It doesn’t look like much (mostly because I’m exhausted and stopped to take a half-assed photo while in the middle of eating it), but this is a magical weeknight workhorse. It’s fast. It’s delicious. It’s straightforward. It’s vegetarian. Here you go: Chop up a medium-sized yellow onion and dump it in a pan with some olive oil. Cook on medium-high until it softens and then add in two cloves of minced garlic. Stir. Give it about 30 seconds. Add a package of shelf-stable gnocchi, separating them with your hands if they’re stuck together as you drop them into the pan. Cook five minutes or so, until they’re lightly golden brown or getting soft enough to eat. Stir in a can of diced tomatoes (undrained), a can of white beans (drained and rinsed), and a box of baby spinach. Heat through. Now, cheese. Yaaaas, cheese. Sprinkle it on top. However much makes you feel good. I use Parmesan and shredded mozzarella. Turn off the heat, cover, and wait a few minutes for the cheese to melt. Boom. Thursday’s dinner.
