Ya'll, I have truly found what I believe to be the holy grail of delicious raw food cuisine. It is the lowly and humble cabbage...fermented in my own kitchen into a wonderfully flavored batch of sauerkraut, which is then blended with soaked, raw sunflower seeds in a high speed blender and served over thinly sliced veggies. On my plate, under my sauerkraut "hummus," (the light green dressing on top) I have sliced sweet potatoes and zucchini along with onion, tomato, jalapeno and my own vegan pesto. I have made several batches of sauerkrauts lately and all have been delucious. The one I used for this dish us only 3 days old!
Dinners have always been my downfall, but with this wonderful veggie/salad accompaniment made ahead, I can have a delicious, filling, and health raw meals in just a few minutes, and stay on plan. Hooray!!! I am currently searching for recipes for raw wraps made in the dehydrator that I can make in bulk and freeze, so if you have one, send it my way!
