for a 1-2mins, take care not to burn
2. Add sliced mushrooms and thyme. If using dried parsley add it here too. Cook for 4-5mins until tender, meanwhile toast your bread
3. Season mushrooms with salt and pepper, add fresh parsley and mix through.
4. Spread to toast (I use coconut oil instead of margarine) and serve your mushrooms on top of the toast. Done!
